Abstract

The study were investigated antibacterial activity of liquid smoke from coconut shell and its applications of fishball at room temperature (27-28°C) and refrigeration temperature {4±1°C). The Minimum Inhibitory Concentration (MIC) of liquid smokel against Pseudomonas aeruginosa and Staphylococcus aureus were determined using broth or agar dilution methods. liquid smoke showed bactericidal effects with P. aeruginosa than S. aureus. MIC of liquid smoke was 0.40°/o against S. aureus and 0.22°/o against P. aeruginosa. Trial in fishball, showed that boiling in 2.5% liquid smoke and storage at 27-28°C and 4±1°C were inhibited the growthof total bacteria and increased shelflife 16 hours and 8 days than no treatment (based on SNI 01-3819-1995), respectively, and retarded the increased in pH and moisture content after storage. Abstract

Near infrared (NIR) spectroscopy appears as a prominent method for nondestructive fruit quality assessment. In this work, the relationship between the nondestructive NIR spectral measurements and the soluble solids content (SSC) of mango fruit was investigated. A number of 92 mango fruits (Mangifera indica var. Indramayu) were used as samples. The samples were divided into two groups, 46 samples for developing calibration model and 46 samples for performing validation. Using a portable spectrometer, spectra for each sample were acquired in absorbance mode at six different positions. The SSC of mango was measured using the digital refraktometer. The Partial Least Squares (PLS) regression was used to develop a calibration model. The NIR spectroscopy method successfully determined the sse of mango fruits with correlation coefficient between predicted and actual values (r) of 0.91, standard error of prediction (SEP) of 0. 74, and bias of 0.02. Abstract

Bunga melati putih digunakan untuk rangkaian bunga segar, bahan baku industri teh dan minyak atsiri, sertakomoditas ekspor ke Singapura. Penelitian bertujuan untuk menyusun konsep standar mutu bunga melati segar danuntuk bahan baku industri. Standar mutu bunga melati segar dan bahan baku industri sangat diperlukan sebagaipatokan dalam pengembangan agribisnis bunga melati. Mutu bunga melati segar sangat ditentukan oleh ukurankuntum bunga, warna, dan kesegaran bunga. Bunga melati asal daerah Tegal, Tangerang, Cirebon, dan Bogor untukrangkaian bunga, dan bahan ekspor diamati karakteristik fisiknya (to tal panjang bunga, di am e ter kuntum bunga,panjang kuntum bunga, dan warna). Bunga melati untuk pabrik teh juga diamati fisik dan residu pestisidanya.Standar mutu bunga melati untuk rangkaian yaitu bunga kuncup berwarna putih, segar, dan berukuran besar (di am e terkuntum 6,58±0,733 mm, panjang kuntum 11,76±1,389 mm). Standar melati untuk ekspor adalah kuncup berwarnaputih, segar, dan berukuran besar (di am e ter kuntum 6,8640±0,5858 mm, panjang kuntum 12,454±1,040 mm). Standarmutu bunga untuk pewangi teh, kuntum bunga kuncup berwarna putih, tidak ada kotoran, dan jumlah bunga tidakdapat mekar terikut maksimum 10%. Standar bunga melati untuk minyak atsiri adalah, kuncup, segar, berwarna putih,dan tanpa tangkai. Kadar residu pestisida masih di bawah ketentuan dan residu pestisida pada tehnya adalah tidak ada.Qual ity of fresh white jas mines for stan dard freshus age and in dus trial pur pose. Abstract

