Abstract

The relationship of mother?s attitude towards specific food consumption is known to influence children?s attitude and eating behavior. Fish consumption is critical towards children development, such as brain development and overall physical health. The objectives of this research were to elaborate the determinants of children?s appreciation for consuming fish or attitude towards consuming fish. This cross-sectional study was conducted in two different locations in Central Java in a coastal and in a non-coastal area. There are 248 students from the fifth and sixth grades of elementary schools participating as subjects, which is the same as that of their mothers. Observations and interviews were carried out using standardized questionnaires to describe the mother and children relationship that determined children?s appreciation for consuming fish by using path analysis. The results showed that location of residence namely coastal area, family collective eating pattern, mother?s affective attitude towards fish and mother?s higher education significantly improved children appreciation for consuming fish. However, cognitive attitude and conduct to make fish available in family menu did not contribute significantly to children appreciation for consuming fish. It can be concluded that even though mother understands the benefits of fish and makes fish available in family menu, when children unable to feel her preference towards fish, children will not appreciate to consume. Therefore, mother?s preference towards fish needs special considerations, since it positively influence children?s appreciation for consuming fish, which will contribute importantly to children?s well-being.

Abstract

Tuna is one of the most valuable fishery commodities produced in Indonesia. In a great measure of tuna production in Indonesia is exported to several destination countries such as Japan, the European Union and America. The demand for tuna in Japan and the United States from year to year has never decreased. Furthermore, the role of tuna industry from time to time is increasingly important and strategic, especially in sustaining the nation's economy as tuna plays an important role in many people?s health in which Tuna provides high quality protein. In terms of sustainable tuna consumption, valuable creative activities (VCA) is required to be formulated, so all resources (tangible, intangible, human resources) are able to produce prime fishery products that have high quality standard and high value content, competent, safe, traceable, both nationally and internationally. The Prime fishery products are able to be produced if the fishery industry successfully applies several standards both national and international such as ISO, SNI, CODEX, and standards from importers. In terms of applying those standards, it is worth reviewing few of benefits of standard implementation. Associated with the standards applied by the company, there are studies of the benefits of standard implementation in tuna industry in Muara Baru, DKI Jakarta. The purpose of this study was to assess the benefits of standard implementation in tuna companies. The method used was descriptive and it uses several tests including profitability ratio analysis (net profit margin, return on asset, return on equity, profit margin). The results of this study are that both companies had implemented the standard well, standard understanding by both companies still exist different, while from the financial sector the company was able to increase profits

Abstract

Numerous studies showed that chlorophyll and its derivatives had antioxidant activity. This research was conducted to obtain the chlorophyll-rich suji leaf liquid extract (SLE) and then to investigate the oral administration this extract on the antioxidant status by means of animal study. The use of Tween 80 0.75%  in sodium citrate 12 mM solution as an extraction solution combined with 30 minutes incubation time at 70-75oC increased significantly the total chlorophylls content, the water-soluble chlorophylls content and the antioxidant activity of the yielded extract, compared to the suji leaf water-only extract.  Two-month oral administration of SLE  to male Sprague Dawley rats showed that the liver MDA level significantly decreased, and the liver catalase and superoxide dismutase antioxidant enzyme activities significantly increased compared to the control group. It was suggested that the chlorophyll content in SLE might increase the antioxidant status of animal tested.

Abstract

Abstract

Oxidative modification of LDL is believed to play an important role in atherogenesis.  Dichloromethane extract of ginger rhizomes exhibited a strong antioxidative activity using linoleic acid as substrate.  We investigated the in vitro effect of these extract enrichment on the prevention of oxidative LDL by CuSO4. Plasma was supplemented with 43, 430, or 4300 mg/ml dichloromethane extract in dimethylsulfoxide (DMSO) (10 ml DMSO per ml plasma), incubated, and the LDL was isolated.  Lag phase and malonaldehide content was analized after the isolated LDL was oxidized using CuSO4.  The result showed that dichloromethane extract of ginger rhizomes suplementation prolonged lag phase and reduced malonaldehide formation depended on its concentration.  Concentration of 43 and 4300 mg/ml plasma of these extract reduced malonaldehide formation by 35,29 % and 69,72 % respectively, but not significant in prolonged lag phase.  Concentration of these extract with largest prolonged lag phase (82,16 %) and reduced malonaldehide formation (74,95 %)  was 430  mg/ml plasma.  This research has shown that ginger extract is capable of protecting LDL from oxidation.

Abstract

The effect of two fractions of oleoresin compounds from ginger root on lymphocyte function were studied by observing B cell proliferations, which were  measured by the incorporation of 3H-thymidine during cell incubation. The doses of oleoresin compounds and its two fractions tested were 50,100, 150, and 200 mg per ml. Lymphocyte from human peripheral blood were isolated using ficoll density gradient technique, and cultured  in the presence of the compounds in RPMI-1640 medium for 4 days, with or without the addition of 3 mM paraquat as the oxidizing agent.  The results showed that the effects of oleoresin and its two fractions depended on its doses. Oleoresin and its two fractions increased B cell proliferation with  the highest activity of 456 percent at low dose of 50 mg per ml. These result showed a positive effect of oleoresin compound and its two fractions on B cell functions  at low doses. It indicated that bioactive compounds of ginger root at low  concentration have  positive effects on humoral immune response and this supports the traditional belief that ginger increases body resistance to common cold.
