Abstract

ABSTRAK Latar belakang : Nyamuk Aedes aegypti merupakan salah satu vektor yang dapat memindahkan penyakit Demam Berdarah Dengue secara mekanik. Pemeriksaan Angka Bebas Jentik ( ABJ ) di Kelurahan Purwodadi Kabupaten Grobogan serbesar 86 %. Salah satu tehnik untuk pengendalian populasi nyamuk Ae. aegypti dengan cara mekanik yaitu pemasangan autocidal ovitrap yang mudah dan ekonomis.Tujuan : Mengetahui pengaruh warna kasa penutup autocidal ovitrap terhadap jumlah jentik nyamuk Ae. aegypti yang tertangkap.Metode : Jenis penelitian explanatory research, menggunakan desain penelitian eksperimen dengan pendekatan posttest only design. Subyek penelitian di lingkungan pemukiman Kelurahan Purwodadi, dengan 6 kali pengulangan. Variabel yang diukur meliputi warna kasa penutup autocidal ovitrap dan jumlah jentik nyamuk Ae. aegypti yang tertangkap. Data yang didapat dianalisis dengan uji statistik varian klasifikasi tunggal ( One way anova ), dengan tingkat kepercayaan 5 %. Hasil : Jumlah jentik nyamuk Ae. aegypti yang tertangkap menurut kategori warna kasa penutup autocidal ovitrap adalah warna hitam 19 ekor; warna merah muda 17 ekor; warna putih 12 ekor; dan warna biru muda 8 ekor. Hasil uji ststistik varian klasifikasi tunggal didapat p= 0,588. Kesimpulan : Tidak ada pengaruh warna kasa penutup autocidal ovitrap terhadap jumlah jentik nyamuk Ae. aegypti yang tertangkap. Abstract

Collected data are analyzed with statistical test of one-way anovct rutth srgnifiilit level 5,%. Result of the research is that the numbers of Aedes aegtpti lar-vae, which ari trapped nrrr,:rliig to the categoD,of covet. gat:ze color autocidal ovitrap, are l9 black-colored larvae, l7 pink-cotored larvae, l2 white-colot-ed larttae, and S light blue-colored larvae. Abstract

This experiment was carried out to study the effects of leaching, compositioning, and chill storage of mince fish on the characteristic changes of surimi from shark and stingray as much as 88% and 100%, respectively; with the salt soluble protein contents were 13.52% and 13.24%, repectively. Mixture of mince shark and stingray in proportion of 25% : 75% (A1B A2) gave the highest value of gel strength being 209.29 g.cm in comparison with others composition. During chill storage , deterioration process still occurred as indicated by increasing value of acidity and content of base volatile compounds i.e. total volatile base nitrogen (TVBN) and tri-methyl amine (TMA); and also decreasing contents of urea and salt soluble protein. Deterioration process of mince fish also affected the physical characteristic of surimi i.e decreasing values of gel strength, water holding capacity (WHC), and colour (whiteness). Abstract

Bakasang is one of the traditional products of North Maluku, this product has not been studied scientifically. The purpose of this research is to know the organoleptic characteristics of bakasang to be known and accepted by public. This research was fermented using 25% of salt with duration (0, 2, 4, 6, and 8 days), and storage with duration (0, 30, 60, and 90 days). Bakasang’s have organoleptic tested include: appearance, odor, taste and texture. Bakasang elected to compared with commercial bakasang are usually consumed by people in North Maluku. This research shown that: fermentation treatment 4 days at 0 days storage (F4P0) and fermentation bakasang 8 days at 0 days storage (F8P0) was chosen. Paired comparison test results show that bekasang tuna has the advantage of taste and smell unique because it is more preferred by panelist. PHENOL CONTENT, ANTIOXIDANT ACTIVITY AND FIBERS PROFILE OF FOUR TROPICAL SEAGRASSES FROM INDONESIA

Abstract

Extracts of methanol, ethyl acetate, and n-hexane of four species of Indonesian seagrasses were used to determine the total phenol contents and their antioxidant activities.  Total phenol contents of each extract was determined by spectrophotometer using Follin-Ciocalteu reagent, and the antioxidant activity was measured using 1,1-diphenyl-2-picrylhydrazyl (DPPH).  The profile of fibers of each fresh seagrass was performed according to an enzymatic-gravimetric method. All of methanol extracts contained high number of total phenol, except Syringodium isoetifolium the highest content was found in ethyl acetate extract; so that methanol extracts of Thalassia hemprichii, Cymodocea rotundata, Enhalus acoroides and ethyl acetate extract of Syringodium isoetifolium had the highest activities on scavenging DPPH radical.  The phenol content in tropical seagrasses was tending to soluble in polar and semi-polar solvents. There was no significant different on the content of total fibers, with values ranges was from 14.32 g/100 g to 15.39 g/100 g.  However, the highest content of soluble fiber was found in Enhalus acoroides (8.93 g/100 g) and significantly differed to others.

