Abstract

The quality of nal product is important aspect of product acceptability and it is affected frequently by the quality of raw materials. Pilus is a fried round-shaped snack and is made from tapioca with a mixture of spices, then fried before it is ready to be consumed as a snack or a side dish companion. Pilus has a crispy texture. Generally, major pilus industry requires the large quantities of tapioca, but is often constrained to obtain supplier that provides consistent tapioca quality. The objective of this research was to characterize tapioca starch as raw material of pilus; to determine the testing parameters that correlate to crispness of pilus; to evaluate the consistency of tapioca starch quality from suppliers. The tested quality parameters included starch, amylose, amylopectin contents, swelling power, starch pasting profile, texture analysis and sensory quality. Tapioca starch had of 77-81% of starch, 22-28% of amylose- amylopectin ratio, 2.43-6.91% of swelling power, and 8.01- 10.67 kgf of the crispness value. The relevant parameters to specify pilus crispness were amylose amylopectin ratio and peak viscosity ofstarch pasting profiles. The quality of raw materials used in pilus processing was inconsistent.

Abstract

In Indonesia, the growth of food processing industry and ready to eat food/dishes follow the growth of fast-food outlets, fast-food chains, and restaurants. The changes of food consumption pattern in Indonesian consumers is shown by the increase in consumption of processed and fast foods rich in energy, high in sugar, salt, and fat, but low in fiber. Combined with the lack of physical activities or exercise, there may be an increase in non-communicable diseases (NCD) risks. The role of all stakeholders is needed to protect consumers from NCD risks, particularly hypertension, stroke and coronary heart disease, which are partly due to excessive intake of sugar, salt, and fat. In response to this problem, the Ministry of Health has issued a regulation on the Inclusion of Information on Sugar, Salt, and Fats (SSF) Contents (# 30/2013), as well as Health Messages for Processed and Ready to Eat Food. The government has also launched the 2014 Nutrition Balance Guideline. To support its implementation, the business sector can play a significant role in the form of food product reformulation/development, consumer education about the importance of food labeling reading and understanding, as well as providing a clear nutritional information in a more appealing way as it may help consumer decision making when buying processed food products. Educational institutions in all levels can play an active role through its education program, such as course content enrichment. The synergic role between the government, businesses, and educational institutions in educating consumer effectively is essential to minimize NCD risks.

Abstract

High consumption of food consumed by school children (PJAS) that are not followed by the application of Good Manufacturing Practices (GMP) potentially lead to many food safety problems. BPOM RI tested a number of PJAS that sold at 3950 elementary schools in Indonesia on 2011-2013 to determine its condition. The result of monitoring only show percentages of complied PJAS (MS/ Memenuhi Syarat) and not complied PJAS (TMS/Tidak Memenuhi Syarat). Further analysis is required to determine the roots of PJAS safety problems and optimal strategy for sustainable improvement of its safety and quality. Data was analyzed with analysis of variance and Pareto diagram. Analysis of variance was used to determine variability between PJAS with provinces as sampling location. It also determined variability between PJAS with food safety parameters. Pareto diagram was used to identify the main problems of food safety parameters on each PJAS. This study focused on meatballs, snacks and noodle products, whereas the other of food product was done separately. According to the result of Pareto analysis, the main problems of PJAS are microbiological contaminant and chemical contaminant. Microbiological contaminant caused by poor sanitation and hygiene on production and preparation process, while chemical contaminant due to misused of hazardous chemicals in food.

