Abstract

Background & Objective: Vitamins are complex organic substances that are needed by the body in small amounts, usually cannot be synthesized by the body but are important in metabolic processes one of which is vitamin B. Vitamin B consists of vitamins B1, B2, B3, B6, B9 and B12. Eel is one of the fish that has a high nutrient content, one of which is vitamin B. This study aims to determine the levels of vitamin B (B1, B2, B3, B6, B9 and B12) in Eel fish (Anguilla marmorata (Q.) Gaimard) on Elver phase from Lake Poso. Material and Methods: Determination of vitamin B1, B2, B3, B6 and B9 using HPLC (High Performance Liquid Chromatography), and vitamin B12 using LC-MS (Liquid Chromatography-Mass Spectrometry) . Results: The levels of vitamin B2, B3 and B12is 0.133 mg/100g, 1.895 mg/100g, and 0.017mg/100g, whereas in vitamin B1, B6 and B9 is not detected. Conclusion: Eel fish (Anguilla marmorata (Q.) Gaimard) on Elver phase from Lake Poso can be used as a source of vitamins B2, B3 and B12.

Abstract

Background & Objective: Quality of the food is oriented towards customer satisfaction that having regard among things like food appearance, taste and variety menu. This study aims to identify factors that associated with satisfaction to the food management for convicted criminal in Prison Class IIA Palu . Material and Methods: This type of research is a cross sectional study. Total population in this study is 422 convicted criminals and the number of samples is 81 convicted criminals by using simple random sampling technique. Data were analyzed by descriptive univariate and bivariate analysis, at the level of trust 95% (p <0.05). Results: Respondents assessed the appearance of food that was not good at 24.69%, the taste of food was not good at 14.81%, and the menu variation was not good at 18.51%. This means that the appearance of food, taste of food, and the variety of menus provided include good and satisfaction ratings on the giving of food including satisfaction, namely, 88.88%. Fisher's Exact test results showed that the appearance of food associated with satisfaction the food service (? = 0.006), the taste of food associated with satisfaction the food service (? = 0.000), and variety od menus associated with satisfaction the food service (? = 0.009). Conclusion: The better quality of the food that provided to the convicted criminals, the more satisfied also for the food service

Abstract

Background & Objective: Stunting is a malnutrition that illustrates stunted growth, which is long and takes time to recover. Poboya gold mining is the largest source of entry of mercury metals, the danger posed that affects the growth. This study aims to determine the risk factors of exclusive breastfeeding, infectious diseases and immunization status with the incidence of stunting in children aged 12-59 months in the Poboya Mine Region . Material and Methods: †This type of research is quantitative with case control method. The number of samples used in this study were 84 respondents consisting of 21 cases and 63 controls with a ratio of 1: 3. Sampling using total sampling technique. Exclusive breastfeeding data, infectious diseases and immunization status were obtained through interviews using questionnaires. Data analysis used univariate and bivariate analysis. Data obtained from statistical analysis using Odds ratio (OR). Results: Toddlers who get exclusive breastfeeding are 28.6% (case group) and 65.1% (control group). Toddlers who suffer from infectious diseases are 81.0% (case group) and 55.6% (control group). The immunization status incomplete 52.4% (case group) and 22.2% (control group). The toddlers were not exclusively breastfed OR = 4,659 (95% CI 1,583-13,708), history of infectious disease OR = 3,400 (95% CI 1.027-11,257) and immunization status OR = 3,850 (95% CI 1,358-10,916) stunting event. Conclusion: The conclusions of this study are non-exclusive breastfeeding, history of infectious diseases and incomplete immunization is a risk factor for stunting.

