Abstract

KAJIAN STRATEGI PENINGKATAN KUALITAS PRODUK INDUSTRI SAYURAN SEGAR (STUDI KASUS DI SEBUAH AGROINDUSTRI SAYURAN SEGAR) [Strategy on Product Quality Improvement of  Fresh Vegetables Agroindustry: Case Study in a Fresh Vegetables Agroindustry at Bogor] Marimin 1) , dan Heti Muspitawati 1)  1) Jurusan Teknologi Industri Pertanian,  Fakultas Teknologi Pertanian, IPB   E-mail: marimin@indo.net.id ABSTRACT                   This paper discusses strategy formulation for improving the quality of fresh vegetables agroindustry.  The quality improvement strategy was formulated based on the customer expectation, key attribute process control and the comparison of internal-external factors evaluation.  The customer expectations were translated using Quality Function Deployment (QFD) and pairwise comparison. Process control was used to see wheather the key process attribute (temperature for packaging room and warehouse) in capable range. The improvement strategies were formulated using SWOT analysis. The formulated strategies suggested be operated by the fresh vegetables agroindustry are fullfiling customer expectation through improvement of material handling process, packaging, warehouse and food safety assurance especially free from peptiside residue. The company should do market research to recognize the change of customer expectation and HACCP (Hazard Analysis Critical Control Point) implementation to support more operational strategy formulation.   Key words : Agroindustry, Quality function deployment, Process control, Strategy  formulation,  and Fresh vegetables

Al-Kamal (Mahasiswa S-2 PPS TIP-IPB) 2) Teknologi Industri Pertanian, PPS IPB ABSTRACT  In the product design and development processes, Quality Function Deployment (QFD) provides a comprehensive, systematic approach to ensure that the products meet or exceed customer expectations. This paper reports the results of vegetables customers survey in Jakarta. Analytical Hierarchy Process (AHP) method was used for weighing the result of survey, and the customer expectation were translated using QFD. To meet the biggest customer expectation, i.e. vegetables freshness, Just In Time (JIT) concept was utilized.Key words:  Agribusiness, deployment, customer, satisfication and vegetables.

Abstract

Sistem Pakar Penentuan Metode Statistika pada Peubah Tunggal dikembangkan untuk membantu pengguna dalam menentukan metode statistika yang sesuai untuk diterapkan dalam penelitiannya. Aspek keahlian dalam ilmu statistika menjadi alasan utama dipilihnya pengembangan sistem pakar dibandingkan dengan pengembangan perangkat lunak biasa. Adapun tahapan-tahapan yang dilakukan meliputi analisis dan identifikasi faktor-faktor yang mendasari pemilihan metode statistika, merancang model penentuan metode statistika dari faktor-faktor yang didapat, dan mengimplementasikan model penentuan tersebut menjadi Sistem Pakar Penentuan Metode Statistika. Dari segi substansi ilmu statistika, penelitian ini hanya dibatasi pada analisis data univariate saja. Dalam pengembangan sistem pakar ini, basis pengetahuan yang diperoleh dari tahap akuisisi pengetahuan direpresentasikan dengan metode kaidah produksi biasa (simple rule-based Method). Mekanisme inferensinya dibuat dengan strategi penalaran pasti (Exact Reasoning Mechanism) yang dikendalikan strategi pengendalian forward chaining dengan menetapkan nilai default sebagai solusi dari setiap kondisi. Adapun teknik penelusuran yang digunakan untuk mendukung implementasi dari strategi pengendalian tersebut adalah teknik penelusuran horizontal atau yang lebih dikenal dengan breadth-first search. Kata kunci: Sistem pakar, metode statistika, representasi pengetahuan, kaidah produksi, dan strategi penalaran pasti (Exact Reasoning Mechanism).

