Abstract

ABSTRACTThe purpose of this research was to find out acceptance and preference of households and catering to non-branded cooking oil fortified with carotene from Red Palm Oil (RPO). The subjects in this study was 30 people respectively for each households and catering. Data was collected through interviews and discussions using questionnaires. Data of subjects acceptance and preference were analyzed using descriptive statistics and Friedman test. Average cooking oil used by household subjects was 0.185+0.070 kg/day and catering was 3.87+2.46 kg/day. Most households (73.3%) and catering (66.7%) could not accept cooking oil fortified with carotene from RPO due to its colour and aroma. Fortified cooking oil had orange colour and rotten aroma (of odor). More than half of households (66.7%) and catering (63.3%) could not accept the fried product using fortified cooking oil because of its yellow colour. Abstract

Diabetes mellitus is degeneratif disease with high prevalence that happens in many countries. Several studies had been done to control diabetes by using green tea, mullberry leaf  tea, and their mixture. The aim of this research was to analyze the influence of the administration green tea, mullbery leaf tea, and their mixtures to blood glucose level of diabetic rats both during 120 minutes after administration. This research had four phases, first to determine the best mullberry leaf tea, second to fourth phases respectively, determine turnover of blood glucose level on normal rats; attempt during 120 minutes on diabetic rats.  The result of research during 120 minutes have showed that blood glucose level on diabetic rats which were administered by green tea, mullberry leaf tea and their mixture is significantly difference with diabetic rats which were administered by water. Blood glucose level at baseline increased at 30th minutes and showed the difference significantly and then until 60th and 120th minutes and relatively stable. During 120 minutes after feed consumption, inhibition of blood glucose level occured increasingly on diabetic rats which were administered by green tea, mullberry leaf tea, and their mixture compared to diabetic rats which were administered by water. Abstract

The aims of this research were to study perception, consumption and preferences of energy drink and also to analyze relationship between content of energy and caffeine in energy drink. This research used cross sectional study design and conducted in Solo (Terminal Tirtonadi, Terminal Kartasuro and Palur). The respondent (36 persons) was chosen by convenience sampling. Method used to analyze energy content was bomb calorimeter, while caffeine obstetrical analysis used spectrophotometer. The respondent consumed Extra Joss (44.4%), Hemaviton Jreng (19.4%), Kuku Bima Energy (13.9%), Kratingdaeng (8.3%), M-150 (5.6%), Hemaviton Energy drink (5.6%) and the rest Fit Up tablet. Abstract

Recently, many foods were identified contain high antioxidant substances such as tomatoes and rice bran. The objectives of this research were to observe their total antioxidant activity values and the effect of intervention of high-antioxidant beverages (tomato juice and rice bran beverage) to total antioxidant activity on breast cyst women patient’s blood serum. Subject consumed each of the beverages for 14 days. Blood samples were taken before the intervention, at the end of tomato juice intervention period and at the end of rice bran beverage intervention period. Total antioxidant activity on serum was determined by DPPH method. The ascorbic acid equivalent antioxidant capacity (AEAC) of rice bran greater than tomato juice is 28.74 mg/100g and 1.87 mg/100g respectively. Abstract

