Abstract

ABSTRACTIndonesia has a potency to produce its own propolis, however the propolis market in Indonesia is dominated by imported product, such as from Brazil. Currently, still there is no reasearch which evaluate bioactive compound and nutrient content of Indonesian Propolis (IP) compare with Brazilian Propolis (BP). The objectivesof this study were to analyze bioactive compounds and nutrient contents of IP compared to BP. Bioactive compounds and nutrients content were analyzed by gas chromatography–mass spectrophotometry. The resultsshowed both IP and BP contain fenol, α-amyrin, cylolanost, and pyrimidines. Bioactive compounds which specifically found in IP were eudesmane compound, ethyl acridine, lupeol, friedooleanan; while β amyrin and cinnamic acid compound only found in BP. The nutrient contents of IP were higher than BP except for vitamin A. In conclusion, IP might have potential health benefit, similar to BP.Key words: propolis, bioactive, nutrientABSTRAKIndonesia mempunyai potensi untuk menghasilkan propolis tetapi pemasaran propolis di Indonesia didominasi oleh propolis impor seperti propolis yang berasal Brasil. Sampai saat ini belum ada penelitian yang mengungkapkandungan bioaktif dan zat gizi propolis Indonesia (PI) dibandingkan dengan propolis Brasil (PB). Oleh karena itu tujuan penelitian ini adalah untuk melakukan kajian kandungan bioaktif dan zat gizi (vitamin dan mineral) PI dibandingkan dengan PB. Komponen bioaktif dan kandungn gizi dianalisis dengan metode gas chromatography–mass spectrometry. Hasil analisis menyatakan bahwa baik PI maupun PB mengandung senyawa fenol, α-amyrin, cylolanost, dan pirimidin. Komponen bioaktif unik yang ditemukan di dalam PI adalah senyawaeudesmane, ethyl acridine, lupeol dan friedooleanan; sedangkan β-amyrin dan senyawa asam sinamat hanya ditemukan di dalam PB. Kandungan zat gizi PI lebih tinggi dari PB kecuali kandungan vitamin A. Hal ini menunjukkan bahwa PI kemungkinan mempunyai khasiat untuk kesehatan sama dengan PB.Kata kunci: propolis, bioaktif, zat gizi

Abstract

ABSTRACTBreadfruit is valuable fruit and has a good of nutrient content, but its usage is limited by poor storage properties of fresh fruit. Processing into flour, can increase its utilization. The aim of this research was to utilize breadfruit flour in production of nutritious snack foods for School Supplementary Feeding Programme (PMT-AS). There were three products developed in this study; brownies, pia, and croquette. The research was conducted using experimental design. The proportions of breadfruit flour and wheat flour were different for each product, which brownies was formulated using 70:30, 80:20, 90:10, and 100:0; whereas pia and croquette was formulated by 50:50, 60:40, 70:30, and 80:20. Proximate analysis showed that 100 g brownies contained 409 kcal energy and 7.5 g protein, 100 g pia had 383 kcal energy and 6.7 g protein and croquette had the highest energy and protein content is 455 kcal and 9.9 g protein. In conclusion, all products were suitable as alternative snacks for PMT-AS. The products have met 300 kcal energy and 5 g protein per serving size. Considered also the cost of production, these products have fulfilled criteria to be used in PMT-AS.Keywords: breadfruit, PMT-AS, snacksABSTRAKSukun merupakan buah yang bernilai dan memiliki kandungan gizi yang baik, tetapi penggunaannya terbatas oleh penyimpanan ketika berbentuk buah segar. Sukun yang diubah ke dalam bentuk tepung dapat meningkatkan pemanfaatannya. Tujuan dari penelitian ini adalah memanfaatkan tepung sukun dalam pembuatan kudapan sebagai alternatif makanan bergizi untuk PMT-AS. Terdapat tiga produk dalam penelitian ini, yaitu brownies, pia, dan kroket. Penelitian ini menggunakan desain eksperimental. Perbandingan tepung sukun dan tepung terigu berbeda untuk masing-masing produk. Formulasi brownies adalah 70:39, 80:20, 90:10, dan 100:0, sedangkan formulasi pia dan kroket adalah 50:50, 60:40, 70:30, dan 80:20. Berdasarkan uji organoleptik diketahui bahwa produk terpilih adalah brownies dengan 90% tepung sukun, pia dengan 60% tepung sukun, dan kroket dengan 60% tepung sukun. Seluruh produk telah sesuai sebagai alternatif kudapan untuk PMT-AS. Produk-produk tersebut juga telah memenuhi 300 kkal energi dan 5 g protein per serving size.Kata kunci: kudapan, PMT-AS, sukun

