Abstract

ABSTRACTHousehold food security is an important phase in food security concept, since it may directly affects nutritional status of the entire family members. Fishermen community is one of the groups in urban communities which is vulnerable to food insecurity. The purpose of this study was to determine factors associated to household food security among fishermen households. This cross-sectional study was done in Sukolilo Village, Bulak Sub District, Surabaya on June 2011. Fifty households were selected using simple random sampling technique. The data were collected through interview and household food security status was determined by using U.S. HFSSM. The results showed that most of the households were food insecure (88%). The study also showed that there were association between income p = 0.037 (p < α) and expenditure p = 0.016 (p < α) to household food security status. Conversely, there were no association between education of the wives, education of the household head, occupation, family size, electronic assets, non-electronic assets, nutrition knowledge, physical access to food, economic access to food, food availability, and Coping Strategy Index score to household food security status. This study concludes that factors associated to household food security status of fishermen households in Sukolilo Village, Bulak Sub District, Surabaya are household income and expenditure. Trainings to improve skills of the fishermen and families is essential to increase household income during scarcity. In addition, nutrition training held for the wives is also necessary to improve their nutrition knowledge. Keywords: Household Food Security, Fishermen, Coping Strategy Index

Abstract

ABSTRACTBarnacles which are high in vitamin A can be processed into crackers and may become a potential alternative of healthy snacks. This research was aimed to know the effect of adding barnacles and carrots towards the acceptance, water content, protein content of crackers which is enriched in barnacles and carrots. This research was also aimed to find the best composition of barnacles, carrots and other ingredients of crackers. This research was done by using pure experimental study for product development and quasi experimental study for organoleptic testing. Four treatment and six repetitions were applied in this study. Twenty semi-trained panelists were involved in organoleptic test. Product acceptance was tested using statistical analysis Friedman Test and Wilcoxon Sign Rank Test (α = 0.05). Organoleptic test showed that the most preferable formula were F1 and F2 with average scor 3.57. Formula F3 had the highest content of protein and vitamin A. The results showed hat formula F2 was tend to be the best formula. Statistical analysis using Friedman test showed that there was significant difference of product acceptance in term of color (p = 0.001), taste (p = 0.000), and shape (p = 0.017) among formulas.This research concludes that there was difference in acceptance of formula F1, F2 and F3, and the best composition of crackers is formula F2. This research suggests producers to consider the thickness of crackers and fry the crackers in proper temperature (150oC–160oC), as well as in proper time (around 10 seconds). Keywords: kerupuk, barnacle meat, carrots, protein, vitamin A

Abstract

ABSTRACTMalnutrition can be caused by the lack of food consumption and the presence of infectious disease. Acute Respiratory Infection (ARI) is one of the example. ARI can be prevented by having a healthy consumption pattern and enough consumption of nutrients that can protect the respiratory tract and enhance immunity as well, such as vitamin A, protein and zinc. The purpose of this study was to analyze the association of nutritional status, incidence of ARI during the last 6 months in children at the Arif Rahman Hakim Orphanage Surabaya with the patterns of consumption, intake of vitamin A, protein and zinc. This research was analytic observational study with cross sectional design. Total respondents in this research was 32 children selected using simple random sampling technique. Data were analyzed using chi-square, depend on data scale of each variable. The results showed about 43,8% respondent were early adolescents (10–12 years). Most of them have a normal nutritional status (90.6%). There was no association between nutritional status and the eating habits of the respondents (p = 0.186) but there was an association with the type of snack that was often consumed (p = 0.010). There was an association between nutritional status with the consumption of vitamin A (p = 0.023) and insidence of ARI with the consumption of zinc (p = 0.047) but there was no association between the incidence of ARI protein intake (p = 0.232) with vitamin A intake (p = 0.857). It can be concluded that there is an association between nutritional status and the type of snack that is often consumed and vitamin A. There is also association between insidence of ARI and the consumption of zinc. It is suggested that there should be a sort of control upon the meal time schedule and eating habits of children, so that nutrient intake can be met fullfilled macro and micronutrients to prevent respiratory diseases.Keywords:  nut ritional  status,  incidence  of  AR I, consumption patterns, intake of vitamin A, protein and zinc.