Abstract

Abstract. Type 2 diabetes is a metabolic disease associated with lifestyle, including consumption behaviors. This study was conducted to examine the relationship between behaviors of consumption and lifestyle on prevalence of type 2 diabetes in Indonesia. The risk factor determined by univariate analysis. Relation between diabetes prevalence risk factors analyzed using bivariate methods. To determine main risk factors of diabetes used multivariate analysis. Scoring models developing to predict type 2 diabetes risk based on sensitivity and specificity test from major risk factors, to obtain cut off point score for respondents who predicted have diabetes risk. Analysis showed that factor of sweet beverages consumption has OR value (odds ratio) 1.25. This value means that respondents who frequently consume sweetened foods and drinks will be at diabetes risk 1.25 times, compared from not consume. Risk value of consumption food made from flour is 1.22. Diabetes risk for respondents who have moderate physical activity is 1.15 times and strenuous physical activity is 1.26 times. Diabetes risk for not consume fruits and vegetables is 1.12 times and 1.2 times from respondents who consumed. Calculations models predicted risk of type 2 diabetes determined based on the value of the score (cut-off point) ≥ 20. Keywords: Type 2 diabetes, consumption, lifestyle, risk value Abstrak. Diabetes tipe 2 merupakan penyakit metabolik yang berkaitan dengan gaya hidup (lifestyle), termasuk pola konsumsi. Penelitian ini dilakukan untuk menguji hubungan pola konsumsi dan perilaku hidup terhadap prevalensi diabetes tipe 2 di Indonesia. Faktor risiko ditentukan dengan analisis univariat. Hubungan faktor risiko terhadap prevalensi diabetes dianalisis dengan metode bivariat. Selanjutnya untuk menentukan faktor risiko utama terhadap diabetes digunakan analisis multivariat. Pengembangan model skoring untuk memprediksi risiko diabetes tipe 2 didasarkan atas uji sensitivitas dan spesifitas dari faktor risiko utama sehingga diperoleh cut off point untuk skor bagi responden yang diprediksi memiliki risiko diabetes. Hasil analisis menunjukkan bahwa faktor konsumsi makanan minuman manis, memiliki nilai OR (odds ratio) 1.25. Nilai tersebut bermakna bahwa responden yang sering mengonsumsi makanan minuman manis akan berisiko terkena diabetes 1.25 kali, dibandingkan dengan tidak mengonsumsi. Risiko diabetes untuk konsumsi pangan berbahan tepung adalah 1.22. Risiko terkena diabetes bagi responden yang tidak melakukan aktivitas fisik sedang sebesar 1.15 kali dan aktivitas fisik berat sebesar 1.26 kali. Risiko jika tidak mengonsumsi buah adalah 1.12 kali dan risiko tidak mengonsumsi sayur 1.2 kali dibanding responden yang mengonsumsi. Model perhitungan prediksi risiko terkena diabetes tipe 2 ditetapkan berdasarkan nilai nilai skor (cut off point) ≥ 20. Kata kunci: Diabetes tipe 2, konsumsi, gaya hidup, nilai risiko Aplikasi Praktis: Penelitian ini memberikan informasi mengenai pola konsumsi dan gaya hidup yang berpengaruh dalam mencegah risiko diabetes tipe 2. Data penelitian menunjukkan bahwa konsumsi buah dan sayur serta melakukan aktivitas fisik yang cukup setiap hari dapat mengurangi risiko diabetes. Abstract

Abstract. . This moment,it has not been known the role of nutrition and health claims as purchasing decision determination. Objective of the research is to study the role of nutrition and health claims on the labels of growing up milk as purchasing decision and to analyze corellation of respondent's characteristics which have influence. Study was conducted by survey, data were analyzed descriptively and statistically. Label of growing up milk for children 1-3 years old read by 70% respondent and 30% occasionally, and 23% of respondents do not read nutrition and health claims. Nutritional and health claims have a role as a determinant of purchasing decisions for consumers of 24%. As for the 76% purchase decision is influenced by other factors such as suitable with a child, nutrient content, good taste or price. The role of nutritional and health claims as a determinant of purchase decisions are influenced by factors of education, family expenses per month and expenditure for milk per month. As for the other factors that include age, occupation, number of children, place of purchase, and frequency of purchases did not affect the role of nutrition and health claims as a determinant of purchase. Keywords: Label, growing up milk, nutrition and health claims, purchasing decisions Abstrak. Saat ini belum diketahui peranan klaim gizi dan kesehatan sebagai penentu keputusan pembelian. Penelitian bertujuan mengkaji peranan klaim gizi dan kesehatan pada label produk susu pertumbuhan terhadap keputusan pembelian dan menganalisis hubungan karakteristik responden yang berpengaruh. Penelitian dilakukan dengan metode survei, data dianalisis secara deskriptif dan statistik. Sebanyak 70% responden membaca label produk susu pertumbuhan untuk anak usia 1-3 tahun dan 30% kadang-kadang, serta 23% responden tidak membaca klaim gizi dan kesehatan. Klaim gizi dan kesehatan mempunyai peranan sebagai penentu keputusan pembelian bagi konsumen yaitu sebesar 24%. Sebesar 76% keputusan pembelian dipengaruhi oleh faktor lainnya seperti cocok dengan anak, kandungan gizi, rasa yang enak ataupun harganya. Peranan klaim gizi dan kesehatan sebagai penentu keputusan pembelian dipengaruhi oleh faktor pendidikan, pengeluaran keluarga per bulan dan pengeluaran untuk susu per bulan. Faktor lain yang meliputi usia, pekerjaan, jumlah anak, lokasi pembelian, dan frekuensi pembelian tidak mempengaruhi terhadap peran klaim gizi dan kesehatan sebagai penentu pembelian. Kata kunci: Label, susu pertumbuhan, klaim gizi dan kesehatan, keputusan pembelian Aplikasi Praktis: Klaim gizi dan kesehatan pada label susu pertumbuhan untuk anak usia 1-3 tahun berperan sebagai penentu keputusan pembelian. Namun demikian belum semua responden membaca label serta klaim gizi dan kesehatan karena kurang dapat dipahami. Hasil ini dapat digunakan sebagai bahan pertimbangan bagi badan regulasi untuk mengatur klaim gizi dan kesehatan dalam bahasa yang lebih dapat dimengerti oleh masyarakat. Abstract

Limiting consumption of drinks containing high sugar can prevent diabetes especially type 2. Diabetes is one of non-communicable diseases that the number of sufferers is increasing every year. This opportunity is utilized by food industry to produce less sugar beverages. This study was aimed to analyze influence of demographic and respondent’s sugar consumption level on consumer’s perceptions, its influence on purchasing decisions and to analyze less sugar beverage product market opportunities compared with similar beverages without that claim among consumers and next generation. A survey was conducted on 150 respondents living in Jabodetabek, 20-54 years old, not a diabetic, and reading the food labels. There were 77.3% of total respondents had correct perception of less sugar correlated with sex, education, respondent's reducing sugar consumption effort and purchasing decision. People who were trying to reduce sugar had 3 times more likely to have correct perception than people who did not. People had more correct perception of less sugar (according to regulation), they increasingly choce less sugar products. The result of this survey showed that encouraging children to consume less sugar drinks was more prioritized manner to limit children’s sugar level consumption rather than replaced with sweetener.