Abstract

ABSTRACTThe objective of this study was to analyze the effect of one dish meal breakfast on dietary intake and adequacy level of energy and other nutrients of elementary school children. The study used pre-experimentalone-group pretest-posttest design and was conducted from March to May 2011 at Kebon Kopi 2 Public ElementarySchool in Bogor City. The total number of sixty two elementary students were fully participated in this study, most of them were girls aged 11 years old. Abstract

The objective of this  research was to analyze farmer’s behavior in the production and post harvest management of fresh food (vegetables). A survey and cross sectional study design were applied in this study. The locations are chosen purposively, ie: Sukarame Village in Balik Bukit Subdistrict and Sekincau Village in Sekincau Subdistrict. The sixty respondents were chosen randomly using stratified sampling method. The data was analyzed descriptively and inferentially. Fresh food farmers in West Lampung District had low knowledge about GAP and also had attitude and behavior that was not appropriate with GAP. Activity in farm group and attitude about GAP had significant correlationship with behavior in production and post harvest management. Abstract

The objective of this study was to analyze the effect of supplementary foods on pregnant mothers’ energy and protein consumtion. This study was conducted in three sub-districts i.e.: Leuwiliang, Leuwisadeng and Ciampea. The 140 pregnant mothers from these sub-districts were selected for this study. Out of 140 pregnant mothers, 70 pregnant mothers were selected to receive supplementary foods for 6 month and 70 pregnant mothers did not receive any experimental food (control). Product selected as intervention consists of vermicelli, milk, and biscuit. Abstract

Food Law No. 7 1996 defined food security as a condition in which the fulfillment of food for the household is reflected by the availability of sufficient food both its quantity and quality, safe, evenly distributed and within reach; meanwhile, food quality is defined as the value determined base on the criteria of food safety, nutrition content and trade standard on food stuffs, catables and beverages. The purpose of this study was to analyze the application of food quality and safety principles in the production of food product i.e tempeh at small scale industry in West Lampung. A survey on 15 selected tempeh producers was carried out using a structured questionnaire. Primary and secondary data was collected in this study through interview and observation to the 15 tempeh producers. In the general, all producers had not fully implemented food safety and quality principles as outlined in the GMP guideline. Nevertheless, the tempeh quality produced in West Lampung organoleptically was good. Several issues need to be improved i.e. cleaning raw material (soy bean), using water from safe sources, washing soy bean before and after braising, controlling small animal included mouse, and maintenance and cleany the premises. Abstract

The objective of this study is to learn the effect of turmeric drink on total cholesterol, HDL and LDL levels of rats. There are tree kinds of turmeric drink, which were given to experimental rats: 1) traditionaly turmeric drink; 2) spray drier turmeric drink and 3) extract turmeric drink. The study showed that all kinds of turmeric drink decreased cholesterol. Traditionally turmeric drink decreased total cholesterol and LDL higher than others and spray drier turmeric drink could maintain HDL.