Abstract

ABSTRACTAdolescence is an important age in both physically and psychologically, because in this age there is a transition from childhood to adultery. Reformation era has an effect to the change of adolescent’s behavior and life style especially in urban area. There is a shifting of the adolescent’s life style from the traditional ways style of life to the modern ways style of life. The varieties of life style and behavior will affect the nutritional condition of adolescents. That is why it is necessary to be learned about the relation between the life style and the nutritional status of adolescents. The adolescent’s life styles researched consist of sports habit, smoking habit, drinking alcohols behavior and drugs consuming behavior. This was an observational research and the data was collected by cross sectional. The population was the XI grade students of SMA Trimurti Surabaya at the total of 299 students, and for the sample 76 students were taken by simple random sampling. The relation between life styles and the nutritional status of adolescence were analyzed by using the Chi Square Test. It was found out that there was a relation between the smoking habit (p =0.001) and the drugs consuming behavior (p = 0.039) with the nutritional status of adolescent. In the contrary, there was no relation between sport habit (p = 0.101) and drinking alcohol behavior (p = 0.170) with the nutritional status of adolescent. These show that not all the adolescent modern ways style of life have relation to the nutritional status. Based on this research, it can be concluded that smoking habit and drugs consuming behavior are the adolescent’s life style that have relation to the nutritional status. Meanwhile the sport habit and drinking alcohol behavior have no relation to the nutritional status of adolescents. That is why it is a necessary of having a seminar about healthy life style on school age adolescent so that there will be no any nutritional disturbances in adolescents. Keywords: adolescent, life style, nutritional status

Abstract

ABSTRACTOver consumption and lack of physical activity lead to overweight and obesity. Glycemic load plays an important role in overweight and obesity because it can increase blood glucose rapidly. It will bring impact on catisfy feeling. The aim of this study was to assess glycemic load and physical activity level to nutrition status in adolescent. This research was an observational analytic study with case control design. Population was all student aged 12–14 year at SMP Islam Al-Azhar 13, SMP Islam Al-Azhar Kelapa Gading and Insan Mulia school. The sample was devided in two groups, criteria for case group was BMI for Age > 1 SD up to > 3 SD, whereas criteria control group and BMI for Age -2 SD up to 1 SD. The sample size used in case and control group was 35 people respectively and it selected with simple random sampling technique. Chi square test was performed to determine the correlation between independent and dependent variable. The result showed that variables in correlation with overweight status in full day junior high school Surabaya were energy level (p= 0.004, OR = 5.06, 95% CI = 1.79 < OR < 14.31), protein intake (p =0.02, OR=5.57, 95% CI = 1.41< OR < 21.99), glycemic load (p = 0.007, OR = 4.5, 95% CI= 1.59 < OR < 12.66) and physical activity level (p = 0.042, OR = 3.37, 95% CI = 1.164 < OR < 9.744). The study conclude that there were correlation between glycemic load and physical activity level to overweight or obesity. Eating healthy diet that considered glycemic load and changing sedentary lifestyle with doing some exercise regularly at least 60 minute/day will help to prevent the overweight or obesity. Keywords: overweight, glicemic load, phisycal activity and adolescent

Abstract

ABSTRACTObesity has become a global problem worldwide. Obesity caused by imbalance between physical activity and intake of nutrients and energy. Civil Servant is a job that has a low physical activity during the working hours, so the Civil Servant has a high risk for having over nutritional status. The purpose of this research was to analyze the correlation between diet, physical activity, attitudes and knowledge about obesity with nutritional status. This study was an  observational-analytic  study with  cross  sectional design. Total sample were 87 people who selected by proportional simple random sampling technique. Data were analyzed by using correlation tests, different test and chi-square test adjusted for the scale of the variable data. The results showed that there was a correlation between physical activity working and  nutritional status (p = 0.024). There was no  correlation between sports activity (p = 0.768) and other physical activity (p = 0.592) with nutritional status. Knowledge (p = 0.456) and attitudes about obesity (p = 0.989) was not correlated with nutritional status. There was no correlation between energy intake (p = 0.731) and protein intake (p = 0.537) with nutritional status. Factors that could influent the nutritional status were physical activity level and diet. Based on the results, it was suggested for the Civil Servant in the Health Office of East Java Province should increase the physical activity and paid more attention to their nutrient intake, in orderto reach the Nutrient Adequacy Score. Keywords: civil servants, diet, physical activity, attitudes, knowledge, nutritional status

