Abstract

The application of effective halal assurance system model was one of producer’s effort to supply halal food for Moslem consumers. The objective Of this research was to develop halal assurance system concept which is consist of halal manual. Halal Standard Operating Procedure, Guideline, and Work Instruction which should be applied at Chicken Slaughter House. flied research used descriptive method by distributing questionnaire, direct observation, on-site verification and halal assurance system assessment on two Chicken Slaughter House. The halal assurance system assessment was conducted based on ISO 9000, 2000 guideline of arrangement of HACCP system. The conclusion of this research was that this Halal Assurance System was suitable to be used as a standard for Chicken Slaughter House. The document change on both industry was that of applied halal assurance system. It was found that there were two kinds of haram Critical Control Point, which were two points at raw material and four point at chicken production process. Abstract

Binthe biluhuta is a native food of Gorontalo, made from mixture of corn, onion, leek, basil, desiccated coconut, chili and fish. The objective of this research was to find the best formulation for binthe biluhuta seasoning and prediction of it’s shelf life. Moisture sorption isotherm derived from the correlation of moisture content data indicated a typical sigmoidal curve implying 3 regions of water adsorption. The water sorption region accounted for three fraction of bound water analyzed using three different mathematical models. The first water fraction ranged 0-3. 148 (%db) and the third fraction ranged 13.438-52970 (%db). The binthe biluhuta seasoning packaged in alumina and stored at 80 and 90% RH, demonstrated the longest shelf life which were equal to 748 and 423 days, respectively. Abstract

This paper discusses legal aspects of open dating system of food products in Indonesia, European Union and USA. The Codex Alimentarius Commision (CAC) regulation of the open dating system i.e. mandatory labelling of prepacked foods as stated in codex general standard for the labelling of prepacked foods is also highlighted. The regulations vary on a statutory authority basis from voluntary dating of all prepacked foods to mandatory open dating legislations. Since 1999, however, the presence or absence of a date has legal implications under Indonesian statutory authority. Key words: Kadaluwarsa, voluntary, mandatory.

PENGARUH ISOTERM SORPSI AIR TERHADAP STABILITAS BERAS UBI [Effect of Moisture Sorption Isotherm to Stability of “Sweet Potato Rice”] Sri Widowati1)*, Heti Herawati1), Rizal Syarief2), Nugraha Edhi Suyatma2), dan Hendra Adi Prasetia3) 1) Balai Besar Penelitian dan Pengembangan Pascapanen Pertanian 2) Fakultas Teknologi Pertanian, Institut Pertanian Bogor 3) Program Studi Kimia Industri SekolahTinggi Teknologi Industri dan Farmasi Bogor   Diterima 14 Januari 2010 / Disetujui  3  Desember 2010 ABSTRACT   “Sweet Potato Rice” stability as a dry food product was determined by water activity (aw) and equilibrium moisture content (Me). This relationship is known as moisture sorption isotherm. This research were aimed 1) to study moisture sorption isotherm of “Sweet Potato Rice” from sweet potato flour (Cangkuang variety) and native/heat moisture treatment (HMT) starch which was stored at the range of aw:0.06 - 0.96 and 28oC; 2) to determine an appropriate model for describing product moisture sorption isotherm  and 3) to predict “Sweet Potato Rice” shelf of life. Experimental design used was a random complete design with two factor, namely: 1) sweet potato starch: native and HMT, and 2) packaging material: polyethylene (PE) and polypropylene (PP).The result showed that the moisture sorption isotherm profiles were sigmoid. Smith equation was the best model which described moisture sorption isotherm with R2= 0,991-0,993 for adsorption and R2= 0,964-0,971 for desorption. Shelf life test showed that “Sweet Potato Rice” from Cangkuang flour and modified starch had longer shelf life  (5.67 months when packed in PP bag and 2.3 months when packed in PE bag); while shelf life artificial sweet potato made from Cangkuang flour and native starch was 4.24 months when packed in PP bag  and 1.72 months when packed in PE bag.   Keywords: artificial rice, moisture sorption isotherm, water activity, shelf of life

Abstract

The role of SME’s in domestic economics increasing progressively. Especially after crisis 1997, in the year 1997 all leaders of Asia Pacific Economic Cooperation (APEC) country has gives recommendation to APEC organization. As a following step in the year 2001 has been established so-called APEC-IBIZ (International Network of Institutes of Small Business Counsellor) who has been appointed as a training programe for a Business Counsellor and eligible in giving certificate for all countries participants. The objectives of this study are: (1) to know the descriptive of the participant of training; (2) to analys the trainers from the aspects of training through the comments of training participant; (3) to evaluate improvement ability of participant of training base on its self evaluation. The survey has been carried out with by using Statistical Package for Social Science (SPSS) model 12. The population of this study are determinate by using all of the training program (88) and the sample are 30 respondents. Analysis of the trainners  and the training aspect toward with coming from the opinion of the programme participant is consider as excellent due to the majority of the participant chose between scale 5 and 4. And the third finding according to the objectives of this study indicate that the ability of the participant has been increased of the training programme.