Abstract

ABSTRACTThe objective of this research was to study the use of carrot powder as a source of natural β-carotene in instant noodle. Four formulas were developed based on carrot powder level added into the formula (0%, 10%, 15%, and 20%). The carrot instant noodle was evaluated for sensory properties by 30 panelists. The best formula was analyzed for chemical properties, including proximate composition, dietary fibre, and β-carotene. The physical properties were analyzed in color, cooking time, elasticity, and water holding capacity. The experimental design applied terms of Complete Randomized Design. The result showed that instant noodle with 15% carrot powder was the best formula of carrot instant noodle. No significant difference in acceptance between this formula and commercial instant noodles. Product was composed of moisture content 7.75% (wb), ash 1.59% (d.b), protein 12.82% (d.b), fat 1.41% (d.b), carbohydrate 84.18% (d.b) and β-carotene 2 390 μg/100 g (199 RE or 99.5 RAE/serving size). Carrot instant noodle had physical properties as cooking time was 3.5 minutes, the color was yellow-redish, elasticity properties was 162.22%, and water holding capacity was 143.89%. This noodle contribute above 15% RDA of vitamin A for the children aged 4—5 years.Key words: β-carotene, carrot powder, instant noodleABSTRAKTujuan penelitian ini adalah untuk mempelajari penggunaan serbuk wortel sebagai sumber beta karoten alami dalam mi instan. Empat formula dikembangkan berdasarkan jumlah serbuk wortel yang ditambahkan (0%, 10%, 15%, dan 20%). Mi instan wortel dievaluasi sifat organoleptiknya oleh 30 orang panelis. Formula terbaik dianalisis sifat-sifat kimianya meliputi komposisi, serat pangan, dan beta karoten, sedangkan sifat-sifat fisik yang dianalisis adalah warna, waktu masak, elastisitas, dan daya serap air. Rancangan percobaan yang digunakan adalah Rancangan Acak Lengkap. Hasil penelitian menunjukkan bahwa mi instan dengan penambahan 15% serbuk wortel merupakan formula terbaik. Tidak ada perbedaan yang nyata dalam penerimaan antara mi instan formula ini dengan mi instan komersial. Produk mi instan ini mengandung air sebesar 7.75% (bb), abu 1.59% (bk), protein 12.82% (bk), lemak 1.41% (bk), karbohidrat 84.18% (bk) dan karoten 2 390 μg/100 g (199 RE atau 99.5 RAE/takaran saji). Mi instan wortel mempunyai sifat-sifat fisik seperti waktu masak 3.5 menit, warna kuning kemerahan, elastisitas 162.22%, dan daya serap air 143.89%. Mi ini berkontribusi sebesar 15% terhadap Angka Kecukupan Gizi vitamin A untuk anak usia 4—5 tahun.Kata kunci: β-karoten, mi instan, serbuk wortel

Abstract

ABSTRACT Background: Torbangun leaves (Coleus ambonicus Lour) is one of type of species from Labiatae family which contains a lot of micronutrient and active element which have been examined as beneficial for human health and quality of life. The plants containing iridoid and flavonoid as well as phytochemical which deal with reproduction hormone is applicable to traditional medication toward PMS cases. Methods: The present study was aimed to assess the efficacy of CAL leaves in the management of PMS. An experimental clinical trial was conducted in 35 teenagers with PMS. Three intervention groups were defined: CAL leaves; commercial preparation; and placebo. Participants were followed-up individually for 1 month. Result: The results showed average menarche occurred around age 13 years, with menstruation lasting 5 days. During each successive treatment cycle, participants experienced a lower pain intensity score. Chi Square test, after adjusting each cycle for baseline pain, treatment compliance and other variables, showed that the group receiving CAL extract had significantly reduced pain intensity (p<0.05) compared with commercial preparation and placebo. Conclusion: The torbangun leaves supplement can be used as treatment to relief symptoms of the premenstrual syndrome. Abstract

