Abstract

Nowdays, consumption ofchilli saucein societycontinues to increase. However,there are manymanufacturers thatproduce chili saucenot under the good standard,so it candamage the healthof consumers. This happensbecause themanufacturers are tryingto meetthe market demandwantingchilisauceat a low price, so thatnot a fewmanufacturers whoignorestandards andfood safetyby adding. One of thehazard materialsaresynthetic dyesinchillisauceprocessing. Henceit is necessary toseek alternativenaturaldyesarerelativelysafe. Onenatural reddyethat can beused isRosella. bright red colorofthepetalsRosellaallure. However, the efficacy andthe benefits thatthe target of theconsumer. The type of this research is experiment. The objective of this research is to know the acceptable of chilli saucewith the addition of freshrosellaand chilli saucewith the additiondriedrosella. The variation of the addition are 10%, 20% and 30%. Acceptability test chilli saucerosellais conducted by using hedonic test to 30 panelists. Data wereanalyzed by using barlett test and analysis of variance test. These results showed that the addition 10% fresh rosella results in the most favorite taste by the panelist. While thechilisaucewiththe addition 10% dried rosella is the most favorite with color categoriy. The addition of rosella with many varieties influence the taste and color of chili sauce significantly. There is no influencing of the addition of rosella on the flavor and texture of chili sauce It is suggestedthatpeople use the rosella as analternative materialnatural dyein the manufacturesauces. Abstract

To obtain an  optimal growth, the under five years old need the adequate, nutritious and balanced amount of food. The research was to find out the food pattern and nutritional status of under five years old in the watershed and trandas areas in the working area of Singkil health center. This purpose of this descriptive study with cross-sectional design. Total population of the study is 599 under five years old and the sample are 100 under five years old. The results of this study showed that most of the food patterns of under five years old was three times a day, the main food consumed by under five years old in the watershed and trandas was rice amounted 100,0%, the side dish most frequently consumed was fish 92,5% in the watershed and 92,7% in trandas, the vegetables mostly consumed in the watershed was kale 17,5% and in trandas was spinach 15,0%, and only small numbers of the under five years old consumed  fruits, namely banana 10,0% in the watershed and 13,3% in trandas. The food pattern of under five years old the medium category, the level of energy consumption was 72,5% in the watershed and  75,0% in trandas, while the level of protein consumption was 65,0% in the watershed and 80,0% in trandas. Based on the index (weight/height) most of the nutritional status of under five years old was in normal category 87,5% in the watershed  and 91,7% in trandas.     Keywords:  food pattern, nutritional status, under five years old, in the watershed and Trandas

Abstract

Nutrition is a human basic need starting from the embryo in the womb until elderly. The problem of nutrition occurs because of a person’s behavior in nutrition is wrong, that is, the imbalance between the consumption of nutrition and the sufficiency in nutrition. The aim of the study was to know the influence of game as health promotion media on the balanced nutrition behavior among the student’s of Senior High School 1 of Bagan Sinembah, Bagan Sinembah subdistrict, Rokan Hilir District Riau in 2012. The type of the study was quasi experiment with one pre-test and post-test group design. The treatment was by games in the classroom. The measurement was done after four weeks.The samples comprised 52 student’s. A paired t-test was used to know the effectiveness of media. The result of the study showed that there of knowledge before and after treatment with t value = -5,131 and p = 0.000. The student’s attitude and practice about balanced nutrition also increase (t value = -7.392, p = 0.000 and t value = -12.460, p = 0.000) after treatment among four weeks. The result of reseach indicate that there was no increase in the nutritional status. The conclusion of the study showed that game media could increase teenager behavior on balanced nutrition although it did not influence nutritional status. It is recommended that the management of the school to use games as one of the alternatives in teaching such as history and biology for the senior high school student.   Keywords:  Behavior of  Balanced Nutrition, Nutritional Status, Game, Senior High School Student

Abstract

Young primigravida means the first pregnancy in young age under 20 years old. The readiness of a woman to have pregnancy depends on physical, mental, emotion, psychological, social and economy preparation. A woman is called physically ready for pregnancy after completing its growth time with the age around 20 years old. The pregnancy in young age can be categorized as high risk because it is included in one of the frequent pregnants, close pregnancy, too old and too young for high morbidity leading into various complication in pregnancy and delivery. The objective of this research is to know nutrition behavior young primigravida in Health Centre of Tanah Tinggi Binjai City in 2012. This research was descriptive with cross sectional design. The population were all pregnant women for the first time under 20 years old for 36 persons in Health Centre of Tanah Tinggi Binjai City in 2012. The collected data was analyzed using computer program, presented in frequency distribution table and analyzed descriptively. The results of research showed that 55,6%  young primigravida had low knowledge, 44,4% had  low attitude. Energy consumption rate was 44,4% in medium category,  and 47,2% was  categorized low. Based on the results of research, it can be concluded that the behavior of young primigravida was categorized low. It is suggested for Health Department Binjai City to give counseling to add the knowledge of young primigravida regarding the socialization activity for nutrient and high risk of pregnancy in young age. Abstract

