Abstract

The objective of the experiment was to evaluate the effect of lactation stages on the quality and flavor of 2 months ripened cheese. The experiment was conducted from December 2009 until April 2010. Five goats were used as samples. Milk were collected at 7 days and 30 days post kidding. Cheeses were coagulated using rennet which produced by extracting dried abomasum of 10 days old goat kid. Fresh cheeses were analyzed for its quality and kept for 2 months. After 2 month, ripened cheeses were analyzed for its quality and flavor. Parameters observed were cheese’s physical quality (cheese yield and tenderness), chemical quality (pH, protein, fat, moisture, ash, calcium) and flavor (for ripened cheeses). Cheese yield, tenderness, pH, protein, fat, moisture, ash, and calcium composition were analyzed using Repeated Measurement of General Linear Model and flavor quality was analyzed using Mann-Whitney Test. The result showed that lactation stages (7 and 30 days post kidding) did not significantly affect cheese yield, pH, protein, fat, and calcium but it had an effect on tenderness, moisture, and ash. Ripening significantly affected flavor such as salty, sour, bitter, and rancidity but not the sweet taste. Ripening was also affected pH and fat composition but moisture, ash, protein, calcium, and tenderness were not affected. It can be concluded that 2 stages of lactation did not significantly affect overall cheese quality, but it was suggested to choose milk from days 30 after partum as cheese raw material since cheeses from days 7 milk have a flavor defect (bitter) and this kind of milk is still needed by the kids ofthe goat.(Key words: Kaligesing race goat’s milk, Cheese quality, Cheese ripening, Cheese flavor, Stage of lactation)

Abstract

This experiment was aimed to evaluate the effect of katu leaves as feed supplement on milk production and milk composition of Ettawa Crossbred goat during early lactation. The experiment was conducted in the village of Kemirikebo, Girikerto, Turi, Sleman started from June, 27 until August, 27 2009. The experiment used 8 pregnant goats weighing 36 to 55 kg. The goats were divided into 2 treatments, those were control and treatment groups. The goats incontrol group received basal feed as much as 10% dry matter of body weight, consisted of calliandra and concentrates with a ratio of 9 to 1 respectively. The treated goats were fed with the same basal feed as those in the control group andsupplemented with katu leaves at 0,06% of bodyweight. The examination was conducted to collect data on feed intake, milk production, composition of colostrum and milk. Data were statistically analyzed with T-test. The result showed that katu leaves supplementation as much as 0,06% of body weight was able to increase protein level of colostrum significantly but had no significant effect on feed intake, milk production, and milk composition.(Key words: Ettawa Crossbred goat, Katu leaves, Milk production and composition)

Abstract

Penelitian ini dilaksanakan untuk menguji kapasitas dan stabilitas beberapa adsorben alami dalam mengikat aflatoksin B1 (AFB1) dengan metode in vitro yang melibatkan kondisi di dalam rumen. Percobaan in vitro dilakukan dengan menggunakan 3 macam adsorben alam (bentonit, zeolit dan karbon aktif) dan satu adsorben produk komersial (CAA). Pengujian dilakukan pada 3 macam medium in vitro (aquades steril, cairan rumen dan cairan rumen steril) dan 2 rasio AFB1:adsorben (1:1000 dan 1:10.000 yang setara dengan 1000 mg AFB1-contaminated feed:1 mg adsorben dan 100 mg AFB1-contaminated feed:1 mg adsorben). Inkubasi dilakukan selama 2 jam dengan penggojokan 70 rpm pada suhu 38,5oC menggunakan shaking incubator. Medium kemudian disentrifugasi selama 15 menit pada 3500 g. Supernatan diambil untuk dianalisis kadar AFB1 yang tidak terikat oleh adsorben, sehingga persentase AFB1 terikat dapat dihitung sebagai peubah kapasitas pengikatan. Presipitat selanjutnya diresuspensi dan diinkubasi kembali. Supernatan yang diperoleh setelah sentrifugasi 3500 g selama 15 menit dianalisis kandungan AFB1-nya untuk mendapatkan persentase AFB1 yang terlepas dari ikatan dengan adsorben untuk mendapatkan data stabilitas pengikatan. Data dianalisis variansi dengan prosedur general linear model rancangan acak lengkap pola faktorial menggunakan SPSS versi 17.0. Hasil memperlihatkan bahwa bentonit memiliki kapasitas pengikatan AFB1 tertinggi (77,54%) dengan medium aquades. Stabilitas pengikatan tertinggi ditunjukkan oleh CAA (99,78%) yang tidak berbeda dengan stabilitas bentonit (99,38%). Pengikatan AFB1 secara nyata (P<0,05) dipengaruhi oleh pH medium dengan kapasitas tertinggi diperoleh pada pH medium kurang dari 5,0. Berdasarkan peubah kapasitas dan stabilitas pengikatan serta pH optimum pengikatan dapat disimpulkan bahwa bentonit merupakan adsorben alami yang paling potensial untuk dipergunakan pada ternak ruminansia.(Kata kunci: Adsorben aflatoksin, Metode in vitro rumen)

