Abstract

Background : Tomatoes are a better source of lycopene than raw tomatoes. Lycopene is known to have the ability as an antioxidant and can protect the body against various diseases, such as cancer and heart disease. Sweets is produced from fruit or vegetables preserved with sugar to prolong shelf life. Obstacles encountered in the manufacture of sweets are organoleptic properties, especially the soft texture of the fruit, and therefore the need for treatment by immersion in a solution of lime water. Of lime to sustain organoleptic properties, especially the soft texture of the fruit.  Objective : This study aimed to determine the effect of long immersion in a solution of calcium hydroxide tomatoes (Ca(OH)2) on the organoleptic properties and water content of dried candied tomatoes (Lycopersicum esculentum. Mill). Research Methods :This study used an experimental method with experiments in the laboratory. The design in this study was completely randomized design (CRD) with a single factor, namely long immersion treatment of tomatoes in a solution of calcium hydroxide, each re-treatment at 3 times, then performed organoleptic test and moisture test. Analysis of the data using analysis of variance (ANOVA) at α=0.05, while a further test using Tukey's test.  Results : Showing old tomato soaking in a solution of calcium hydroxide (Ca(OH)2) has significant effect on the color of candied dried tomatoes (p<0.05), while for the smell, taste and texture of candied dried tomatoes are not significant (p>0,05). Candied dried tomatoes are the most preferred is the treatment of candied dried tomatoes soaking for 4 hours. Long immersion in a solution of calcium hydroxide tomatoes (Ca(OH)2) significantly affected the moisture content of dried candied tomatoes (p<0.05) with the highest rates in the treatment t1 (22.6%) while the average lowest for the treatment t4 (18,3%).  Conclusion : Long immersion in a solution of calcium hydroxide tomatoes (Ca(OH)2) to the colors and candied dried tomato water content (p<0.05), while for the smell, taste and texture of candied dried tomatoes are not significant (p>0.05 )

Abstract

This Study to identify the relationship with the mother's knowledge level of calcium intake and nutritional status of SDN 2 Ampenan District of Sekarbela. The National Food Widya Karya X (WKNPG X) 2012 has been issued AKG 2012, which makromineral adequacy of calcium of 1000 mg per day for children aged 7-9 years, and 1200 mg for children aged 10-12 years. Average consumption of calcium per day by 30% of Indonesia's population, or 300 mg per day, under the instigation WKNPG 2012 that recommended. Calcium needs can be met through a variety of foods, such as meat, fish, milk, vegetables, and fruit. The study design uses observational study, based on the terms of the time of this study using cross-sectional approach,  the objective of this study was the students of SDN 2 Ampenan aged 7-9 years and 10-15 years and ibu-ibu of students of SDN 2 Ampenan. Samples were obtained as many as 38 people, which will be measured weight and height, then 2x24 hour recall interviews were conducted, but it is also done interviews and FFQ questionnaires to the respondents. To determine which variables are examined using analysis with SPSS 16.0 for Windows with Spearman Rank test with a significance level of 0.05. the result shows of the 38 samples studied most (97.36%) aged 10-15 years, and the remainder (2.6%) aged 7-9 years, the nutritional status of a sample of normal category 76.32%, and 100% levels of calcium intake deficits, as well as the level of knowledge of respondents 76.32% lower.  Then, the conclusion is there is no relationship with the level of knowledge of the nutritional status, there was no association between calcium intake and nutritional status, and there is a correlation between the level of knowledge with calcium intake.

Abstract

Abstract: Background: Obesity is a condition in which there is an excessive accumulation of body fat. Cases of obesity will continue to increase and an estimated 1.12 billion people in the world will be obese by 2030 (Meydani and Hasan, 2010; Der¬demezis et al., 2011). In Indonesia, the lifestyle changes that lead to Westernization causes changes in diet refers to a diet high in calories, fat and cholesterol that have an impact on the increased risk of obesity (Dir.Kes, 2009). Leptin is a protein derived from the 167 amino acids and the product of the obese gene (ob) with a molecular weight of 16 kDa that is synthesized mainly by adipose tissue. Leptin serves to regulate the metabolism of energy balance and body weight. In general, leptin plays a role in inhibiting hunger and increase energy metabolism. In individuals with large fat tissue contains more leptin than smaller fat tissue, whereas obesity is often found leptin resistance. Some researchers have found that higher leptin levels in obese people compared to people with normal weight (Considine, 1996). Circulating leptin levels in the blood of normal individuals known of 1-3 ng / mL, whereas circulating leptin levels in the blood of obese at 100 ng / mL (Hoda et al., 2012).