Abstract

ABSTRACTAnemia is still become one of public health problem and requires serious attention. Anemia caused by nutritional deficiencies due to lack of consumption or absorption disorder. One of the nutrition problems disturbed groups is brides group because they are females group who will prepare their pregnancies. The research was purposed to analyze the differences in nutrient consumption, nutritional status and hemoglobin levels of the brides in the coastal area and agricultural area. This study was a non reactive and observational-analytic research with cross sectional design. Total sample for this research was 40 brides who are divides into two equal groups representing the coastal area and agriculture area was graduated from junior high school. Most of them were not worked. The prevalence of anemia of each area was 15%. Anemic respondens are those who deficit in iron and zinc consumption. The analyzed results showed that there were no difference in all of variables (p > 0.05). Differences in area have no effect on individual nutrient consumption, nutritional status and hemoglobin levels. The suggestions could be given to follow up the results of the research are held healthy promotion to prevent anemia and under nutrition also establish multi sectoral cooperation to maintain the quality of food availability. Keywords: nutrient consumption, nutritional status, hemoglobin levels, area

Abstract

ABSTRACTSchool age is the period of fast child growth so that children need suficient and balanced nutrition. Nutrition deficiency during school age will cause children to be weak, get tired easily and ailing. Consequently, they are often absent from school and face difficulties to concentrate in their study so that this affect their academic achievement. This cross sectional study was aimed to analyze the association of breakfast habits and nutrient intake with concentration. Sample as many as 74 students of grade 4 and 5 of SDN Wonocatur and SDN Sumberejo I, Kediri District were taken by stratified random sampling. Data were collected through interview using structured questionnaire, 24 hours food recall and food frequency questionnaire. Data were processed with SPSS software, and association among variables was analyzed by using Chi-square test, Fisher’s Exact, Mann Whitney and Spearman correlation. The results showed that most of the respondents had habit of having breakfast (56.8%), low intake of calories (51.4%), carbohydrate (62.2%) protein (66.2%), vitamin C (83.3%) and iron (66.2%). Most of the students had low concentration power (68,9%). This research showed that there was association between breakfast habit and learning concentration (p < 0.01), as well as between calorie (p < 0.05), carbohydrate (p < 0.05), protein (p < 0.05), iron (0.05) and learning concentration. Keywords: breakfast, nutrient intake, concentration

Abstract

ABSTRACTBreast milk is the best food for babies in their early life. For the best baby food, breast milk has not been fully utilized by the public. There is even a tendency to shift the uses of milk in some communities. The purpose of this research was to analysis the differences in levels of consumption and nutritional status between the baby with exclusive breastfeeding and non-exclusive breastfeeding. This was an analytical observation research and comparative using cross-sectional approach. A sample size of 34 babies aged 6-12 months were divided into two groups: babies with exclusive breastfeeding and non-exclusive breast feeding. The subject were chosen by the simple random sampling. Data was analyzed using the Chi-square, Mann Whitney, and Fisher’s Exact test (α = 0.05). The results showed that there were different levels of knowledge of mothers (p=0.000), social culture (p = 0.000), maternal attitude (p =0.007), duration of breastfeeding (p = 0.023), frequency of breastfeeding (p = 0.005), infectious diseases (p= 0.039), energy consumption levels (p = 0.001), and nutritional status (p = 0.007). In contrast there were no differences in nutritional counseling on breastfeeding (p = 0.259), and consumption levels protein (p =1.000). There is need for regular counseling about the benefits, advantages, and the importance of exclusive breastfeeding for babies. Determine the local laws that regulate the corner of lactation in a public places also contributed to increased the use of exclusive breastfeeding. Keywords: exclusive breastfeeding, nutritional status, level of consumption, baby age 6–12 months

Abstract

ABSTRACTObesity in Indonesia is rising increasingly in number of events, include obesity in adolescence. This increasing frequently occurs in urban adolescents caused by fast food proliferation. The continuity of fast food consumption and further more already become behavior will have negative impact on nutritional status of adolescence because of its imbalance nutritional content. This study analyzed the relationship between behavioral factors, frequency of fast food consumption, diet and genetics with overweight grade in adolescents. This study was observational analytic study using cross-sectional design. The samples were 70 people composed of male and female high school students (class X and class XI) aged 15–17 years old. There was random sampling technique and data was analyzed by Chi Square test and Fishers exact test. The results showed that there was a significant relationship of dietary variables and overweight grade (p = 0.041) and there were no significant relationship of genetic variables, behavioral factors, frequency of fast food consumption with overweight grade (p > 0.05). The results showed a relationship of attitudes with frequency of fast food consumption (p = 0.05) and no significant relationship of other behavioral factors variable (predisposing factors (knowledge), enabling (distance and how to purchase fast food) and reinforcing (family support and friends)) with frequency of fast food consumption (p > 0.05). There was a significant relationship of dietary variables, overweight grade, attitude variables with frequency of fast food consumption. Recommended to give correct information about fast food for teenagers and to increase physical activity for overweight teenagers. Keywords: obesity, fast food, diet, genetic