Abstract

Background & Objective: Low Birth Weight (BBLR) is a major problem in the world, because it can lead to impaired fetal growth, so that the next generation of the nation will have an effect. This study aims to determine the association of anemia with low birth weight occurrence at hopstilal of Anutapura Palu. Material and Methods: †The type of research used is quantitative with analytic observational design with Cross sectional approach. The number of samples is 91 respondents determined by Accidential sampling technique. Data analysis is che-square test with a significance level of p <0.05. Results: The results showed that pregnant women who were anemia were 72.5% and LBW was 40.7%. Severe anemia is 4.39%, moderate is 37.3%, and mild is 30.7%. Anemia level has a significant effect on birth weight (? = 0,000). Anemia has a significant relationship with the incidence of low birth weight (? = 0,000) at Hospital of Anutapura Palu . Conclusion: Anemia in pregnant women has a positive correlation with infant birth weight and is associated with the incidence of low birth weight

Abstract

Background & Objective: Hypertension is a threatening health problem that can be found almost in the community. Indonesia is a developing country that contributes in the rate of hypertension, it is noted that the age of 18 years and over the prevalence of hypertension in Indonesia is 31.7%, with these problems, researchers will examine the factors associated with the incidence of hypertension in Indonesia. Material and Methods: This study is a secondary data analysis with the design of Cross Sectional and uses Chi Square analysis. The respondents of this study amounted to 30133 who had been separated from the complete data. Results: Most of the respondents were female (53.1%); and <40 years old (59.3%; not obese (78.3%); having low cholesterol levels (99.2%); not hypertension (92.1%). Bivariate analysis found a correlation between cholesterol levels (p value 0,000; OR 4,450; CI 95% 3,329 - 5,984) and obesity (p value 0,000; OR 4,348; CI 95% 3,991Ė 4,738) towards hypertension. Conclusion: Among the two variables studied (cholesterol and obesity), cholesterol level is a variable the most likely risk for hypertension

Abstract

Background & Objective: Hypertension is a serious public health problem that closes to a high prevalence. It has already killed 1.5 million people every year in South East Asia. Public health centre Kawatuna is public health centre which has the highest prevalence in 2006 from 13 public health centers in Palu. The study aims at finding out the habit of consuming fruits and vegetables, habit of consuming coffee, habit of smoking and BMI (Body Mass Index) as a risk factor of hypertension occurrence in the age of 20-44 years old in Public Health Centre Kawatuna Palu. †Material and Methods: †This was a case control study. Sample drawn for case group used total sampling whereas for control group used purposive sampling. Results: Consumption of fruits and vegetables was a risk factor for hypertension (OR = 3,381 (1,840-6,214)), coffee consumption was a risk factor for hypertension (OR = 2,234 (1,102-4,532)), BMI was a risk factor for hypertension (OR = 3,474 (1,820-6,629)) and smoking habits are risk factors for hypertension but not significant (OR = 1,725 (0,680-4,380)) . Conclusion: Habit of lack of consuming fruit and vegetable, habit of over consuming coffee and IMT >25 kg/m2 are the risk factors of hypertension occurrence

Abstract

Background & Objective: Sidat Fish (Anguilla marmorata (Q.) Gaimard) has high nutrition or nutritional advantages such as vitamin A, vitamin B, vitamin C, vitamin D, vitamin E, protein, minerals, and fatty acids that are good for health. This research was purposed decide the difference of the vitamin c level of Sidat Fish (Anguilla marmorata (Q.) Gaimard), Glass eel fase, Yellow eel and Silver eel from poso lake and estuary of Palu River.  Materials and Methods: The testing of vitamin c using substance the meet of Sidat Fish (Anguilla marmorata (Q.) Gaimard) Glass eel fase, Yellow eel and Silver eel, vitamin C, metaphospat acid and aquadest with the HPLC method (High Perfomance Liquid Chromatography) with Purposive Sampling technique seen based on the size, place, and fish fase as the requirement for the sample taking. Results: The result showed that Sidat Fish (Angilla marmorata (Q.) Gaimard) with Glass eel fase, Yellow eel and Silver eel from Poso lake and estuary of Palu river was not detected there was the content of vitamin C. Conclusion: Sidat fish (Anguilla marmorata (Q.) Gaimard) does not contain vitamin C.

