Abstract

ABSTRACTThe objective of study was to assess the diet quality and its relation to nutrition knowledge, body mass index (BMI), and socio economic status (SES) among adults person. The cross sectional study was conducted with 100 adults aged ≥25 years old from Kedung Kandang sub district, Malang. Dietary quality was assessed using two non-consecutive 24-h dietary recalls and semi quantitative FFQ. Nutrition knowledge questionnaire was modified from Parmenter and Wardle. The most subjects were middle SES and the BMI were normal and overweight. The average of diet quality score was 7.14±1.96 with dietary diversity score 1.93±0.43; micronutrient adequacy score 2.3±1.4; prevention NCD score 2.87±0.92. Nutrition knowledge score was 43.3±24.6 with dietary recommendation 9.3±3.6; sources of nutrients 14±11.5; choosing foods 6.3±4.9; diet-disease relationships 13.7±8.6. Nutrition knowledge score was no correlation with BMI, dietary diversity, prevention NCD score, but positively associated with SES, quality diet, micronutrient adequacy score. SES was no associated with BMI and quality diet index. Dietary diversity score was associated with BMI. Diet quality score was associated with nutrition knowledge but no correlation with BMI and SES. The conclusion is diet quality and nutrition knowledge was still poor and not correlated with BMI and SES, but only nutrition knowledge score.Keywords: diet quality, nutrition knowledge, socio economic statusABSTRAKTujuan penelitian mengkaji kualitas diet dan hubungannya dengan pengetahuan gizi, indek massa tubuh (IMT), dan status sosial ekonomi (SSE) pada orang dewasa. Rancangan penelitian menggunakan cross sectional study pada 100 orang dewasa usia ≥25 tahun dari Kecamatan Kedung Kandang, Malang. Kualitas makanan diukur dengan 24-hour recall selama dua hari yang tidak berurutan dan semi quantitative FFQ, kuesioner pengetahuan gizi terstruktur dimodifikasi dari Parmenter dan Wardle. Umumnya subjek dengan SSE menengah dan IMT normal dan overweight. Rata-rata skor kualitas diet adalah 7.14±1.96 dengan skor dietary diversity 1.93±0.43; skor kecukupan zat gizi mikro 2.3±1.4; skor pencegahan penyakit tidak menular (PTM) 2.87±0.92. Skor pengetahuan gizi 43.3±24.6 meliputi rekomendasi makanan 9.3±3.6; sumber zat gizi 14±11.47; pemilihan makanan 6.3±4.96; hubungan diet-penyakit 13.7±8.6. Skor pengetahuan gizi tidak berhubungan dengan IMT, skor dietary diversity dan skor PTM, namun berhubungan posistif dengan SSE, total skor kualitas diet dan skor kecukupan zat gizi mikro. SSE tidak berhubungan dengan IMT dan semua aspek indek kualitas diet. IMT hanya berhubungan dengan skor dietary diversity. Sementara skor kualitas diet berhubungan dengan pengetahuan gizi namun tidak dengan IMT dan SSE. Kesimpulan adalah skor kualitas diet dan pengetahuan gizi masih rendah. Kualitas diet hanya berhubungan dengan pengetahuan gizi namun tidak dengan IMT dan SSE.Kata kunci: kualitas diet, pengetahuan gizi, status sosial ekonomi

Abstract

Susu kedelai merupakan minuman yang mempunyai kandungan protein yang hampir sama dengan susu sapi. Namun, kandungan kalsiumnya lebih rendah yaitu sekitar 50 mg/240 ml sehingga diperlukan penambahan kalsium yang salah satunya didapat dari cangkang telur ayam ras. Penelitian ini bertujuan untuk mengetahui pengaruh penambahan tepung cangkang telur ayam ras terhadap kadar kalsium, viskositas, dan mutu organoleptik susu kedelai. Jenis penelitian ini adalah penelitian eksperimental dengan rancangan penelitian berupa rancangan acak lengkap (RAL) satu faktor dengan empat perlakuan yaitu P0 (kontrol), P1 (20 % ALG), P2 (40 % ALG), dan P3 (60 % ALG). Analisis data kadar kalsium menggunakan uji one way ANOVA yang dilanjutkan dengan uji post hoc Tukey. Data nilai viskositas dan mutu organoleptik dianalisis menggunakan Kruskal Wallis. Taraf perlakuan terbaik ditentukan dengan menggunakan metode pembobotan (de Garmo). Hasil analisis statistik menggunakan one way ANOVA menunjukkan adanya peningkatan kadar kalsium (p = 0.000). Hasil uji lanjut dengan menggunakan post hoc Tukey menunjukkan antara P0 dengan P1, P2, dan P3 serta P1 dan P3 menunjukkan perbedaan yang signifikan. Hasil analisis statistik menggunakan Kruskal Wallis menunjukkan tidak ada perbedaan yang signifikan pada nilai viskositas (p = 0,059) dan penerimaan panelis terhadap variabel warna (p = 0,839), rasa (p = 0,690), dan aroma (p = 0,725). Taraf perlakuan terbaik berdasarkan metode de Garmo adalah P3 (60 % ALG) dengan nilai produk tertinggi yaitu 0,731. Kesimpulan dari penelitian ini adalah susu kedelai dengan penambahan tepung cangkang telur ayam ras mengalami peningkatan kadar kalsium dan tidak berbeda signifikan dalam viskositas dan mutu organoleptiknya. Kata kunci : Kalsium, Mutu organoleptik, Susu kedelai, Tepung cangkang telur ayam ras, Viskositas.

