Abstract

Management based on the carbohydrate diet is very important to do and not to be avoided but how diet and variations of carbohydrate consumed is set mainly the source of rice that does not fast respond to an increase in blood glucose. Therefore, Evaluation of nutritional and instant rice production that is the functional food and have a low glycemic index rice sourced locally as the East Kalimantan native rice black Adan will be very beneficial for health. The aim of this research was to evaluate of the nutritional and effect of various herbal on sensory properties and blood glucose response Adan instant black rice. Adan black rice has a protein content of 8.10%, Fe 3.61 mg/1000g and 3.33 g/100g total dietary fiber and includes a group of rice with low amylose. Organoleptic value of instant rice black Adan produced the most preferred by panellists also from the addition of ginger extract and pandan leaves , water, onion tiwai, tea and last turmeric. The digestibility of starch decreased 19.04 (mg/1000g) after being a functional of instant rice black Adan. Difference in reduction of blood glucose levels in volunteers who consumed black Adan instant rice by 14.20 mg/dL, whereas the provision of a reference food (glucose) of 71.50 mg/dL, this indicates of instant rice functional black Adan provide availability of glucose in the blood longer available.

Abstract

Over this time period, strategies for implementing effective nutrition intervention programmes have long been sought after. These have stressed not only feasibility of implementation and short-term out-comes, but efforts to promote sustainable nutrition programmes have been of great concern. The nutrition intervention programmes successed at province East Kalimantan should identified mechanisms by which experience to efforts develop recovery of community nutrition status not enough revitalization of Posyandu and Puskesmas but should be integrated development which to make a village as integrated development planning unit with nutrition as a part of welfare indicator community. To make these integrative efforts possible, political will, social mobilization, nutritionist and other related personnel must understand the nature of nutrition problems and have access to information system which provides proper and timely information.  Keywords: Nutrition Problems, Intervention Programmes, Experience In Other Countries

Abstract

Background: Many factors infl uence the growth and development of an infant but nutrition was undeniably one of the most important factors. One way to improve the nutritional status of infants was by providing supplementary foods fortifi ed with multiple micronutrients to mothers during pregnancy. Nutritional interventions during pregnancy provided better nutrient reserves for mothers and fetus.Objective: To analyze the impact of multi micronutrient-fortifi ed supplementary foods provision in pregnant mothers on motor development and anemia status of infants in three sub-districts of Bogor District namely: Leuwiliang, Leuwisadeng and Ciampea.Method: A total of 120 infants were followed up in a prospective cohort study. The subjects were divided into three groups, i.e: 40 infants in fortifi ed group (pregnant mothers received supplementary foods (vermicelli, milk and biscuit) fortifi ed with multi-nutrients i.e. iron, iodine, zinc, folic acid, vitamin C and vitamin A), 40 infants in non-fortifi ed groups (pregnant mothers received non fortifi ed foods) and 40 infants in the control groups (pregnant mothers did not receive any supplementary foods). Motor development was measured by methods developed by the Ministry of Health, Republic of Indonesia. Hb was measured by Cyanmethemoglobin method. Ancova and linear logistic regression were used to analyze the data.Results: Provision of multi micronutrient-fortifi ed supplementary foods in pregnant mothers substantially improves infant’s motor development (77% better than other groups). In addition, supplementation of multi micronutrient-fortifi ed foods in pregnant mothers reduced the rate of hemoglobin and hematocrit decline in infants up to the age of 6 months. There were no infants aged 6 months with Hb < 90 g / L in the fortifi ed group, while in the non-fortifi ed group and control group the prevalence of anemia was 8.3% and 11.11%, respectively.Conclusion: Provision of multi micronutrient-fortifi ed supplementary foods in pregnant mothers improved infant’s motor development.

