Abstract

Characterization of physical and chemical properties of aroma compounds from liquid smoke is a challenge because there is no satisfactory method of separation due to compound contributors generally present in a matrix at very low concentrations. This study aimed to separate and identify the components of "strong and pungent" liquid smoke aromatic compounds by adsorption using activated carbon method. The observed variables analyzed using GC-MS including yield, phenol, carbonyl, titration acidity and chemical compound profiles. The chemical components of liquid smoke found on the analysis by GC-MS were further analyzed using a molecular mechanics software to determine the polarizability, hydrophobicity and dwipol moment of each compound     in the liquid smoke fraction adsorption results. The analysis of variance (ANOVA) with SPSS software version 16, followed by Duncan Multiple Range Test at the level of 1% was employed especially for the yield of liquid smoke adsorption. The physico-chemical characteristics of  25 fractions of liquid smoke resulted from adsorption on activated carbon at pH 2-6 comprising of 0.53 to 3.89% phenolic; 1.09 to 2.59% carbonyl; 7.17 to 10.75% acidicity; and pH range from     2.39 to 2.91 with the color spectrum in the range of 308-415 nm. The results of the analysis using the molecular mechanics methods showed that the higher the value of polarizability and dipole moment of a compound, the more polar the compound. It is concluded that the removal of the "strong and pungent" aroma compounds on coconut shell liquid smoke in order to produce a mild scent (soft) can be performed by activated carbon adsorption method despite the results were not optimal yet. A polar adsorbent such as zeolite is requiredin the adsorption method for the removal of "strong and pungent” aroma compounds on liquid smoke

Abstract

Sofie home industry is the only tofu chips business in Palu City. The demand on chips production has been increasing but the home industry employer sometime sover look the expenditure for the costs incurred in the chips production. This study aimed to determine the profitability         of Sofie home industry in producing chips and to identify the capability of the home industry           to generate net income over equity. This research was conducted from May to July 2013 in which two respondents were determined purposively. Primary and secondary data collected were analyzed using a quantitative profitability analysis. The Gross Profit Margin GPM), the Net Profit Margin (NPM) and the ratio of Return on Invesment (RoI) found for the home industry were 62.37%, 53.61%, 16.82%, respectively, indicating that the profitability of the chips home industry is still low due to lack of attention to the costs incurred. The net income of the home industry was IDR 31,499,664 in 2012. The net income over equity capital produced by the industry was equal to 19.13% suggesting that the ability to generate a net profitusingits own capitalis very lowdue to high operating costs leading to profits achieved not comparable with the capital spent.

Abstract

The purpose of this study was to analyze the effect of inputs on wetland rice production and to determine their efficiency on wetland rice production in Toribulu Village of Toribulu Sub District, Parigi Moutong District. This study was conducted during March to May 2014. The number of respondents was 33 farmers out of 129 wetland rice farmer population selected using a simple random sampling technique. Data was analyzed using the cobb-douglas function and efficiency analysis. The input factors i.e land area (X1), seeds (X2), NPK fertilizer (X3), labor (X4), and pesticides (X5) both simultane ouslyand partially had significant effecton the rice production (Y). The coefficient of determination (R2) was 0.983 indicating that 98.3% of the variation in the variable factors of the rice production can be explained by all variables observed (Xi), while 1.7% is caused byother factors not included in the model. The efficiency scores of land area (X1), NPK fertilizer (X3), labor (X4), and pesticides (X5) were greater than 1 while seed (X2) was less than 1 suggesting that the former inputs used in the wetland rice production are not yet efficient but the latter is efficient in terms of price.
