Abstract

Penelitian mengenai analisis bahaya dan penentuan titik pengendalian kritis pada penanganan tuna segar utuh telah dilakukan selama 1 bulan dari bulan Juni hingga Juli 2012 di PT. Bali Ocean Anugrah Linger Indonesia Benoa-Bali. Penelitian ini bertujuan mengevaluasi penerapan HACCP (Hazard Analysis Critical Control Point) dalam mengidentifikasi dan mencegah potensi bahaya pada penanganan tuna segar utuh di PT. B.A.L.I . Penelitian menggunakan metode survey, dengan mengikuti secara langsung seluruh alur proses penanganan tuna segar utuh mulai dari penerimaan bahan baku sampai pengangkutan. Metode analisa data yang digunakan adalah metode analisa deskriptif. Hasil penelitian menunjukkan bahwa proses penanganan tuna segar utuh di PT. B.A.L.I telah menerapkan sistem HACCP dengan baik, hal ini terlihat dari tahapan proses penanganan telah sesuai dengan GMP (Good Manufacturing Practice) dan SSOP (Sanitasion Standar Operating Procedure) . Berdasarkan hasil identifikasi, tidak ditemukan adanya titik pengendalian kritis (CCP)  pada tahapan alur proses penanganan tuna segar utuh.

Abstract

Tea Shoot roller (Cydia leucostoma Meyrick) is one potential pests that attack tea shoot, mainly on the new tea shoot after prunning, it caused plant growth becomes stunted. One of control that can be done is by application of insecticides. To determine the effectiveness of insecticide Acetamiprid, the trial has been conducted at Block A7, Gambung field trial, Kabupaten Bandung, during ± 3 months, from October up to December 2016. The trial was designed in Randomized Complete Block Design (RCBD) with five treatments and four replications. The treatment tested covered insecticide Asetamiprid 30% at 1; 0.75; 0.50; 0.25 l/ha and control. The insecticide was sprayed six times using knapsack sprayer one day after plucking, with one week interval. Tea shoot roller attack intensity was observed weekly at the time of plucking. Shoot production, phytotoxicity, as well as rainfall were also observed as a supporting data. The results showed that after three times of spraying, insecticide Asetamiprid 30% at all formulation doses tested could effectively suppress the attack intensity of tea shoot roller. The last observation result, after six times spraying, revealed that the average efficacy level relatively high, i.e. 73,24%. Therefore, for controlling tea shoot roller on tea it could be recommended the use of insecticide Asetamiprid 30%.

Abstract

Theaflavin (TF) is a product of catechin oxidation that give contribution to golden yellow color, brightness, briskness of black tea and has a potential as natural antioxidant activity. TF has a higher superoxide radical capture rate than EGCG (Epigallocatechin gallate). The study was to synthesize TF components in the form of extracts that have high antioxidants. Materials used in this research is bud+3 leaves from RITC clone (GMB 7). The research were caried out used 15 liters of tea leaves pulp per treatment, fermentation using fermentor with 15 L/min, 20 L/min and 25 L/min airflow treatment, separation of TF from thearubigin (TR) used 2.5% NaHCO3, and isolation of TF from impurity compounds used silica gel column with ethyl acetate/hexane as eluent, and DPPH (1,1-diphenyl-2-picryl hydrazyl) for antioxidant activity. The result showed that TF synthesis of fresh tea leaf catechin at water-air rate of 25 liters/minute could produced TF extract and yield TF purity extract with 1.01% and 39.15% in dry weight respectively after isolation by silica gel column. Antioxidant activity by DPPH from TF extract showed the smallest value of EC50 is 12.16 mg/L at 150 mg dose and its activity increased with the addition of concentration of TF extract.

Abstract

Size reduction could affect the physical properties of green tea powder. The aim of this study was to determine the physical properties of green tea powder processed by different milling methods. A disc mill (DM) with single screw made from stainless steel and a stone mill (SM) made from granite stone were used to produce green tea powder. Water holding capacity, water solubility index, swelling capacity, wettability, extraction yield, dispersibility and dispersion stability, and particle size distribution were analyzed to determine the physical properties of green tea powder. The morphology and shape of green tea powder were also observed using scanning electron microscopy. The DM method produced green tea powder with higher values of water absorption index, swelling capacity and water holding capacity, i.e. 4.57 g/g; 5.17 mL/g; and 6.18 g/g respectively. Green tea powder with SM method had a brighter color with L value of 60.1 and was a fine powder with d50 of 1.4 µm. Based on the above physical properties, green tea powder with SM milling method is more suitable as food products.

Abstract

European markets have implemented the Commission Regulation (EU) Number 1146/2014 of 23 October 2014 of the MRL for Anthraquinone (9,10-AQ) is 0.02 ppm. After this implementation for 9,10-AQ for tea in the European market, there has been a decreased by 33.6% in Indonesian tea exports. This paper will explain the preliminary study results of 9,10-AQ in Indonesian tea that consist of (1) the results of 9.10- AQ content of Indonesian tea samples, (2) 9,10-AQ content on fresh tea shoot and in each stage of tea processing, (3) the content of 9.10-AQ in tea liquor, and (4) results of antioxidant activity analysis of Indonesian tea  in free radical scavenging by DPPH analysis (1,1-diphenyl-2-picrylhidrazyl).  Samples selection  selected from West Java and East Java as center of tea producing province in Indonesia with incidence of high 9,10-AQ levels in tea. The results show that the 9,10-AQ content depend on drying system technologies.  The data conclude that 9,10-AQ level increase due to withering process by 0.004 ppm and in drying process it increase higher (0.007 ppm).  The data of 9,10-AQ level of tea liquor are all below the MRL, therefore brewed tea is safe for health.  Antioxidant activity of Indonesian tea with 9,10-AQ level above the MRL (0.043 ppm) is very strong  that very potential to reduce the negative effects of tea contaminants by free radicals scavenging.
