TEPUNG PUPA-MULBERRY (PURY) SEBAGAI BAHAN PANGAN ALTERNATIF KAYA GIZI

Abstract

Silkworm pupae is immature stage of moth.  It is inner part of the silkworm cocoon shell which usually disposed from yarn silk production, and now has become a valuable ingredient of human food in many countries, however it is not common yet in Indonesia. The purpose of study is to develop a weaning food as nutritious basic formula of complementary food from pupae waste. A silkworm pupae was a major constituents used as materials. There are sixth  steps to get PURY properly: select a fresh, fine and clean pupae, steamed well about 10 seconds, grinded and sifted it  to get liquid, added 10% maize powder, dried in oven at 60ºC for 6 hours, and refine on blender. A fine powder, so called “PURY”, has a well balanced amount of moisture, protein, fat included PUFA, carbohydrate, amino acids, vitamins and minerals. Through a simple processing, the dry product of fine PURY powder can be obtained and used as a basic formula of complementary food and snacks and has made great contribution to reduce pupae waste. Research is continued to scale up producing PURY based product for more food-technological uses in order to reduce prevalence of malnutrition in Indonesia. Abstract

The aim of this research was to observe food habit and knowledge of reproduction health of female adolescence participants and non participants of Information Centre and Counseling of Adolescence  Reproduction Health (PIK-KRR) at SMU 1 Liwa and SMK 1 Liwa. Reproduction readiness in adolescence is influenced by physical readiness which is reflected from nutrition and health status and mental readiness in the form of adolescence perception about reproduction health. This research used cross sectional design. The site of the research is determined using purposive sampling. The SMU 1 Liwa was choosen because this school has PIK-KRR and most of the graduates continue their study to the higher level of education, and SMKN Liwa Lampung Barat was chosen because this school does not have PIK-KRR yet and most of the graduates do not continue their study. Spearman’s Correlation and t-test utilized to know whether there were any difference in each variable in SMU and SMK students. The results of the study show that, SMU female adolescence have better reproduction readiness than SMK female adolescence. Therefore it is important for female adolescence to get correct information about nutrition,  and reproduction health through formal or informal ways.       Keywords: Female adolescence, food habit, reproduction health

Abstract

The chlorophyll is well known as natural antioxidant which is commonly high  level  in some geen leafy and has potential biological effect for a good  health and  has been proved has antioxidant and antimutagenic activity. In fact, a high content of chlorophyll is available in nature but in contrast its found commercially in Indonesia as imported product with a high price. The objectives of this study were to determine of chlorophyll level  of various leaves (Premna oblongifolia Merr., Saurpus androgynus  Merr. Centella asiatica, and Morus alba L),  to produce copper-chlorophyll derivative powder, and to observe its physico-chemical properties. The research showed that cincau leaf had higher level of chlorophyll than other leaves, meanwhile cincau leaf used as material of copper-chlorophyll derivative. Cincau leaves chlorophyll extract solution with Cu2+  100 mg/l level produce the cincau copper-chlorophyll derivative powder with highest  pH, solubility, and geenness compare to other copper levels. The cincau copper-derivate chlorophyll  powder contained chlorophyll 3986 mg/kg, b-carotene 33.8 mg/kg, and contained alkaloid, saponin, tanin, steroid, and glycoside. Abstract

The Camelia-mulberry tea has a big potential to becomes a healthy beverage according to its bioactive components, and added by red ginger powder and tamarind. Those ingredients may increase immunity againts various diseases. The aims of this study was to develop formula of a healthy beverage contained of two varieties of leaves (camelia and mulberry), with Ginger (Zingiber officinale) and Tamarind (Tamarindus indica, L.)   This main research  used mice strain Spraque Dawley, 1.5-2 month old with  weight 75–105 gram. The instruments used in this study were tea maker, organoleptic test and ELISA test. The experimental design used factorial complete random design with 5 groups, where on each group consists of 5 mouse, with two selected variables of the best camelia-mulberry tea, i.e., multikaulis enzymatic oxidation + Gambung 7 enzimatic non-oxidation; bulk tea (Tea A) with difference time observation ( 0, 2 and 4 weeks).  The given dosage was 1 ml/100 gram mice weight, with different concentration of camelia-mulberry tea i.e. 3, 6, 9, and 12 gram/ml. Abstract

A study of fiber used epidemiological approach proved that in industrial countries occurence of  a western diseases were closely related to low fiber diet. The ideal intake of dietary fiber should be considered to produce weight of faeces equivalent to 140 – 150 g/day and a transit time less than 3 days, however others were stated that a variety of body response may also be considered in order to enhance a dietary fiber intake, since each component of dietary fiber gives a difference physiological effect in the body. Daily requirement intake of fiber is 25 – 30 g/man/day. Widyakarya (2004) stated that RDA of dietary fiber for adult and adolescence is 19 – 30 g/cap/day, and for children 10 – 14 g/1000 kcal. A diet contained high fiber has a positive effect to health. However, a further study is still needed with regards to antagonistic role if it is over consumed. Fiber has a unique roles as a component of prebiotic, which is useful for growth of intestinal microflora, and probiotic microflora. Abstract

This research attempts to analyze psychosocial aspect, physical activity, and food consumption of the elderly living in the community dwelling.  Research locations were chosen purposively in three POSBINDU (The Services Post for Elderly) located at areal of Bogor City, namely: Kelurahan Budi Agung (represents city-high income society), Kelurahan Baranangsiang (city-moderate to low society), and Kelurahan Situ Gede (boundary between city to rural-low income society).  A simple random sampling was applied to select the subjects. One hundred ninety-seven (197) subjects aged range 60-85 years old (mean age 68.4 years) were selected in those places and completed the survey between August 2004-July 2006. A cross –sectional design and one point approach was followed (Singarimbun & Effendi, 1995). A structured questionnaire was developed to collect data about psychological aspects (family and community support; health behavior; level of depression; life satisfaction), and food consumption limited to some nutrients essensial for elderly. For physical activity assessment, each subject rated his/her capacity involved in housekeeping. A descriptive, Chi Square, One Way ANOVA and Tuckey tests were applied to analyze the data.  The research results showed that there is no significance difference among elderly in three sites in terms of psychological aspect. However, there are significance differences in health behavior and physical activity. The worst health behavior and physical activity conditions were found among elderly in Kelurahan Situ Gede caused by the social-economic differences. In terms of food consumption aspects, the significance differences exist in intake of vitamin A, vitamin B, and calcium among the subjects.   Keywords: elderly, psychosocial, physical activity, food intake, community dwelling.