Respon Tingkah Laku Makan Ikan Kerapu Macan (Ephinephelus fuscoguttatus) Terhadap Komposisi Kimia Umpan

Abstract

Studi tingkah laku makan ikan merupakan bagian yang paling penting untuk mengetahui efektivitas penggunaan umpan. Penelitian ini bertujuan untuk mengetahui respon dan pola tingkah laku makan ikan kerapu macan (Ephinephelus fuscoguttatus) dengan perbedaan komposisi kimia umpan. Penelitian dilakukan dengan metode eksperimen laboratorium. E. fuscoguttatus yang digunakan memiliki panjang total rata-rata 200 mm. Umpan yang digunakan adalah udang krosok (Metapenaeus elegans) dan ikan rucah (Sardinella gibbosa). Data penelitian meliputi waktu respon dan pola tingkah laku makan E. fuscoguttatus terhadap umpan dengan lama perendaman 1, 7 dan 12 jam. Komposisi kimia masing-masing umpan dianalisis berdasarkan lama waktu perendaman. Data diuji dengan menggunakan analisis statistik t student (uji-t). Hasil penelitian menunjukkan waktu respon E. Fuscoguttatus terhadap umpan udang  krosok dan ikan rucah tidak berbeda nyata  (nilai t­­hitung 2,25). Respon makan E. fuscoguttatus dengan perbedaan waktu perendaman umpan udang krosok dan ikan rucah  selama 1 jam dan 7 jam berbeda sangat nyata (nilai t-hitung 3,85 dan 5,70). Lama waktu perendaman umpan 12 jam tidak berbeda nyata (nilai thitung 0,86). Semakin lama waktu perendaman umpan (hingga 12 jam) terjadi penurunan komposisi kimia sehingga berpengaruh pula terhadap menurunnya respon makan E. fuscoguttatus. Kata kunci: Komposisi kimia umpan, pola tingkah laku makan, ikan kerapu macan (Ephinephelus fuscoguttatus)    Fish behavior study is necessary to know the use of bait effectiveness. This research objective was to analyze response and feeding behavior of grouper (Ephinephelus fuscoguttatus) with difference of the bait chemical composition. The research was conducted by laboratory experimental method. The fish used was 200 mm total length in average. The baits used were shrimp (Metapenaeus elegans) and trash fish (Sardinella gibbosa). Data collection consist of response time and feeding behavior pattern of E. fuscoguttatus towards bait with soaking time of 1, 7, and 12 hours. Chemical composition of each baits  was analysis based on soaking time. Data was statistical analyzed using t- student test. The result showed that response time of E. fuscoguttatus to shrimp bait and fish was insignificantly difference (t-value was 2.25).  The feeding response of E. fuscoguttatus with soaking time difference of shrimp bait and trash fish during 1 and 7 hours was significantly difference (t-value was 3.85 and 5.70). The bait soaking time until 12 hours was insignificantly difference (t-value was 0.86). The longer bait soaking time (until 12 hours) would decrease the bait chemical composition that influenced to decrease feeding response of E. fuscoguttatus. Abstract