Food habit strongly predicts individual nutritional status. It is largely influenced by family food habit and family socioeconomic, partly by nutrition education learning in the school.  Objectives of this study were to analyze elementary school children eating habit and examine whether it relates to family socioeconomic and nutritional status. One hundred elementary school children, and their mother, from one school in urban Bogor were chosen purposively according to SIBERMAS Program criteria (i.e. grade 4th and 5th, morning school, having UKS program and not having canteen). Self administered, structured pre-coded questionnaire were used to collect the data. Nutritional status was assessed using weight and height, and body mass index for age (BAZ) and height for age (HAZ) were then calculated using AnthroPlus software developed by WHO (2009). School children were 8-11 years old (mean 9.37 + 0.66 years), more girls (54%), and mostly had normal nutritional status using both indexes (72% for BAZ and 95% for HAZ). School children were commonly from middle class as indicated by father education (sarjana) and mother (senior high school).  Almost all school children (99%) knew breakfast was important and 81% of them ate breakfast. Only 32% school children brought lunch box everyday although 92% stated their habit to bring lunch box to school. Buying snack in school was also common among school children. Generally school children ate rice 3 times a day (2.95 + 0.97) with fish, meat, chicken (2.47 + 1.14), tempe and tofu (2.22 + 1.10), vegetables (2.25 + 0.76) and fruits (2.37 + 1.31). There was a tendency overweight and obese school children eat more rice although statistically not significant.  On average, school children drank milk more than twice daily (2.34 + 0.98), plain water more than 7 glasses daily (7.34 + 4.10), exercise 3 times weekly (3.02 + 2.16) and no difference were observed between nutritional status and family socioeconomics. School children food habit were strongly supported by mother behavior especially in providing breakfast, lunch box and guiding their children in choosing snack food. School children from middle class in urban Bogor had relatively good food habits which were supported by mother behavior. This study found no relationship between family socioeconomic and nutritional status on school children food habit. Key words: food habit, nutritional status, elementary school children.

Abstract

ABSTRACTThe objective of this study was to analyze the association of fiber consumption with nutritional status and blood lipid profile in dyslipidemic adults. The design study was cross sectional survey involving 79 subjects. The results showed that there were significant correlations between energy intake with High Density Lipoprotein (HDL) cholesterol and total cholesterol, fat intake with BMI (Body Mass Index), and BMI with Low Density Lipoprotein (LDL) cholesterol and total cholesterol (p<0.05). There was no significant correlation between consumption of fiber with nutritional status and blood lipid profile (p>0.05). In conclusion, most of the dyslipidemia subjects were obese. Dyslipidemia subjects should keep their intake of energy and fat in recommended ranges in order not to be obese and keep the BMI in normal range to avoid abnormalities of blood lipid profile.Keywords: blood lipid profile, dyslipidemia, fiber intake, nutritional statusABSTRAKPenelitian ini bertujuan untuk menganalisis hubungan asupan serat dengan status gizi dan profil lipid darah pada orang dewasa dislipidemia. Desain penelitian ini adalah survei potong lintang dengan subjek penelitian sebanyak 79 subjek. Hasil penelitian menunjukkan bahwa terdapat hubungan yang signifikan antara asupan energi dengan kolesterol High Density Lipoprotein (HDL) dan kolesterol total, asupan lemak dengan IMT (Indeks Massa Tubuh), dan IMT dengan kolesterol Low Density Lipoprotein (LDL) dan kolesterol total (p<0.05). Tidak terdapat hubungan yang signifikan antara asupan serat dengan status gizi dan profil lipid darah (p>0.05). Disimpulkan bahwa sebagian besar subjek yang obes mengalami dislipidemia. Subjek penderita dislipidemia sebaiknya menjaga asupan energi dan lemak agar tidak mengalami kegemukan dan menjaga batas IMT normal untuk menghindari abnormalitas pada profil lipid darah.Kata kunci: asupan serat, dislipidemia, profil lipid darah, status gizi