ABSTRACT Background: Pulmonary tuberculosis (TB) patients, in addition to frequently suffering from nutritional deficiency, may have impaired gut microflora balance as effect of low daily dietary intake and antibiotics therapy use, respectively. Lactobacillus acidophilus and Bifidobacterium longum is a normal inhabitant of human gut microflora, which able to improve nutrients absorption and modulate immune response. Objective: To test the effect of milk-based protein (MBP) supplement on the microflora balance of TB (maintaining growth and metabolic activity of probiotic bacteria) from treated patients. Methods: Several methods was applied to determine nutrients concentration and probiotic population. (1) types and carbohydrate amount and vitamin A concentration in MBP supplement was determined by HPLC method, zinc concentration used AAS method and amount of protein used micro Kjeldahl method; (2) total energy, fat and vitamin D concentration was calculated based on their concentration in each ingredient; (3) total cells count for growth and metabolic activity test of probiotics bacteria was used plating technique and HPLC method, respectively; (4) acceptance test to MBP supplement was performed using organoleptic test three point Likert scale. Results: In each 100 gram MBP supplement was containing (a) monosaccharide (1,710 mg), disaccharides (43,870 mg) and oligosaccharides (490 mg), vitamin A, zinc, protein, energy, fat dan vitamin D, (b) it supplement capable maintained growth of probiotics bacteria (> 1x 10 log10 cfu/mL) and stimulated lactic acid production five times higher (4,5 M lactic acid/mL) than placebo (0,9 M lactic acid/ml); (c) MBP supplements has been accepted by all subjects. Conclusion: MBP supplement had capacity to maintain growth and improved metabolic activity of two indigenous probiotic bacteria in the human gut.   Keywords: milk-based protein supplement, probiotic, microflora, pulmonary tuberculosis.   ABSTRAK Latar belakang: Pasien tuberkulosis (TB) Paru, di samping sering mengalami defisiensi zat gizi, diduga mengalami gangguan keseimbangan mikroflora usus akibat rendahnya konsumsi makanan dan penggunaan terapi antibiotika. Lactobacillus acidophilus dan Bifidobacterium longum merupakan penghuni normal mikroflora usus manusia, yang mampu memperbaiki penyerapan zat gizi dan memodulasi respon imun. Tujuan: Menguji efek suplemen protein berbasis-susu (PBS) terhadap keseimbangan mikroflora TB (pemeliharaan pertumbuhan dan aktivitas metabolik bakteri prebiotik) dari pasien dalam pengobatan. Metode: Beberapa metode diterapkan untuk menentukan konsentrasi zat gizi dan populasi probiotik. (1) jenis dan jumlah karbohidrat serta konsentrasi vitamin A dalam suplemen PBS menggunakan metode HPLC, konsentrasi seng menggunakan metode AAS, dan jumlah protein menggunakan metode mikro Kjeldahl; (2) jumlah energi, lemak dan konsentrasi vitamin D dihitung berdasarkan kandungan zat gizi dalam setiap bahan; (3) populasi bakteri probiotik menggunakan teknik plating dan aktivitas metabolik dengan metode HPLC; (4) daya terima suplemen PBS secara organoleptik menggunakan skala Likert. Hasil: Setiap 100 gram suplemen PBS terkandung: (a) karbohidrat monosakarida (1.710 mg), disakarida (43.870 mg) dan oligosakarida (490 mg) serta energi, lemak, protein, vitamin A, vitamin D, dan seng; (b) suplemen PBS mampu memelihara pertumbuhan bakteri probiotik (> 1x 10 log10 cfu/mL) dan menstimulasi produksi asam laktat lima kali lebih tinggi (4,5 M asam laktat/mL) dibandingkan dengan plasebo (0,9 M asam laktat/mL); (c) suplemen PBS disukai oleh seluruh subyek. Kesimpulan: Suplemen PBS memiliki kapasitas mempertahankan pertumbuhan bakteri probiotik dan meningkatkan aktivitas metabolik dua probiotik indigenus saluran pencernaan manusia.