Abstract

Abstrak Suplemen gizi berbasis lipid dosis kecil (SQ-LNS) yang diperkaya lemak dan kandungan vitamin dan mineral dapat memenuhi kekurangan asupan dan kebutuhan zat besi dan hal ini dapat berpotensi untuk mengurangi prevalensi anemia pada anak-anak. Tujuan penelitian ini untuk mengkaji dampak pemberian SQ-LNS dan biskuit terhadap kadar hemoglobin dan mengurangi kejadian anemia. Rancangan penelitian ini non-randomized controlled trial selama enam bulan pada 168 bayi yang menerima 20 g S-LNS atau 3 keping biskuit atau tanpa intervention setiap hari.  Kadar hemoglobin diukur pada awal penelitian, 3 dan 6 bulan setelah intervensi dengan hemocue autoanalyzer. Untuk membandingkan kadar hemoglobin menggunakan uji Linear Model ANCOVA dan uji regresi logistic untuk perbedaan insiden anemia.  Pada kelompok SQ-LNS setelah 3 bulan intervensi, kadar hemoglobin meningkat secara signifikan sampai 0.73 g/dl (p<0.05), prevalence anemia menurun sampai 19.5% dan signifikan menurunkan insiden anemia sampai 100% (p<0.05).  Setelah 6 bulan intervensi, kadar hemoglobin meningkat secara signifikan sampai 0.15 g/dl, prevalensi anemia menurun sampai 5.6% dengan menurunkan insiden anemia sampai 79%.  Pada kelompok Biscuit, setelah 3 bulan dan 6 bulan intervensi, kadar hemoglobin menurun sampai 0.17 g/dl dan 0.36 g/dl dengan prevalensi anemia meningkat dari  24.2% dan 17.8%  dan juga menurunkan kejadian anemia sampai 63% dan 27%. Pemberian SQ-LNS lebih efektif meningkatkan kadar hemoglobin dan mengurangi insiden anemia pada bayi usia 6-12 bulan setelah 3 bulan intervensi dibandingkan Biskuit.Kata kunci: SQ-LNS; Biskuit; Hemoglobin; Anemia AbstractSmall-quantity lipid-based nutrient supplements (SQ-LNS) with enriching fat and vitamin and mineral can fill the gap of iron intake and requirement as well as the potential for reducing the prevalence of anemia among childhood.  The purpose of the study was to assess the impact of SQ-LNS and biscuit on hemoglobin concentrations and reducing of incidence anemia.  A 6-month non-randomized controlled trial was performed among 168 infants who received 20 g of LNS or 3 pieces biscuits or no intervention.  Hemoglobin was measured at 0, 3, 6 months of intervention using hemocue autoanalyzer. To compare hemoglobin concentration using Linear Model ANCOVA and logistic regression for the difference in the incidence of anemia.  In SQ-LNS group over three-month intervention, the adjusted mean hemoglobin concentration increased a significantly by 0.73 g/dl (p <0.05), the prevalence of anemia decreased by 19.5% and a significant reduction in the incidence of anemia by 100% (p <0.05). Over six-month intervention, the adjusted mean hemoglobin concentration only increased significantly by 0.15 g/dl, the prevalence decreased by 5.6% with a reduction in the incidence of anemia by 79%.  In Biscuit group, over 3-month and 6-month intervention, the hemoglobin concentration decreased by 0.17 g/dl and 0.36 g/dl with the prevalence of anemia was increased by 24.2% and 17.8%  as well as reducing in the incidence of anemia by 63% and 27%.  SQ-LNS was more effective in improving hemoglobin level and reducing of incidence anemia among infant 6-12 months over three-months intervention than the biscuit.Key words: SQ-LNS; biscuit; hemoglobin; anemia

Abstract

The objective of this study was to assess compliance to small-quantity lipid-based nutrient supplements (SQ-LNS) and associated factors. The community-based non randomized controlled intervention was conducted among 117 infants aged six months old in Bangkalan district and received a daily 20 g SQ-LNS (n=58) or three pieces biscuit (n=59) for six months. In SQ-LNS group, the compliance was 71.7%, 62.7%, 59.3% over one, three, and six-month intervention. The proportion of infant with compliance as recommended (7 sachets SQ-LNS per week) was 68.6%, 34.3%, 18.6%. In Biscuit group, the proportion was 96.6%, 92.8%, 91.1% and compliance as recommended (21 pieces per week) was 94.9%, 93.2%, 91.5%. Logistic regression analysis showed that low mother education (OR=3.67; 95%CI:1.14-11.74), food secure household (OR=3.87; 95%CI:1.26-11.88), high household dietary diversity (OR=3.78; 95%CI:1.20-11.89), and low social economy status (OR=3.81; 95%CI:1.16-12.56) were significantly associated with compliance of SQ-LNS as recommended. The mean of day and proportion of recommended daily serving consumed were 3.3 days and 98.8%, in SQ-LNS group; while in Biscuit group were 3.5 days and 87.2%. Mother reported that side effect of consuming SQ-LNS and biscuit were children felt bored (60.3%, 13.6%), vomiting (43.1%, 18.6%), suffering diarrhea (15.5%, 1.7%), respectively. The reason of irregular provision of SQ-LNS and biscuit were vomiting at the early consumption period response, boring, and did not like the smell/taste of SQ-LNS or biscuit. Mother perceived that the benefit of SQ-LNS and biscuit was increase body immunity, weight gain, appetite, and child become more active.