Abstract

Background. Hypercholesterolemia is increased levels of total cholesterol in the blood that exceeds normal levels (more than 200 mg/dl). According to the Health Survey Households in 2004, the prevalence of Hypercholesterolemia in Indonesia at age 25-34 years amounting to 9.3%, whereas at ages 55-64 years amounted to 15.5%. Uncontrolled consumption of fats is one of the causes of Hypercholesterolemia. Knowledge of nutrition is a very important factor in determining a person's behaviorand attitude towards food, the higher the nutritional knowledge then it would increasingly take into account the type and amount of food consumed by a person. Research Methods. This research is Observational Analytic study, in terms of time is Crossectional study objectives, are all members of the Persadia Mataram that active following activities in Mataram Persadia meets the criteria, the research was obtained on the number of samples 34 people. To know the relation of free variables and bound variables was done using test bivariat analysis of rank spearman with the level of significance of 5%. Research Result. The sample in this research 70.6% aged >60 years, 76.5% occur in women, 38.2% work as pensioners, 55.9% college educated, 67.6% hypercholesterolemia diagnosed with diabetes complications, 58.8% of the sample of cholesterol-lowering drugs and 35.2% with diagnosed 5-10 years old. Based on the results of statistical tests known value of P are respectively 0.233 and 0.591 (P> 0.05), meaning that there is no relationship of knowledge about food sources of fat with fat consumption levels and total cholesterol levels. Conclusion. There is no relationship of knowledge about food sources of fat with fat consumption level, and no fat consumption level of relationship with total cholesterol levels.

Abstract

Background. World Health Organization (WHO) has predicts increase in the number of people with diabetes in Indonesia from 8.4 million in 2000 to approximately 21.3 million in 2030. Medical Nutrition Therapy (TGM) is key to the success of the overall control glucose, involvement of the team members are doctors, nutritionists, other health workers as well as patients and their families Objective. To the description of family support on adherence diet DM (exact amount, type, schedule) in patients with type 2 diabetes mellitus in egeneral hospital Mataram City. Research Methods. This study is a descriptive observational study with cross sectional design, that total sample was 22 people. The data collected includes the characteristics of the sample and the method of interview respondents, the level of family support using questionnaires, the data rate of consumption with 2x24 hour recall method Research Result: The age samples in this study has over 40 years old (90.9%), with female sex (68.2%), and the level of high school education (50.0%), type of work as a retired civil servants (59.1 %). Counseling frequency less than 2 times (81.8%) and long suffered from diabetes more than 2 years (59.1%), and blood glucose levels are above normal values (72.7%). The level of compliance, 12 (54, 5%) abiding in the amount of energy and carbohydrates, 12 (54.5%), comply with the right kind of foodstuffs and 11 (50%) comply with the recommended proper feeding schedule.  Conclusions: Good family support tend to make patients with type 2 diabetes to adhere to the right kind of food and eating schedule, but not affect the compliance of patients with DM in the right amount of energy and carbohydrates.

Abstract

Background. In West Nusa Tenggara the highest prevalence of Diabetes Mellitus is Bima (2.5%). In the city of Mataram the prevalence of diabetes mellitus is around 1.7% and ranks 3rd in 10 districts in West Nusa Tenggara. The 2013 Mataram City Health Profile states that DM is the third highest number of infectious diseases in the city of Mataram. In regulating diet, people with Diabetes Mellitus are advised to pay attention to carbohydrate and fiber intake because it is important in controlling blood glucose. One of the fruits that can be used as blood sugar control is Dragon Fruit (Hylocereus) which has the advantage of being rich in fiber, calcium, magnesium, potassium and sodium. Objective: To determine the effect of giving dragon fruit to the decrease in blood glucose levels when patients with Diabetes Mellitus in Tanjung Karang Health Center. Research Methods. This type of research is Quasi Experiment with a pre-post control group design. The subjects were divided into 2 groups, namely the treatment group that was given 250 grams of red dragon fruit / day and the control group was not given dragon fruit. Giving dragon fruit is done every day for 10 days. GDS level measurements were carried out using the GCU tool. Blood is taken the day before the intervention and one day after the intervention. Statistical analysis using Independent sample t-test, and Paired t-test. Research Result. There was a difference in blood glucose levels at the start and end of the treatment group with p <0.05. it was found that the control group's blood glucose reduction rate was -35.4 mg / dl. The highest reduction in blood glucose in the treatment group was in K7 respondents as much as 130 mg / dl and the highest increase in blood glucose was in K1 respondents as much as 159 mg / dl. Conclusion. There is an effect of giving dragon fruit to the decrease in blood glucose levels when patients with DM in the Tanjung Karang Health Center Work Area.