Abstract

Revitalization of Integrated Service Center Post (Posyandu) is successful when  focused to its main function as community institution services. Determine gap analysis program based on tangibles, reliability, responsiveness, assurance, empathy dimension. Exploratory and experimental designs was applied in this study, which was conducted at Darmaga and Ciomas district, Bogor Regency from March to August 2008. The data included primary and secondary data. The respondent in the experiment was 240 mothers of children under five years and 80 cadres. Gap analysis was used to know the expected and the real nutrition and health program of respondent. Totally 96 balita’s mother, pregnancy and reproductive women and 16 cadres were involved in this study. The average of gap realization with standard tool -0,75; Tangibles dimension -0,35; Reliability -0,10; Responsiveness -0,37; Assurance  -0,44, and Empathy -0,47, its mean that a tools accomplisment only 25% (less); tangible dimension 65% (enough); reliability 90% (good); responsiveness dimension 63% (enough); assurance dimension  56% (less) and emphaty 53%  (less), respectively.   Key words:  posyandu performance,  nutrition education, gap analysis

Abstract

The aims of this research was to analyze the correlation of psychosocial and physical aspect with nutritional status of the elderly reside in community dwelling. The site of study was purposively selected at three “kelurahan” : Budi agung, Baranangsiang, and Situ Gede in Bogor City.  A total of 100 elderly (age range 60 – 85 years; mean 68.4 year) were actively participated. A Structural Equation Modelling (SEM) Lisrel program was used to analyse the data. The study showed positive correlation of psychosocial (r=0.07) and physical aspect (r=0.04) with nutritional status of the elderly in community.   Keywords : psychosocial aspect, physical activity aspect, nutritional status.

Abstract

ABSTRACT. Iodine Deficiency Disorders (IDD) prevalence ofpregnant women is 16% and this would have consequence of risk during delivery and  nutritional status of the children. The aims ofthis study was to measure the effect ofiodized oil and beta carotene on the nutritional, iodine and thyroid stimulating hormone (TSH) status of pregnant women and to determine nutrition, iodine and cyanide intakes from food consumed by pregnant women. Research design ofthe study was quasi experiment. Pregnant women on the first trimester were chosen and divided into three groups. The first group was given iodized oil at 200mg iodine, the second group was treated with iodized oil at 30mg iodine every month for 6 months, and the third group was given as group 2 plus beta-carotene at 30mg each month for six months. Data collected were nutrients, iodine, and cyanide intake from food consumed and the parameter measured were serum TSH, urine iodine excretion (UIE), body weight and upper arm circumference. Chi Square, ANOVA and Kruskall Wallis were applied for statistical analysis. Iodine consumed by pregnant women was closed to the recommended daily allowance (RDA). iodized oil supplement could increase the UIE for 2 times at trimester 3 ofthe pregnancy. Furthermore, the treatment could redure the TSH value during pregnancy. The supplement could supply iodine during pregnancy. Keywords: iodine, hipothyroid, beta caroten, nutritional status

Abstract

ABSTRACT. It was reported that the Camellia tea contained of poliphenol 25-35 percent and other compounds which is goodfor health. Whereas bioactive compound i.e. Catechin and its derivatives ofgreen tea have been reported to have a beneficial effects on human health for example as anti cancer to prevent stroke and heart disease. The objectives ofthis research were to study the effect ofvariety and processing ofcamelliamulberry tea on bioactive compounds i. e. catechin and its derivatives; and to conduct organoleptic test. The Clone Gambung 7 and 9 of Camellia sinensis var. assamica; Kanva and Morus multicaulis of varieties of mulberry were used as main ingredients. Mulberry leaves were processed by enzymatic oxidative and non enzymatic oxydative, while Camellia leaves processed with non- enzymatic oxidative reaction. Thereafter, Camellia and mulberry was mixed in to ratio I: 1 (w/w, db). The chemical analysis for the content of theaflavin, tannin, cafein, catechin and its derivatives and organoleptic test were successfully conducted. The study showed the theaflavin, tannin and cafein content for fresh mulberry are 0,0690 and 0,0555 percent (db); 0,229 and 0,451 percent(db); 0,683 and 0.465 percent (db), correspoldingly. Theaflavin and tannin compounds of mulberry tea were found least content than Camellia-mulberry tea. There are three good formulas of Camellia-mulberry tea: start with a high rank M multicaulis-nonoxidizedGambung 7; Kanva-nonoxidized-Gambung 9 and M multicaulis-nonoxidized-Gambung 7, where mean value oftheaflavin mid tannin are 2.7968 percent db; 2.7/73 percent db; and 2.6575 percent db, correspondingly. A highest value of catechin was found in M multicaulis-oxidized-Gambung 7 (2.85%). The highest value of total catechin Kanvanonoxidized- Gambung 9 (3.91%), andfollowed by M multicaulis-nonoxidized-Gambung 7 (2.57%); and was M multicaulis-oxidized-Gambung 7 (2.33%).