Abstract

ABSTRACTThe aim of this study was to formulate flakes made from arrowroot starch, soy protein isolate, and tapioca starch, which was added by taburia (consisted of multivitamin and minerals), sugar, salt and water. Flakes made of 10% soy protein isolate substitution was the most acceptable organoleptically than 20 and 30% soy protein isolate. Taburia fortification was then applied to this formula, 50% RDA of iron fortification was more reasonable to be selected than 25% one according to contribution of iron. Addition of chocolate flavor resulted in improving acceptability of flakes. Flakes with chocolate flavor has better physical properties.Contribution of flakes with chocolate flavor to adolescents RDA of protein and iron were 5.14—6.02% and 39.46%; and flakes without chocolate flavor were 5.82—6.80% and 68.92%, respectively. Flakes with chocolate was better in acceptability, but lower in nutrients content than flakes without chocolate flavor.Keywords: arrowroot starch, flakes, fortification, soy protein isolate, taburiaABSTRAKTujuan dari penelitian ini adalah formulasi flakes yang dibuat dari pati garut, isolat protein kedelai, dan tepung tapioka, dengan bahan tambahan taburia (multivitamin dan mineral), gula, garam dan air. Flakes dengan substitusi 10% isolat protein kedelai lebih diterima secara organoleptik daripada 20% dan 30% substitusi isolat protein kedelai. Selanjutnya, dilakukan fortifikasi taburia pada formula terpilih, fortifikasi 50% AKG zat besi dipilih berdasarkan berbagai pertimbangan daripada flakes dengan fortifikasi 25% AKG zat besi. Penambahan rasa coklat meningkatkan penerimaan pada flakes. Flakes dengan coklat memiliki sifat fisik yang lebih baik.Kontribusi protein dan zat besi terhadap AKG remaja putri pada flakes dengan coklat masing-masing 5.14—6.02% dan 39.46%; sedangkan tanpa coklat masing- masing 5.82—6.80% dan 68.92%. Abstract

The objectives of this research were to determine the formula of sorgum artificial rice (SAR), analyze nutrient and fiber content, and antioxidant capacity of SAR each formula and find the best formula of SAR. The artificial rice was made of sorgum flour (substituted by red kidney bean flour (RKF) for 5% (F1), 10% (F2), and 15% (F3)), water, porang flour, GMS (gliserine monostearate), and soy protein isolate. Nutrient content and antioxidant capacity were analyzed using AOAC and spectrophotometry method. Based on the rank of nutrient, fiber content, and antioxidant capacity, the best formula was F3 which its moisture, ash, protein, fat, carbohydrate, and energy content were 6.75%, 1.37%, 15.50%, 1.19%, 75.19%, and 373.52 kcal/100 g, respectively. Soluble and insoluble fiber content of F3 each was 4.88% and 7.26%. Antioxidant capacity of F3 were 113.93 mg vitamin C/100 g.  Substitution level of RKF on SAR significantly (p<0.05) increased content of ash, protein, fat, carbohydrate, energy, fiber, and antioxidant capacity of the SAR.

POTENSI FRAKSI ETIL ASETAT DAUN TORBANGUN (Coleus amboinicus L.) DALAM MENINGKATKAN PRODUKSI SUSU, BOBOT BADAN INDUK, DAN ANAK TIKUS

Abstract

The aims of the research were to investigate the potential medicine from ethyl acetate fraction of Coleus amboinicus L. for improving milk yield, body weight of rats and its effects on growth of the rat pups. Galactagogue activity was evaluated in terms of quantity of milk produced from the rats treated with ethyl acetate fraction of torbangun leaves (FEA), and commercial milk booster contained ‘katuk’ leaves extract (AF). Lactating rats (n=5) of Sprague dawley with six pups were fed with FEA and AF in the amount of 30 mg/kg and 50 mg/kg body weight, respectively. The feed were given orally every two days and starting from day 2 after giving birth until day 14. The performance of milk production was measured along the experimental period by weight-suckle-weight method. The rates of pups’ growth were measured as the weight gain along experimental period. The rats fed with ethyl acetate fraction of torbangun leaves produced higher milk than AF and the control groups, while FEA did not affected the body weight of rats in comparison to the control groups. Ethyl acetate fraction of torbangun leaves was identified to increase milk production by 17%, while AF by 22%. The mean of yields produced by the rats during lactation period for FEA, AF and control were 7.12±1.16, 7.43±1.04 and 6.07±0.85 g/pups/day, respectively. The FEA administration showed gradually increased of rat pups growth and body weight gain significantly in pups 2-14 days old compared to the control group. The present study reveals the ethyl acetate fraction has the potency as a remedy for improving milk yield without influencing the rats.