Udang mantis jenis Harpiosquilla raphidea merupakan salah satu jenis krustase hasil tangkapan  bernilai ekonomi pada beberapa daerah pesisir di Indonesia. Namun komposisi biokimia jenis ini belum banyak diketahui. Oleh karena itu, tujuan penelitian ini adalah untuk memepelajari secara kuantitatif unsure-unsur penting yang terkandung dalam daging udang mantis yang berasal dari perairan Kuala Tungkal, Jambi dan Cirebon. Hasil penelitian memperlihatkan bahwa rendemen udang mantis dari kedua lokasi tidak berbeda nyata. Selain itu, udang dari kedua lokasi juga tidak memperlihatkan kandungan mikro mineral (seng, besi dan tembaga) yang berbeda. Namun demikian, udang mantis Kuala Tungkal, Jambi memiliki kandungan natrium, kalium dan kalsium lebih tinggi dibandingkan udang mantis Cirebon. Tetapi, udang mantis Cirebon kandungan magnesiumnya lebih baik. Pemasakan dengan media asam dan dengan proses perebusan akan menghasilkan tingkat kelarutan mineral tertinggi. Kata kunci: Udang mantis, Harpiosquilla raphidea, komposisi biokimia, kelarutan mineralThe mantis shrimp, Harpiosquilla raphidea, is a valued crustacean species captured mainly in some Indonesian coastal waters. Yet, the biochemical composition of this species is still inadequately understood. For that reason, the aim of this study was to quantify the content of essential elements of specimens from the Kuala Tungkal, Jambi and Cirebon Coast. The meat yield of the shrimps collected from the two locations are not significantly different. In terms of proximate chemical composition, all chemical characters of the shrimps from Kuala Tungkal, Jambi and Cirebon are not significantly different, except the fat content. As far as the mineral composition is concerned, no differences were observed between either two locations for micro minerals (zinc, iron and copper). However, the shrimps of Kuala Tungkal, Jambi coast showed higher sodium, potassium and calcium contents than those of Cirebon coast. Yet, for magnesium the shrimp of Cirebon had higher content in comparison with that of Kuala Tungkal, Jambi. Media acid with boiling process would bring about the highest solubility of minerals. Abstract

High fat content in dark fleshed fish can affect on gel forming ability and high content of urea inelasmobranchii can arise ammonia odors in surimi product.Since surimi is an intermediate product, therefore storage of surimi in chill or frozen condition is usually performed. This experiment was carried out to study the effects of leaching, compositioning and chill storaging of stingray, mackerel and both combination surimi on the changes of physicochemical and microbiological properties. Three times leaching of minced-stingray could reduce the urea contents up to 95% and increased salt soluble protein (SSP) content 7.28%. Two times leaching of minced-mackerel could increase SSP content 8.24%. Surimi compositioning of stingray and mackerel in proportion 75%:25% gave the highest gel strength value 267.01 g cm. During 9 days chill storaging of surimi, the values of TVBN, and numbers of total microbes increased significantly. In opposite, the values of gel strength, WHC, whiteness, and SSP of surimi decreased continuously with the increasing time of chill storaging. Those indicated that physico-chemical and microbiologycal characteristics changes of surimi still occurred during 9 days of chill storaging.

Abstract

Tujuan penelitian ini adalah untuk mengetahui distribusi dan profil kandungan nutrient dan non-nutrien (mineral, asam lemak dan serat) pada sembilan jenis rumput laut dan beberapa kelas (alga hijau, coklat dan merah). Kandungan mineral didominasi oleh kalsium, potassium, dan sodium. Asam palmitic adalah asam lemak utama yang ditemukan pada semua contoh rumput laut, diikuti oleh asam stearic, asamoleic, dan asam linolenic. Konsentrasi asam eicosapentaenoic tertinggi ditemukan pada jenis alga merah Kappaphycus alvarezii (8,09%), sedangkan alga merah Sargassum polycystum mengandung asam arachidonic tertinggi (14,43%). Kisaran kandungan serat total, serat terlarut dan serat tidak terlarut pada contoh alga yang dianalisa berturut-turut adalah 14.7 - 69.3, 14.3 - 64.1 dan 0.4 - 10.7 (g/100 g berat kering). Alga merah jenis K. alvarezii memiliki kandungan serat total dan serat terlarut tertinggi, sedangkan alga yang mengandung serat tidak terlarut tertinggi adalah jenis alga hijau Ulva reticulate.Kata kunci: serat, asam lemak, Indonesia, mineral, rumput laut.

Abstract

Penelitian ini dilakukan untuk mempelajari kandungan dan profil mineral pada makanan hasil laut (seafood) yang umum dikonsumsi yaitu cumi-cumi (Loligo sp) dan udang vannamei (Litopenaeus vannamei), serta untuk mengevaluasi kelarutan Ca dan Zn yang diakibatkan proses perebusan pada berbagai larutan (air, asam asetat 0.5% dan garam 1%). Mineral makro yang ditemukan pada kedua jenis contoh cumi-cumi dan udang vannamei adalah Na, K, P, Mg dan Ca; sedangkan mineral mikro yang ditemukan adalah Zn dan I, tetapi tidak ditemukan Cu dan Fe.