Abstract

Background. The prevalence of NTB hypertension patients is 16.67% higher than the national prevalence that is 9.5% in 2013. Hytensol Drink Powder (MSH) contains 1388 mg of potassium and 15 mg sodium per 100 g. Research Methods. This research was conducted in the laboratory of Food Technology Science Department of Nutrition Poltekkes Kemenkes Mataram, Pharmacology Laboratory and Physiology Laboratory Faculty of Medicine Brawijaya University, Malang in May-June 2018 with pretest posttest with control group design, using 10 males white rat tail divided into 5 each groups into the control group and the treatment group. The subjects were given 5% w/v NaCl for 7 days to make hypertension. The treatment group was given MSH 0,36 g/100 g mouse BB for 7 days and blood pressure measurement before and after intervension. Statistical analysis used are shaipro wilk for normality test, independent T-test and paired sample T-test. Research Result. The mean blood pressure of the study subjects before the intervention for the control group and the treatment group was 143.75/110.25 mmHg and 143.5/116.25 mmHg to 156.25/109 mmHg and 104.75/77.75 mmHg (p=0.05). The mean decrease in systolic blood pressure in the treatment group reached 38.75 mmHg while a decrease of ≥20 mmHg can be said to have antihypertensive effect. Conclusion. Hytensol drink powder could decrease the rats (Rattus norvegicus strain Wistar) hypertensions blood pressure and has an antihypertensive activity.

Abstract

Background. Coronary Heart Disease is a disease caused by narrowing of the arteries due to atherosclerosis or koroneria spasm or both. Result Health Research (RISKESDAS) in 2013 showed the prevalence of coronary heart disease nation wide reached 1,5%. Nusa Tenggara Barat (NTB) province is one  of  the  province  where  the  prevalence  of  coronary  heart  disease  is  higher  than  the  national prevalence rate, which at 2,1%. Research Methods. This  is  an  observasional  study.  Population,  all  outpatients  in  hospitals  Kota  Mataram experiencing coronary heart diseasesince the month of January-October 2015 as many as 83 people. Sampel, number of samples is 40, data collected in the form of data sample characteristics include age, gender, level of education, nutritional status, long-suffering CHD, LDL levels and data consumption fats, carbohydrates, fiber, vitamin A, vitamin C and Vitamin E samples. Research Result. The results showed the level of fat consumption the most categories in the above categories, namely the needsof 21 people ( 52,5%). Highest level of carbohydrate consumption that the deficit category as many as 36 people ( 90,0%). The level of fiber consumption at no more than the deficit category as many as 34 people (85,0%). The level of consumption of vitamin A in the category of needs as many as 40 people (100,0%). The level of consumption of vitamin C category deficits as many as 25 people (62,5%). The level of consumption of vitamin E most of the above categories, namely needs 19 people (47,5%) Conclusion. The consumption level entry, vitamin E and vitamin A in the category above needs, while the level of consumption of carbohydrates, fiber and vitamin C samples are in the deficit category

Abstract

Background. Maternal dietary consumption patterns include the frequency, type and the amount of food consumed by pregnant women. Based on research Rahmaniar (2011) maternal food consumption patterns associated with the incidence of chronic energy deficiency. The Basic Health Research 2010 shows pregnant women who consume energy and protein below the minimum of national requirements, respectively 44.8% and 49.5%. Objective. The aim of this study is to describe the pattern of food consumption in pregnant women who experience chronic energy deficiency in Puskesmas Cakranegara Mataram City 2015.  The design of the study conducted by descriptive observational and total sample are 26 pregnant women who suffered chronic energy deficiency. Research Methods. Data were collected include the characteristic of the sample in which most of the samples have a lifespan in the range of 20-35 years, with a junior high school education level and the age of pregnancy is in the second trimester. Research Result. Maternal dietary consumption patterns show that the type of food source of energy and a common builder are consumed by pregnant women who suffered chronic energy deficiency is rice, bread, dried noodles, biscuits, chicken, pindang, eggs, tofu and tempeh. As for the food source of energy and protein are often consumed is rice, biscuits, pindang, eggs, chicken and tempeh. The level of energy, protein, fat and carbohydrate consumption of chronic energy feficiency pregnant women are mostly located in the deficit category. Conclusion. The pattern of food consumption of pregnant women who suffered chronic energy deficiency which often consume are rice, biscuits, pindang, eggs and tempeh as well as the level of energy and macro nutrients consumption that are in deficit category.