Abstract

Penelitian ini mendiskusikan mekanisme pendiagnosaan penyakit ayam yang dikembangkan dan diimplementasikan dalam suatu sistem pakar. Sistem pakar ini dinamakan Sistem Pakar Diagnosa Penyakit Pada Ayam (SPDPPA). Jenis penyakit yang dapat didiagnosa SPDPPA, yaitu Avian Influenza (AI), Newcastle Disease (ND) dan Infectious Laryngotracheitis (ILT). SPDPPA menggunakan fuzzy inference system (FIS) untuk memproses gejala klinis berupa data fuzzy, sedangkan gejala data non-fuzzy diproses dengan kaidah produksi atau aturan if–then. Keluaran dari SPDPPA adalah hasil identifikasi bahwa ayam terserang penyakit dengan tingkat kepercayaan tertentu. Berdasar verifikasi, hasil pengujian menunjukkan bahwa ayam yang terdiagnosa sementara mendukung ND, warna pialnya merah dengan suhu tubuh 430C–450C dan angka kematian 30 sampai 50 persen. Adapun untuk mendapatkan diagnosa sementara sangat mendukung ND, warna pialnya merah dengan suhu 430C–450C dan tingkat kematian 30–60 persen. Gejala non-fuzzy yang bersifat khas bagi penyakit ND adalah eksudat yang kental bening, kepala ayam yang berputar dan tinja yang berwarna hijau. Ayam yang terdiagnosa mendukung AI warna pialnya semakin memucat dengan suhu dan angka mati seperti pada penyakit ND. Di sisi lain, untuk mendiagnosa AI dengan tingkat sangat mendukung, kondisi warna pial sudah semakin membiru. Eksudat yang encer bening, perdarahan bawah kulit merupakan gejala non-fuzzy yang khas terlihat ketika ayam terkena Avian Influenza (AI). Pada pemeriksaan di lapangan baik gejala fuzzy maupun non-fuzzy dilakukan secara bersama-sama.

Abstract

The objective of this work was to investigate and to apply economic efficiency performance measurement methods for tea beverage agroindustry. These measurements were based on twelve technique and economic efficiency criteria, which illustrate the condition of the processes. This illustration was able to explain the material and the energy utilization, variance of the processes and product, handling of the waste and acceptance in the market. The methodology was divided into three steps: (1) defining the technique and the economic criteria, appropriate to the circumstance of the processes, (2) state efficiency the level status, (3) evaluation and structure prioritizing of the processes improvement alternatives. The results of this work indicates that there are seven appropriate criteria. The status of the efficiency is in the medium level. The improvement priorities recommended include optimization of material and energy usage and minimization of breaktime of the critical processes.

Abstract

Many theories highlighted the critical importance of knowledge creation on the long-term success of the organization. However, the scarcity of empirical work on knowledge creation model has limited our understanding of the overall organizational process involved. To overcome this, we attempt a comprehensive analyze of knowledge creation model within the organization, exploring the relationship between innovation, knowledge creation model, problem-solving capability, absorptive capacity, knowledge acquisition and assets. Data of this case study were taken from three dairy cooperations in Java. Analysis was conducted using Structural Equation Modeling (SEM) with Lisrel 8.72. The results revealed that several contributing factors (problem-solving capability, absorptive capacity, knowledge acquisition and assets) had significant effect on innovation. On the other hand, knowledge creation model had no significant effect on innovation in the context of the dairy cooperation in Indonesia. The implication for managers is that by focusing on externalization process in knowledge creation model within the organization. In the pattern of innovations, product innovation is the most important. Key words: innovation, knowledge creation, problem-solving capability, absorptive capacity, dairy cooperation

Abstract

Abstrak. Waktu menunggu rata-rata petikemas untuk pemeriksaan dan pengurusan dokumen-dokumen yang dibutuhkan di lapangan penumpukan terminal terutama untuk barang import yang juga disebut dwell time (DT) di Jakarta Indonesia akhir-akhir ini menjadi isu nasional. Hal ini disebabkan masih tingginya waktu endap yang secara rata-rata masih berkisar 6 hari atau lebih, berakibat meningkatnya biaya pengiriman barang dan juga akan mempengaruhi tingkat kepadatan lapangan penumpukan petikemas/Yard Occupancy Ratio (YOR) dan menimbulkan kongesti sehingga kinerja operasional pelabuhan akan menurun. Tujuan penelitian ini adalah untuk : 1. menjelaskan kondisi eksisting hubungan DT dan YOR di PT. Jakarta International Container Terminal sebagai terminal petikemas terbesar di Indonesia dengan menggunakan data sekunder dari tahun 2011 sampai dengan tahun 2015; 2. menyusun prakiraan perkembangan kinerja DT dan YOR yang akan datang dengan menggunakan analisis forecasting data time series dengan error paling kecil dan 3. memperoleh alternatif strategi dan solusi untuk mengatasi DT dengan teknik Analytical Hierarchy Process (AHP) yang menggunakan pendapat 7 pakar (expert) yang mewakili para pemangku kepentingan. Hasil korelasi antara DT dan YOR menunjukkan bahwa terdapat hubungan positif yang signifikan, sedangkan prakiraan menunjukkan bahwa dwell time cenderung turun dan YOR juga akan cenderung turun. Hasil analisis AHP menunjukkan bahwa strategi yang menjadi prioritas utama adalah perancangan model early warning system (EWS)/sistem peringatan dini lingkup antar lembaga yang dimaksudkan untuk mengantisipasi apabila terjadi lonjakan YOR para pihak dapat melakukan secara bersama-sama dengan cepat dan terkoordinasi dan alternatif solusi mengatasi DT dikarenakan aktifitas di terminal petikemas didominasi variabel waktu dalam pengurusan dokumen maka dapat dilakukan dengan memperbanyak barang yang lewat tanpa pemerikasaan dilihat dari rekam jejak para pemiliknya yaitu dapat dipercaya.Kata Kunci: waktu endap, tingkat kepadatan lapangan penumpukan, prakiraan, AHP, sistem peringatan diniAbstract. The average waiting time of containers for inspecting and handling documents required in the container yards of terminals, especially for imported goods, known as DT (dwell time), in Jakarta, Indonesia, lately becomes a national issue. This is due to the high settling time, which on average is still around 6 days or more, resulting in increased shipping cost and affecting the density of container yards/YOR (Yard Occupancy Ratio) and causing congestions that decrease the port operational performance. The purposes of this study were to: 1. Explain the existing condition of the relation between DT and YOR in PT. Jakarta International Container Terminal which is the largest container terminal in Indonesia, by using secondary data from 2011 to 2015; 2. Predict the growth of the future performances of DT and YOR using time series with the smallest error and to obtain alternative strategies and solutions to handle DT using AHP (Analytical Hierarchy Process) which uses opinions of 7 experts who represent stakeholders. The correlation between DT and YOR showed that there was a significant positive relation, while estimation indicated that the dwell time tended to decline and so did YOR. The results of AHP analysis showed that the prioritized strategy was designing EWS (Early Warning System) model between agencies to anticipate surge of YOR so that the parties could work together rapidly and in a coordinated manner. Alternative solutions to solve DT because activities in the container terminal are dominated by the time variable in terms of documents handling was multiplying goods which passed through without examination based on track records of trustworthy owners.Keywords: dwell time, yard occupancy ratio, predict, analytical hierarchy process, early warning system