Abstract

Penelitian ini bertujuan untuk menganalisis dinamika pengembangan klaster industri persusuan di Kabupaten Semarang Provinsi Jawa Tengah. Dinamika pengembangan klaster industri persusuan dianalisis melalui kekuatankekuatan yang ada pada setiap elemen-elemen klaster, yaitu pemasok bahan baku susu, industri inti, industri terkait, industri pendukung, pembeli, dan lembaga pendukung. Responden yang digunakan dalam penelitian ini adalah pihakpihak yang terkait (stakeholders) dalam klaster industri persusuan di Kabupaten Semarang, terdiri dari peternak sapi perah, koperasi susu, Industri Pengolahan Susu, industri terkait, dan lembaga pendukung. Alat bantu yang digunakan adalah kuesioner. Penelitian ini menggunakan metode survei dengan menggunakan data primer dan sekunder. Analisis data yang digunakan adalah analisis deskriptif. Hasil dari penelitian menunjukkan bahwa pada tingkat pemasok, rata-rata kepemilikan ternak sebanyak 6,58 ekor, rata-rata produksi susu sebesar 8,30±2,54 l/ekor/hari, dan rata-rata tingkat adopsi sebesar 57,57%. Produksi susu di tingkat koperasi sebesar 77.300 kg/hari. Rata-rata kualitas susu adalah 6,78 (pH), 11,23% (total solid), 3,55% (lemak), 7,68% (SNF), 2,68% (protein), dan 4,45% (laktosa). Kuota pembelian dari industri pengolahan susu yaitu 212.000 kg/hari. Bank sebagai industri pendukung telah memberikan pinjaman modal pada pengusaha persusuan sebesar Rp24.892.000.000,00. Institusi pendukung telah melakukan peran masing-masing.(Kata kunci: Dinamika, Klaster, Industri persusuan)

Abstract

Mare?s milk has good nutrient composition for human being in the form of natural milk or milk products. It can be used to replace cow?s milk, especially in the regions outside of Java Island which are rarely found dairy cow. This study had an objective to develop fermented mare?s milk by using mixed cultures of probiotic bacteria i.e. Lactobacillus acidophilus (A), Bifidobacterium longum (B), and Lactobacillus casei (C). The cultures of two probiotic bacteria AB and BC had been developed as well as three probiotic bacteria ABC culture. The mixed cultures (AB, BC and ABC) were prepared in single culture then cultivated in mixed culture as total 10% v/v of mare?s milk used and was incubated at 39°C for 9 h. The pH, acidity and bacterial count, each of them was analyzed in every 3 h of incubation time, while the organic acid and sensory tests were conducted at the end of 9 h of incubation. The results showed that the growth of mixed probiotic bacteria culture BC and ABC had better pH value that was around 3 compared with AB around 4.5. This showed that the cooperation between bacteria was different in each different combinations. The number of bacteria also increased sharply between 3-6 h of incubation time and 6-9 incubation time (AB and BC) along with the increased lactic acid, but the acetic acid decreased from 1750 mg/L to 1500 mg/L. The result of sensory test showed low acceptability of trained panelists. It is concluded that mixed cultures, using two or three probiotic bacteria (L. acidophilus, B. longum, and L. casei) could grow in mare?s milk. The change of the biochemical patterns indicated a commensalism cooperation among bacteria used. It was therefore the fermented mare?s milk using these probiotic bacteria were not well accepted by entrained panelists.
