Abstract

Background & Objective: Sidat Fish (Anguilla marmorata (Q.) Gaimard) has high nutrition or nutritional advantages such as vitamin A, vitamin B, vitamin C, vitamin D, vitamin E, protein, minerals, and fatty acids that are good for health. This research was purposed decide the difference of the vitamin c level of Sidat Fish (Anguilla marmorata (Q.) Gaimard), Glass eel fase, Yellow eel and Silver eel from poso lake and estuary of Palu River.  Materials and Methods: The testing of vitamin c using substance the meet of Sidat Fish (Anguilla marmorata (Q.) Gaimard) Glass eel fase, Yellow eel and Silver eel, vitamin C, metaphospat acid and aquadest with the HPLC method (High Perfomance Liquid Chromatography) with Purposive Sampling technique seen based on the size, place, and fish fase as the requirement for the sample taking. Results: The result showed that Sidat Fish (Angilla marmorata (Q.) Gaimard) with Glass eel fase, Yellow eel and Silver eel from Poso lake and estuary of Palu river was not detected there was the content of vitamin C. Conclusion: Sidat fish (Anguilla marmorata (Q.) Gaimard) does not contain vitamin C.

DESCRIPTION OF KNOWLEDGE ABOUT HEALTHY BREAKFAST MENU IN PARENTS OF STUDENTS OF AL-FAHMI INTEGRATED ISLAMIC ELEMENTARY SCHOOL IN CITY OF PALU

Abstract

Background & Objective: One of the messages from the 13 General Messages of Nutrition is get used to breakfast. However, there are still many Indonesians who do not have breakfast. This study aimed to see the description of knowledge level of breakfast and the description of the application of balanced nutrition principle on the breakfast menu in the parents of SDIT Al-Fahmi Palu students.  Materials and Methods: Material used artificial plates, paperboard and double tip. The research design was cross sectional, was conducted at SDIT Al-Fahmi Palu on September 5, 2017 witth respondents who followed the research were 51. Types of data used were frequency of knowledge level, frequency of respondents who correctly answered the knowledge questionnaire, and the application of balanced nutrition principle on the breakfast menu then analyzed desctriptively.  Results: Overall of respondents had a good knowledge. It appears that the most answered questions was “how it can be done to overcome a child with difficulty eating breakfast” (47.1%). In contrast, when the practice of menu preparation was obtained on the first day, from 12 groups only 1 group who had applied the principle of balanced nutrition in composing menu, on the 2nd day only 2 groups (16,7%) who have applied, and on the third day none of the groups who have applied. Conclusion: It is found that all respondents had a good level of knowledge, but in practice the whole of the groups who have not applied balanced nutrition principle in composing menu

Abstract

Background & Objective: Food Pattern of Central Sulawesi Expectation has not fulfilled suggestion, potential of food product of Central Sulawesi one of them is fish duo, or commonly called penja. This study aims to analyze the nutritional content of fish meal duo which is a source of protein in the food potential of Palu City.  Materials and Methods: The type of this research is descriptive laboratory, conducted in Nutrition Laboratory of Animal Husbandry for fish feed and proximate analysis, research conducted from October until November 2016. Sampling technique using purposive sampling, fish duo (penja) sold in market Inpres. Production of duo fish meal (penja) in Animal Husbandry Laboratory and further measured proximal level of both samples.  Results: Black and white duo fish (penja) for moisture content have fulfilled the SNI of quality I that is 5.37% and 6.3%, the protein content has fulfilled the second quality SNI that is 56.6% and 54.19%, the fat content that meet the SNI the quality of I and II is 8.4% and 9.72%, the fiber content meets the SNI of quality II is 2.06% and 2.61% and the ash content meets the SNI of quality I is 10.5% and 8.9%. Conclusion: Black and white duo fish powder is higher in protein than starch. This research shows macro fish macro nutrition has fulfilled SNI I and quality II, protein is superior to fish meal

Abstract

Background & Objective: Stunted is a condition of disruption of growth in children caused by chronic malnutrition. Prevalence of stunting in Sigi regency is 45,20% (2015) and stunting incidence in Puskesmas Biromaru for children aged 2-5 are 60 cases (2017). This study aims to determine the risk factors of stunting events in children aged 2-5 years.  Materials and Methods: Types of analytical survey research with Case Control design. Sampling method with total sampling and purposive sampling control sample based on certain consideration with ratio 1: 2, with case sample in this research as many as 60 children and control samples as much as 120, each sample is chosen based on age as matching. Stunting degree expressed by z-score height by age. Complete basic immunization data, feeding practice patterns, low birth weight and iodized salt obtained through interviews using a questionnaire and iodine test. The analysis used is the odd ratio with a significance level of 95%.  Results: Complete basic immunization of OR 7,667 (95% CI 3,753-15,662), practice pattern of feeding OR 30,565 (95% CI 9.043-103,314), low birth weight OR 6,956 (95% CI 4,446-14,104) and iodized salt OR 8,632 (95% CI 4,268-17,456) is a risk factor for stunting events and has a significant relationship. Conclusion: Practice pattern of feeding is a major risk factor for stunting with OR 30,565

Abstract

Background & Objective: Anemia is a public health nutrition problem that can occur at any age. In 2013 the proportion of anemia in Indonesia is 21.7 percent. Anemia can be caused by many factors one of which is the consumption pattern. Anemia in girl adolescents and women of reproductive age can cause problem in the first 1000 days of life. This study aims to determine the risk of eating disorders and anemia in nutrition students.  Materials and Methods: This study is a cross sectional study with sample 46 girl students and 19 yearsl old. Data collection of risk of eating disorders using questionnaires Eating Attitudes Test (EAT-26)and  anemia data obtained from secondary data results of a new student medical check up. Data analyzed by using SPSS, bivariate analysis using chi square test.  Results: The results showed 21.7 percent anemia and 26.1 percent risk of eating disorders. 20 percent of students with anemia have an eating disorder risk. The results of statistical tests showed no significant relationship between the risk of eating disorders with anemia. Conclusion: The conclusion of the study is the risk of eating disorders can occur in the student nutrition that may be possible cause of anemia

Abstract

Background & Objective: Eel fish (Anguilla marmorata) has high nutritional or nutrition advantages such as protein, minerals, fatty acids and one of them is vitamin A. This study aims to compare the amount vitamin A of eel fish (Anguilla marmorata) phase glass eel, yellow eel, silver eel from Palu River and Lake Poso.  Materials and Methods: The materials used in this research are eel fish (Anguilla marmorata) Glass eel, Yellow eel, Silver eel size from Palu River and Lake Poso, Ethanol, KOH, n-Hexane, BHT (Butyl Hydroxyl Toluene), Methanol. The sampling technique uses purposive sampling based on the type of weight, size and location of the taking. The method used is High Performance Liquid Chromatography (HPLC) where previously conducted saponification test (saponification) on sample of eel fish. Results: The result of vitamin A test on eel fish from Palu River phase of glass eel is 4.01 mg / kg (1336,67 IU / 100 gram), yellow eel 7,26 mg / kg (2420 IU / 100 gram), silver eel equal to 9.73 mg / kg (3243,34 IU / 100 gram). Vitamin A in eels from Lake Poso phase of glass eel of 0.22 mg / kg (73.34 IU / 100 gram), yellow eel 7.16 mg / kg (2386.67 IU / 100 gram), silver eel of 11 , 3 mg / kg (3766.67 IU / 100 gram). Conclusion: vitamin A of eel fish content from Palu River and Lake Poso were significantly different, which was based on p <0,05