Abstract

The objectives of this study were (1) to identify the characteristics of DPM-LUEP recipient groups, (2) to identify factors affecting income/profit increase in DPM-LUEP recipients, (3) to evaluate the effectiveness of determining requirement processes, the mechanisms of grouping, the distribution and the return of the funds to LUEP. The method of analysis used were (1) descriptive analysis, (2) profitability analysis, and (3) Focus Group Discussion (FGD). The results of the profitability analysis showed that the factors capable of increasing income/profit for DPM-LUEP recipients were (1) the effectiveness in purchasing the raw materials/unpolished rice (the cycles), (2) the increased purchase of raw materials which eventually increased the outcome of the processed products, (3) the decrease of the total cost to the sale income, especially the efficiency of the total variable cost, and (4) the product stock taking while waiting for the increase of product sale price (rice) in the market. Based on the FGD, the dominant problems were found not only in the process of determining the requirements but also in the mechanisms of LUEP grouping as well as the paying back of DPM-LUEP. The efforts necessary to overcome the problems so as to increase the effectiveness of decision and of DPM LUEP distribution include organization strengthening and group management, service quality improvement, increasing the capability and the number of staff, and support of facilities and services. In addition, it is necessary to cut down the bureaucracy stages in the process of decision making and the distribution process of DPM-LUEP, provide fund reserve through APBD I and II, as well as to propose to the central authority to conduct more comprehensive research on requirement, decision making, distribution and the paying back of DPM-LUEP.   Key Words: DPM-LUEP recipients, paddy/rice, price, decision making

Abstract

One of the alternative institution that distributes productive fund to the community in need is the “Amil Zakat” Institution.  The community-based Misykat, which belongs to the institution, is Dompet Peduli Umat Daarut Tauhid (DPUDT), which not only contributes the rolling fund but also establishes mental and character building as its main product. It also delivers business management to a self-supporting community, and  create a new working environment for the local community. The objectives of this study are, firstly, to analyze the implementation of the Misykat Program for the empowerment of micro-businesses in Bogor, based on the achievement of the program, and secondly, to analyze the most influencing strategy of the Misykat Program in Bogor, based on the priority scale.  The data collecting was conducted through literature study, standard operation of the Misykat Program, and data implementation of the program in Bogor as the secondary data collecting.  The primary data collecting was obtained through interview with the management, and through questionnaire input from members. The data analysis was executed through the descriptive and Strengths, Weaknesses, Opportunities and Threats (SWOT) analysis using Internal Factor Evaluation (IFE), External Factor Evaluation (EFE), Internal-External (IE) and SWOT matrix.  The last stage of the strategy formulation was the decision in using the Quantitative Strategic Planning (QSP) matrix. The study showed that 30 people joined the Misykat Program, and that there were still no significant changes in the economic welfare of its members.  However, there was an increase in the accumulation of members’  saving and reserved fund, and their economic productivity, caused by a creativity enhancement in developing business.  In the Nurul Qomar Council, the distributed fund was more effective compared to that in the Al-Ikhlas Council. There was a paradigm shift in the members’  way of thinking as a result of an intensive community establishment.  Unfortunately, no member has become “Muzakki” yet because their earnings have not reached “nishab”.  Meanwhile, the most applicable strategies are enhancing the quality of service, education and supervision to the members.   Keywords: business, empowerment, misykat program community

Abstract

Tuna Indonesia mostly exported in fresh and frozen (55%), and 45% in processed tuna. It is therefore necessary to study the competitiveness of processed tuna. The method used is the Revealed Comparative Advantage (RCA) and the analysis of the Competitive Profile Matrix (CPM) Analysis, In the year 2006 to 2010, Indonesia has a fresh tuna RCA index between 4.56 to 8.18, tuna frozen at 0.49 to 1,43 and processed tuna fish ranged from 1.25 to 2.68. Based on the analysis of the competitive profile, three factors of production and marketing of highly influential on the competitiveness of tuna fish are (1) the quality of the resulting processed tuna fish with a weight of 0.143, (2) tariff and non tariff barriers with a weight of 0.114, and (3) Development and Promotion Intellegence market with the weight of 0.110. As for the human and institutional factors, factors which have an important role in increasing competitiveness is (1) The Role of Government in the development of the tuna processing industry with a weight of 0.147, (2) Availability of human resources capable of handling quality with weights 0.135, and (3) the role of government in the prevention and handling of illegal fishing by weight of 0.130. Based on the analysis of RCA analysis and matrix analysis of the competitive profiles of priority strategies that can be done to improve the competitiveness of Indonesia´s processed tuna to the factors of production and marketing are as follows (1) Improve the quality of processed tuna Indonesia; (2) Encourage overcome tariff and non tariff barriers; (3) enhance market development and promotion Intellegence, The strategic priorities for the human and institutional factors are (1) Increase the Role of Government in the development of the tuna processing industry, (2) Improving the human resources capable of handling quality, (3) Eradication and control of illegal fishing.

Abstract

The aim of this research was to study the variation of shelf-life values, obtained in quantifying shelf-life of biscuits among models of accelerated storage studies (ASS) from unidirectional FickS law. Shelf-life of biscuits is defined as the length of time of a packaged biscuits can be stored before the onset quality change appears.Four models: Heiss-Eichner (1971), Labuza (1983), Rudolph (1986) and Half Value Period or HVP model (Syarief, 1986) were evaluated. These models shared a common basic principle that they were all derived and developed from unidirectional Ficks law. Therefore, each parameter of individual model can be compared to the athers. A semi empirical approach using reaction kinetics through Arrhenius plot was used as a real shelf-life values.Quantification resulted in two categories of shelf-life values, First those which higher than expected value and second, were lower than expected.Parameter evaluation of components of Heiss-Eichner and Labuza models clearly shown less in number than components of Rudolph and HVP models. This led to a conclusion that the more sophisticated models gave higher shelf-life values as compared to the Arhenius model.

To completed the research, the experimen was conducted by four steps activities as follows: I) the measurement of respiration rate; 2) establishment of the range of modijied atmosphere storage for cashew uppels; 3) cojitputingthe packaging area and selecting the kind of plastic film; 4) prediction of shelf lge for cashew appels during srorage under MAP system.
