Abstract

Background: The main problem facing Indonesian people today is nutrition deficiency which brings effect to low quality of human resources. Infants aging 6 – 12 months are at high risk of having growth and development disorder. Complementary breastfeeding pattern is one of factors causing gross motoric movement growth and development disorder.Objective: This study was meant to know the relationship be-tween complementary breastfeeding pattern and gross motoric movement growth and development of infants aging 6 – 12 months at Bermani Ulu Sub district, Rejang Lebong District.Method: This was observational type of research which used cohort design. The samples consisted of 87 infants of 6 – 12 months selected through simple random sampling. Complementary breastfeeding pattern data were collected using interview and food call methods, growth data using anthropometry measurement, gross motoric movement data using motoric guideline of infants aging 3 – 18 months. Analysis of data used chi-square, anova, logistic linier and logistic regression.Results: The result of the study showed there was no significant relationship (p>0.05) between complementary breastfeeding pattern and gross motoric movement growth and development. There was significant relationship (p<0.05) between energy intake and protein intake and growth, with energy intake and protein intake. There was significant relationship (p<0.05) between energy intake and protein intake and development, with energy intake and protein intake. Result of multivariate analysis showed there were 2 variables as growth predictor i.e. energy intake (B=0.096) and protein intake (B=0.351) with (24.7) R square and there were 2 variables as gross motoric movement development predictor i.e. energy intake and protein intake (p<0.05).Conclusions: 1) Complementary breastfeeding were not related to gross motoric movement growth and development, 2) energy and protein intake of complementary breastfeeding were related to gross motoric movement growth and development, 3) energy and protein intake were dominant factor which were related to gross motoric movement growth and development.

Abstract

Background: Special attempts should be done to improve patient’s food quality. One of them is by choosing skillful and professional staff in the food processing and service according to the standard. Patient’s food service unit in Margono Soekarjo Hospital, Purwokerto applying catering system that in its policy should consider some factors including training and educational program.Objective: To find out the effect of training on food handler and service system for staff dealing with food on patient’s food quality improvement in Margono Soekarjo Hospital, Purwokerto.Method: This was a quasi experimental study with a timeseries approach. The subjects were 30 staff of food handler and patients in class-II and class-III for more than 2 days and got regular diit. Data were collected through observation and evaluation using questionnaires and visiting records. Evaluation was done on knowledge, attitude, and skills of the staff of food handler; on patient’s food quality and patient’s satisfaction with food quality. Data were analyzed using t-test and anova.Results: Training affected improvement on knowledge, attitude, and skills of staff food handler. The evaluation of food quality after training showed improvement in the aspects of performance and taste of all kinds of food with good grade in average. Meanwhile the evaluation of patient’s satisfaction after training showed stability in the observation 01 (month 1), 02 (month 2) and 03 (month 3) with satisfaction grade in average. Observation on patient’s food waste showed that in average the food that was not consumed by patients was <25%.Conclusion: Training on food serving and processing system affected improvement of knowledge, attitude, and skills of the staff of food handler; food quality, and patient’s satisfaction with food quality.

Abstract

Background: KADARZI could be realized by optimizing the role of family, namely by increasing nutrition knowledge, changing attitude and behavior and developing independent family. The poor knowledge, attitude and behavior of society, especially house wives, to-ward nutrition and health are important factors which influence the realization of KADARZI programme. The evaluation of KADARZI programme in 2002 in Indragiri Hilir resulted 22.41% from the target 80%. One way to increase society’s knowledge, attitude and behavior toward nutrition is by giving nutrition education during early life.Objective: The study was purposed to investigate the influence of nutrition education among elementary school students to KADARZI house wives knowledge, attitude and behavior.Method: This was quasi experimental with non-randomized control group pretest-posttest study. Subjects were elementary students in the fourth, fifth, and sixth class along with their mothers. The place was in Indragiri Hilir district. Subjects were gathered by purposive. The quantity of subjects were determined with sample formulation, knowledge, attitude and behavior data were gathered by interview and observation adjusted in questionnaire list. Characteristic was analyzed with chi square, statistic test with t-test, with significance level of p=0.05.Result: The analysis of age, education, occupation, the number of household members and family income of both group were similar. Pretest analysis of knowledge, attitude and behavior among students and mothers in both groups were also similar in both groups before intervention. Posttest analysis of knowledge, attitude and behavior of treatment group were significantly increased (p<0.05). While in the control group showed insignificant differences (p>0.05). Analysis among mothers whose children got no intervention showed there were no significant differences (p>0.05). While mothers whose children got intervention showed insignificant differences in knowledge and attitude but behavior.Conclusion: Nutrition education about KADARZI on elementary student couldn’t increase mother’s knowledge and attitude but behavior.

Abstract

Background: The main purpose of hospital nutrition service activity is providing qualified food to patient. So far, the efforts to improve food quality in hospital have not been done integrated. Hospital still faces basic problems such as lack of cooks in either quantity or quality. Hospital needs, professional cooks who are able to serve food correctly based on standard, and providing a culinary training for the cooks is needed to improve food quality.Objective: To find out the effect of culinary training for the cook to patient’s food quality.Method: This study was a quasi-experimental with time series design. The subject of study was 30 cooks at Dr. Wahidin Sudirohusodo Hospital Makassar. Data were collected through observation and assessment using questionnaires and check-list. T-test and anova analyses were used to analyze the data on knowledge, attitude, skill of food preparation and food quality.Result: This study showed that there were improvements on scales of knowledge 8.64±2.70 (p<0.05), attitude 20.34±6.32 (p<0.05) and skill 7.89±1.64 (p<0.05) after the training. There were also improvements on food performances (color, texture, size of portion, appearance, and serving) and taste (temperature, flavor, tenderness, maturity, odor).Conclusion: There were improvements of cook’s knowledge, attitude, skill and food quality of patient after culinary training.