Abstract

Background & Objective: One of the messages from the 13 General Messages of Nutrition is get used to breakfast. However, there are still many Indonesians who do not have breakfast. This study aimed to see the description of knowledge level of breakfast and the description of the application of balanced nutrition principle on the breakfast menu in the parents of SDIT Al-Fahmi Palu students.¬† Materials and Methods: Material used artificial plates, paperboard and double tip. The research design was cross sectional, was conducted at SDIT Al-Fahmi Palu on September 5, 2017 witth respondents who followed the research were 51. Types of data used were frequency of knowledge level, frequency of respondents who correctly answered the knowledge questionnaire, and the application of balanced nutrition principle on the breakfast menu then analyzed desctriptively. ¬†Results: Overall of respondents had a good knowledge. It appears that the most answered questions was ‚??how it can be done to overcome a child with difficulty eating breakfast‚?Ě (47.1%). In contrast, when the practice of menu preparation was obtained on the first day, from 12 groups only 1 group who had applied the principle of balanced nutrition in composing menu, on the 2nd day only 2 groups (16,7%) who have applied, and on the third day none of the groups who have applied. Conclusion: It is found that all respondents had a good level of knowledge, but in practice the whole of the groups who have not applied balanced nutrition principle in composing menu

Abstract

Background & Objective: Food Pattern of Central Sulawesi Expectation has not fulfilled suggestion, potential of food product of Central Sulawesi one of them is fish duo, or commonly called penja. This study aims to analyze the nutritional content of fish meal duo which is a source of protein in the food potential of Palu City.  Materials and Methods: The type of this research is descriptive laboratory, conducted in Nutrition Laboratory of Animal Husbandry for fish feed and proximate analysis, research conducted from October until November 2016. Sampling technique using purposive sampling, fish duo (penja) sold in market Inpres. Production of duo fish meal (penja) in Animal Husbandry Laboratory and further measured proximal level of both samples.  Results: Black and white duo fish (penja) for moisture content have fulfilled the SNI of quality I that is 5.37% and 6.3%, the protein content has fulfilled the second quality SNI that is 56.6% and 54.19%, the fat content that meet the SNI the quality of I and II is 8.4% and 9.72%, the fiber content meets the SNI of quality II is 2.06% and 2.61% and the ash content meets the SNI of quality I is 10.5% and 8.9%. Conclusion: Black and white duo fish powder is higher in protein than starch. This research shows macro fish macro nutrition has fulfilled SNI I and quality II, protein is superior to fish meal

Abstract

Background & Objective: Stunted is a condition of disruption of growth in children caused by chronic malnutrition. Prevalence of stunting in Sigi regency is 45,20% (2015) and stunting incidence in Puskesmas Biromaru for children aged 2-5 are 60 cases (2017). This study aims to determine the risk factors of stunting events in children aged 2-5 years.  Materials and Methods: Types of analytical survey research with Case Control design. Sampling method with total sampling and purposive sampling control sample based on certain consideration with ratio 1: 2, with case sample in this research as many as 60 children and control samples as much as 120, each sample is chosen based on age as matching. Stunting degree expressed by z-score height by age. Complete basic immunization data, feeding practice patterns, low birth weight and iodized salt obtained through interviews using a questionnaire and iodine test. The analysis used is the odd ratio with a significance level of 95%.  Results: Complete basic immunization of OR 7,667 (95% CI 3,753-15,662), practice pattern of feeding OR 30,565 (95% CI 9.043-103,314), low birth weight OR 6,956 (95% CI 4,446-14,104) and iodized salt OR 8,632 (95% CI 4,268-17,456) is a risk factor for stunting events and has a significant relationship. Conclusion: Practice pattern of feeding is a major risk factor for stunting with OR 30,565