Abstract

ABSTRACTDesigning and managing Industrial capture fisheries Supply Chain is complex and its faces socially bound uncertainties such as poor collaboration, communication and information sharing. Such complexity cannot be reduced through quantitative supply chain design and management techniques.  The aim of this study was design an industrial capture fisheries supply chain in Maluku Province using Soft System Methodology. Multi Dimensional Scaling (MDS)and SCOR was applied in analyzing situational conditions related to the sustainability and performance of industrial capture fisheries. Analysis on capture fisheries shows in less sustainable category (43.91)and  the performance of both fishermen and company indicate an excellent and good grade. SSM analysis generated root definitions: Ministry of Marine Fisheries, Department of Marine, regional institution and stakeholder of the supply chain (O) realize the sustainable fishing industry and implementation of reliable activities in the fisheries sector and competitive globally (W) which integrates all the units along supply chain and coordinate the flow of materials, information and finance ranging from such aspects : production, downstream industries (handling and processing), up to marketing (T) of the Fishermen, industries processing (C) on the entire supply chain through  effective and efficient mechanism (E) as well as coordination both center and regional institution (A) related to quality and standardization of fishery products, distribution, infrastructure, data and information on fisheries (T)". The supply chain management of sustainable fishing industry model was developed by 20 activties. Penelitian ini bertujuan mendisain model manajemen rantai pasok industri perikanan tangkap yang ideal di Propinsi Maluku. Soft System Methodology (SSM) digunakan sebagai pendekatan kajian yang didukung oleh Multi Dimensional Scalling (MDS) untuk mengukur keberlanjutan industri perikanan tangkap dan Supply Chain Operation Reference(SCOR) untuk menganalisis kinerja industri perikanan tangkap.  Hasil penelitian menunjukkan bahwa keberlanjutan industri perikanan tangkap berada pada kategori kurang berkelanjutan dan kinerjanelayan dan perusahaan berada pada kategori sangat baik dan baik. Analisis SSM menghasilkan root definition “Kementerian Kelautan Perikanan, Dinas Kelautan, PEMDA dan pelaku rantai pasok (O) mewujudkan industri perikanan tangkap yang berkelanjutan dan terselenggaranya aktivitas  di sektor perikanan yang andal dan mempunyai daya saing secara global (W) yang mengintegrasikan  semua unit dalam rantai pasok dan mengkoordinasikan  aliran material, informasi dan keuangan mulai dari aspek produksi, industri hilir (handling dan processing), hingga ke pemasaran (T) dari para Nelayan, industri-industri pengolah (C) pada seluruh rantai pasok  melalui mekanisme yang efektif dan efisien (E) serta koordinasi kelembagaan pusat dan daerah (A) terkait mutu dan standardisasi produk perikanan, distribusi, sarana prasarana, infrasrtuktur serta data dan informasi perikanan (T)”. Model manajemen rantai pasok industri perikanan tangkap di Propinsi Maluku dibangun atas 20 aktivitas.