Abstract

Background: Iodine deficiency disorder (IDD) is a public health problem in Indonesia and this is closely related to intelligent and mental development disorder. Bad effect of IDD to pregnant mothers who suffer from serious IDD problem may happen during their second trimester pregnancy, however, such effect may be overcome by giving iodine substance supplement. Risks that may happen to pregnant mothers, especially to fetus and infants are miscarriage, stillbirth, born disabled, birth with low body weight, cretin, psychomotor disorder, and death in infancy. According to the result of IDD mapping, Total Goiter Rate at Gunung Kidul District is 12.6%. Short term effort to overcome IDD is distributing iodine capsule to the target, but there is problem in its implementation especially in the management process and resources.Objectives: To determine relationship between management factor and iodine capsule distribution coverage to pregnant mothers at IDD endemic area, Gunung Kidul District.Methods: The study was observational with cross sectional design which used both quantitative and qualitative approaches. Subjects were all nutrition staff and pregnant mothers at community health centers of IDD endemic areas at Gunung Kidul District.Results: There was significant relationship between iodine capsule intake status and urine iodine level (χ2=23.0 p<0.001). This showed that iodine capsule intake status could increase urine iodine excretion level of pregnant mothers. Management process (planning, implementation, control) had significant relationship with urine iodine excretion level of pregnant mothers subsequently (χ2=5.4, p=0.02, OR=1.86, χ2=16.64, p<0.001, OR=2.98, χ2=8.74, p=0.004, OR=2.23). This meant that good management process could increase iodine capsule intake status. Resources (human resources, facilities, fund) had significant relationship with iodine capsule intake status of pregnant mothers subsequently (χ2=4.65, p=0.043, OR=1.83, χ2=6.04, p=0.019, OR=1.94, χ2=6.04, p=0.019, OR=1.94). This showed that sufficient resources could increase iodine capsule intake status of pregnant mothers. Iodine capsule intake status of pregnant mothers was low, i.e. 86 persons of average 35.5% out of 263 respondents and median of urine iodine excretion of pregnant mothers belonged to IDD endemic category, i.e. 86.58 g/dL.Conclusion: Management process and resources had not functioned well and there was significant relationship between management process (planning, implementation, control); and resources (staff, fund, facilities) with coverage of iodine capsule distribution to pregnant mothers. Iodine capsule intake status of pregnant mothers tended to increase urine iodine excretion level of pregnant mothers.

Abstract

Background: Nutrition service department is a part of health care components in a hospital. This department is expected to have better image. Training is needed to improve work performance of dietitians in achieving a professional work.Objective: To find out the influence of nutrition training to work performance of dietitians.Method: This study was pre-experimental with before-after design without control group. Subjects consisted of 15 dietitians and 90 inpatients at Dr. Soetomo Hospital, Surabaya. Data were collected through observation and assessment using questionnaires and check-list, and then analyzed using computer software.Results: There were significant influences of nutrition training to dietitians’ knowledge and attitude (p<0.05). The competence was also significantly improved (p<0.05) with the differentiation points at the first, second, and third month (50.42, 56.16, and 54.11 respectively). Nutrition service output was also significantly improved (p<0.05) with the differentiation points at the first, second, and third month (12.86, 12.40, and 11.06 respectively). There were significant differences in patient satisfaction only when they ate vegetables for lunch, vegetables for dinner, and fruits for lunch (p<0.05).Conclusion: Nutrition training improved work performance of dietitians in providing service for inpatients at Dr. Soetomo Hospital, Surabaya.

Abstract

Background: Undernutrition is one of factors that influences growth and development of children and causes lost generation. In Indonesia, 2.4 million of underfives suffered from undernutrition and 7 millions of them suffered from protein energy malnutrition. In Tanggamus Regency, 46% of children suffered from protein energy malnutrition and 81 cases suffered from undernutrition.Objective: To identify the relationship between children’s previous undernutrition and their recent growth and development.Method: The study was observational with cross sectional design. Subjects were all undernutrition cases nursed in Regional Public Hospital of Pringsewu Tanggamus from 1999–2001. Antropometric measurement was done to children’s weight and height. The anthropometric indicators were weight for age z-score (waz), height for age z-score (haz), and weight for height z-score (whz). Raw motoric development was measured using Denver test. Data collected using questionnaire were child internal factors and external factors of family’s characteristics and health service. One variable analysis was done descriptively, while t-test was used to know the relationship between children’s previous undernutrition and their recent growth development.Results: There was relationship between previous undernutrition of children and their recent growth (p<0,05), but there was not relationship between undernutrition and their development (p>0,05). The other factor that had relationship with their development were the achievement of D/S (p<0,05). Factors of nutritionist, midwife, intervention, TBC’s suspect, head of household education, mother education, member of family, children’s parity, social status, salary, scope of D/S, scope of N/D, and scope of vitamin A tablet supplementation did not have the relationship with the growth and development of children (p>0,05).Conclusion: There was relationship between previous undernutrition of children and their recent growth, but there was not with the recent development of children. The achievement of D/S was the other factor that had relationship with the growth of children.