Abstract

EFFECT OF MULTI MICRONUTRIENTS FORTIFIED SUPPLEMENTARY FOOD IN PREGNANT WOMEN ON LINEAR GROWTH, KNEE HEIGHT AND ANEMIA STATUS OF INFANTSLike in many developing countries, macro and micro nutritional deficiencies are the seriousproblem, especially for Indonesian pregnant women and young age children. Early nutritionalintervention strategy through supplementary fortified foods for pregnant women is one ofalternative nutritional improvement interventions for the next generation. The objective of this study is to analize the impact of multi micronutrients fortified supplementaryfood in pregnant mothers on linear growth, knee height and anemia status of infants. This studywas conducted in three sub-districts of Bogor Distritcs namely: Leuwiliang, Leuwisadeng andCiampea. This prospective cohort study follow up 120 infants. The total of infants has beenfollowed up was 120. From 120 born infants, 40 infants were selected as a fortified group in whichtheir mothers during pregnancy received fortified food (consists of vermicelli, milk and biscuit withmulti-nutrients i.e. iron, iodine, zinc, folic acid, vitamin C and vitamin A), 40 infants as unfortifiedgroups in which their mothers was received non fortified foods, and 40 infants as control groups(their mothers did not receive any experiment food). Data analyzed using SPSS 13.0. Z-scorewere calculated for the length-for-age (HAZ) of WHO 2006 growth reference.The result of study showed that multi micronutrients fortified supplementary food for pregnantmothers had significant effect on infants linear growth which was 2.18 cm taller compared tocontrol group and 1.53 cm taller compared to unfortified group. The mean of liniear growth andHAZ fortified group up to 6 months infants was better than unfortified and control. Earliercomplementary food intoduction were associated with the decrease of infants’ linear growth andHAZ. Stunting (5.0%) was found at two months of infants’ age in control group. Fortified foodsupplementation for pregnant women had significant effect on infant knee height gain. Infant kneeheight (< 14.248 cm) at 6 months was categorized as stunting. Multi micronutrients fortifiedsupplementary food in pregnant mother had an retention effect of decreased infants Hb at up to 6months.Keywords: Multi micronutrients, pregnancy, infant, breast feeding, linear growth, knee height, hemoglobin

Abstract

Pengembangan produk-produk baru dari berbagai tepung untuk mendukung ketahanan pangan sangat penting dilakukan. Salah satu yang perlu dikembangkan adalah daun singkong yang dibuat menjadi tepung dapat digunakan sebagai diversifikasi makanan dengan upaya pengembangan makanan alternatif. Tujuan penelitian untuk mengetahui pengaruh penambahan tepung daun singkong terhadap sifat sensoris dan antioksidan beras analog. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan lima perlakuan, perbandingan mocaf dan tepung jagung (80 g dan 20 g) dengan total berat 100 g bahan tambahan dengan 5 perlakuan konsentrasi tepung daun singkong 0, 2, 4, 6 dan 8 g. Data organoleptik diolah menggunakan MSI (Method of Successive Interval) sebelum dianalisis dengan ANOVA dan diuji lanjut dengan uji BNT(Beda Nyata Terkecil) pada taraf 5%. Penambahan tepung daun singkong meningkatkan sensorik dan antioksidan. Nasi analog tepung singkong memiliki aktivitas antioksidan yang kuat (50-100 ppm) dengan nilai IC50 53,424 ppm. Perlakuan terbaik adalah dengan penambahan 2 g dengan warna yang agak hijau, agak beraroma tepung daun singkong, agak berasa tepung daun singkong dan agak kenyal.

Abstract

Kentang udara (gembolo) merupakan umbi yang serupa dengan umbi gembili namunukurannya lebih besar, keduanya termasuk dalam satu genus Dioscorea yang selama inimasih belum banyak dimanfaatkan. Salah satu bentuk alternatif pengolahan untuk kentangudara yaitu mengolahnya menjadi tepung. Penelitian ini dilakukan untuk mengetahuipengaruh blansir terhadap karakteristik fisikokimia dan sensoris tepung kentang udara yangdihasilkan. Penelitian ini disusun menggunakan Rancangan Acak Lengkap dengan 7perlakuan dan 3 ulangan. Data di analisa menggunakan sidik ragam dilanjutkan dengan ujiBeda Nyata Terkecil pada taraf 5%. Untuk data sensoris diolah menggunakan Method ofSuccessive Internal sebelum dianalisa dengan sidik ragam. Penelitian ini menunjukkanbahwa perlakuan blansir pada pembuatan tepung kentang udara memberikan pengaruh tidaknyata terhadap kadar air, kadar abu, daya serap air, hedonik dan mutu hedonik tekstutr,hedonik dan mutu hedonik aroma, tetapi berpengaruh nyata terhadap wettability, densitaskamba, rendemen, hedonik dan mutu hedonik warna. Sifat fisikokimia tepung kentang udarahasil penelitian ini adalah kadar air 7,03-7,47%, kadar abu 3,60-4,39%, wettability 22-235detik, densitas kamba 0,54-0,71 g/mL, daya serap air 6,41-6,96 g/g. Rendemen tepungkentang udara ini adalah 11,91-19,56%. Sifat sensoris dari tepung yang dihasilkan daripengolahan dengan blansir 12 menit adalah mendekati suka untuk warna, tekstur dan aroma,dengan karakteristik berwarna kuning kecoklatan, bertekstur agak halus dan beraromamendekati beraroma tepung kentang udara.