Abstract

Consumption of processed meat is associated to cancer risk increasing. This study used secondary data from RISKESDAS 2013 with a case-control study design, is aimed to analyze the cancer prevelance in Indonesia based on food consumption patterns and lifestyles. The case population is 90 people suffering from cancer and 90 people with no cancer randomly selected as control. Respondent profiles were analyzed by univariate analysis. The relationship of cancer risk factors were analyzed by bivariate analysis and determination of risk factors using multivariate analysis. Sensitivity and specificity analyses showed the cancer vulnerable age is ≥46 years. Processed meat consumption is associated significantly (p=0.000; OR=1.25) in the cancer prevelance. Respondents frequently eat processed meat risk is predicted 1.25 times compared to those not taking. Vegetable consumption (p=0.046; OR=0.509) and fruit consumption (p=0.022; OR=0.365) related significantly to cancer. Vegetables consumption reduce the risk by 0509 times, and fruit consumption reduce the risk by 0365 times. Lifestyle risk factors (physical activity and smoking) significant (p=0.000) to cancer. Multivariate analysis results showed the age, gen- der and processed meat consumption is associated significantly (p=0.000) to cancer.

Abstract

One of the methods that can be used to determine Under Five Years Old Children’s (UFYOC) diet is 24 hours dietary recall, which furtherly processed using Nutrisurvei program to obtain the values of energy, protein, fat, carbohydrate, iron, calcium, phosphorous, also vitamin A, C, and D. Nutrition value will be compared with 2013 recommended dietary allowance and be used to determine nutritional status for each age group. Nutritional status was measured by referring to weight for age (BB/U) and upper arm circumference (LILA/U). 70 UFYOC respondents from two Posyandus in North Jakarta were involved. Selected Posyandu represented two social demography conditions. Data analysis were obtained using Chi-square correlation. The confidence level used was 95%. Regression analysis used was logistic regression. Weight for Age (BB/U) was a dependent variable, while independent variable consisted of maternal nutritional knowledge, food expenses, nutrition (energy, protein, fat, carbohydrate, iron, calcium, phosphorous, also vitamin A, C, and D), maternal education level and occupation. Finally, there was a significant relationship among nutritional status of UFYOC with maternal nutritional knowledge, food expenses, iron intake, and vitamin D intake and maternal education level. Therefore, the equation model obtained was R2 19.5%.

Abstract

Household food handling practices is important to ensure safe food consumed by family members. Consumption of safe food is needed to support optimal nutritional status. The Indonesia Food and Drug Agency (2015) data showed that foodborne illness in families i.e 40.98%. This indicates a high food safety risk in household processed food, therefore it is necessary to study and evaluate the food handling practices in family. The purpose of this study was to provide data of food handling practices, consumption pattern and family nutrition status in Kopo, Serang, Banten. The study involved 100 respon-dents (family) consisting of father, mother and two children. Data were obtained through questionnaire, surveys and physical observation of respondents. The design of this study was cross-sectional and descriptive analysis. The assessment suggested that 74% of families have been implemented good food handling practices. Percentage of good nutritional status of each family member includes father (70%), mother (83%) and children (95%). 76% respondents consume six or more groups of food sources such as carbohydrates, animal and plant proteins, fats, fruits and vegetables while some other respondents lacked of animal protein and fruit consumption.

Abstract

Edamame is a type of white soybeans from Japan but has been cultivated in Indonesia. It is commonly harvested as immature green soybeans. One of its products is edamame milk. This research is aimed to determine the optimized condition for edamame milk formula in terms of isoflavones, total phenolics, antioxidant activity and sensory characteristics (color, taste, aroma and overall) and to verify the optimized formula at optimum conditions according to the suggested result. The research was conducted in four stages. At 1st stage, pasteurization process at 72⁰C for 15 seconds was selected for edamame milk formula, based on hedonic test result. Optimization at the second step indicated that the optimum formula obtained was 1:6 ratio edamame:water and 0.20% food additive concentration for emulsifier and stabilizer. At the third stage, the verification results showed the product had matched with the prediction values: antioxidant activity at 1.61 mg ascorbic acid/100g, isoflavone content at 41.94 µg/g, total phenolics at 99.92 mg GAE/100 mL and acceptable organoleptic properties (scale 1-7) which gave color at 5.88, taste at 4.69, aroma at 5.36 overall at 5.23. At the four stage, comparison with commercial soybean milks, exhibited that edamame milk had higher content of antioxidant activity, isoflavones and total phenolics.