Penelitian ini bertujuan untuk mendapatkan rendemen minyak yang tinggi melalui ekstraksi bertahap denganmeningkatkan perbandingan bunga dan pelarut. Penelitian dikerjakan pada melati gambir (Jasminum officinale),diekstraksi dengan pelarut heksan selama 12 jam. Pelarut diuapkan untuk mendapatkan concrete. Concrete yangdiperoleh dilarutkan dengan etanol dan diuapkan sampai didapatkan minyak melati. Perlakuan yang diterapkanadalah perbandingan bunga dan pelarut (1 : 1,5 dan 1 : 2), tahapan ekstraksi (sekali, dua kali, dan tiga kali) denganpelarut heksan. Rancangan percobaan menggunakan acak lengkap pola faktorial 2 x 3 dengan tiga ulangan. Pa ram e teryang diamati adalah rendemen concrete dan minyak, jumlah penggunaan heksan, indeks bias, dan komponenpenyusun minyak. Hasil penelitian menunjukkan bahwa ekstraksi bunga melati pada perbandingan bunga dan pelarut(1 : 2) pada tahap ekstraksi dua kali menghasilkan rendemen minyak tertinggi (0,1326%), dengan penggunaan pelarutpal ing sedikit (528,2933 ml) untuk menghasilkan 1 g minyak. Mutu minyak melati yang dihasilkan mempunyai indeksbias 1,4309 dan mengandung kadar komponen penyusun minyak atsiri tertinggi (34,3357%) dengan delapankomponen sudah diidentifikasi (linalol, linalil asetat, indol, fenol, bensil asetat, metil antranilat, bensil alkohol, dan cisjasmon). Hasil penelitian ini dapat digunakan sebagai acuan untuk pemilihan proses ekstraksi bunga melati agarmenghasilkan rendemen minyak yang tinggi dengan penggunaan pelarut min i mal.Kata kunci : Jasminum officinale; Ekstraksi minyak melati; Kualitas minyak melatiAB STRACT. Hex ane perfumary grade was used on sim ple ex trac tion method by dip ping the flow ers and man ual stir ringfre quently. Af ter 12 hours of ex trac tion, sol vent was evap o rated to pro duce con crete. Eth a nol 95% was added to dis -solve the con crete, and then the so lu tion was fil tered to sep a rate wax frac tions. The clear so lu tion was evap o rated topro duce ab so lute. The treat ments tested were flower-sol vent ra tio (1 : 1.5 and 1 : 2) and stages of ex trac tion (1, 2, and 3stage of ex trac tion), and fac to rial de sign 2 x 3 with three rep li ca tions was used. Ob ser va tions were done on the yield ofcon crete and ab so lute, to tal sol vent used on ex trac tion, re frac tion in dex of ab so lute, and the com po si tion of es sen tialoil. Re sults showed that, flower-sol vent ra tio (1 : 2) and two stage of ex trac tion had the high est per cent age of ab so lute(0.1326%) and the low est to tal sol vent used (528.2933 ml to get 1 g of ab so lute). Jas mine ab so lute was in good qual itywith re frac tion in dex of 1.4309 and con tained 34.3357% of es sen tial oil com po nent (linalool, linalil ac e tate, indole,phenole, benzil ac e tate, methyl antranilate, benzil al co hol, and cis jasmone) were indentified. Futhermore, the re sult ofthis study can be used an ap pro pri ated ef fec tive method of jas mine oil ex trac tion method.

Abstract

ABSTRACTA search for the best NIR experimental condition for nondestructive soluble solids content prediction in mango fruit using near infrared spectroscopy was performed. In this study four treatments that was different in integration time and number of scanning was proposed. A number of 54 mango fruits (Mangifera indica  var. Indramayu) were used as samples. The samples were divided into two groups, 27 samples for developing calibration equation and 27 samples for performing validation. Using a portable spectrometer, spectra for each samples was acquired in diffuse reflectance mode at six positions. The SSC of mango was measured using the refraktometer. The Partial Least Squares (PLS) Regression was used to develop a calibration equation. The result showed that the best calibration equetion could be generated from the condition: integration time was 100 ms and number of scanning was 50 scans. Using this condition, the calibration equation resulted in high coefficient of determination (R2 = 0.85), low standard  error of calibration, low standard error of prediction and also low bias.