The increasing of income level of the productice age group such as employees, so that there is an increasing in labor force in urban areas causes a change in lifestyle. The change in lifestyle includes eating patterns, physical activities and nutritional status. The eating patterns in large cities have been changing from traditional diet to modern diet and the type of activity that does not expend energy has negative impact on health and nutrition issues.This is a descriptive study with cross-sectional research design. The population is all employees at Business Trade Alfa Star Clothing and PLS Ervina with a total of 100 people, sampling conducted by a total sampling. Data collected through interviews using questionnaires, food frequency forms, food recall forms and physical activity forms.The result showed that the eating patterns of tailor employees at Business Trade Alfa Star Clothing and PLS Ervina in unfavorable category as much as 72% with the type and frequency of eating on average rarely (1-2x/week). The average of energy consumed sufficiently as much as 46% and protein is lower 62%. The most physical activity in medium category is 84%. Nutritional status based on BMI largely on the normal category as much as 50% and 39% for the fat one.The need for attention of the company and employees to be able to consume a complete diet (balanced), especially vegetables and fruits every day. Physical activity such as sports and activities that expend energy in order to be healthy and fit every day. Keywords:  eating pattern, physical activity, nutritional status, employees tailor.

Abstract

Fruit and vegetable is one of the sources of the fiber consumed by fishermen. Consumption of fruit and vegetable by fishermen supplied  by company. PT. Usaha Jaya, PT. Maju Jaya and PT. Usaha Keramat Jaya are the company move in areas of fish catcher.This research is a descriptive study with cross-sectional design. The sample is  all population. The results of research show that type fruit in general consumed the fishermen at PT. Usaha Jaya and PT. Usaha Keramat Jaya  is papaya fruit (66,7% and 28,3%) while fishermen at PT. Maju Jaya is banana fruit (66,7%). And for type vegetables in general consumed the fishermen at PT. Usaha Jaya is cucumber, cabbage and pumpkin (33,3%) while fishermen at PT. Maju Jaya is eggplant (33,3%) and  fishermen at PT. Usaha Keramat Jaya is cabbage (50,0%).  Amount of fruit and vegetables consumption the fishermen at PT. Usaha Jaya, PT. Maju Jaya and PT. Usaha Keramat Jaya less than 300 gram and 200 gram  a day (100,0%). Frequency consumption of fruit and vegetables the fishermen at PT. Usaha Jaya 4-6 a week (100,0%), while fishermen at PT. Maju Jaya and PT. Usaha Keramat Jaya 1-3 a week. Average fiber consumption by fishermen at PT. Usaha Jaya, PT. Maju Jaya and PT. Usaha Keramat Jaya from fruit and vegetable  (2,9 gram, 3,0 gram and 3,1 gram) and for  average contribution of fruit and vegetable  fishermen at PT. Usaha Jaya, PT. Maju Jaya and PT. Abstract

The estimated, there are chlorine used in the Raskin which received by people in the village of East Sidorame because has a white color, not much grain is broken, and it has little sting smell. The aim of this study is to describe the habit of  washing Raskin and the residual chlorine in Raskin in the village of East Sidorame. This is the descriptive survey study, with Raskin and the poor family who receive it as a sample. Measurement of chlorine is using argentometry method. The sample is taken with systematic random sampling for 84 families who getting and consuming the Raskin. Base on the laboratory test show that the chlorine found in the Raskin. It has 17,70% chlorine before washing. After the first wash of rice, there was chlorine content decreased to 14,16%, the second wash decreased to 10,18%, the third wash to 5,75%, and the fourth wash, chlorine content decreased to 3,98%. Almost the people wash the rice by stirring the rice and draining water at same time while washing the rice. 38,55% of them washing the rice once. 31,33% of them washing the rice twice. Almost of them washing rice once or twice, but there is still chlorine in great enough quantities if compared washing Raskin to four times. Suggested for Bulog to attention to the quality of rice which distributed to people in terms of food security in rice. Recommended to people to washing Raskin to fourth wash or more to reduce residual chlorine. Keyword : Raskin, Chlorin, Washing Raskin

Abstract

The children who experience obstacles into growth caused lack of the adequate food intake and infectious diseases, so that exacerbate malnutrition of children. This condition more difficult to cope growth disorders that finally likely occurrence of stunted. This research aims to know description the consumption pattern of child stunting in SDN 064994 Medan Marelan. Types of study is an observational of cross sectional study design. This study doing by calculating energy sufficiency, protein, calcium, phosphorus, magnesium, zinc, vitamin A and vitamin C by using 24 hours food recall method. This sample of research is all students stunting as many as 67 people. The results of this study to show that the consumption pattern of child stunting in SDN 064994 according to the amount of food based on the adequacy of macro nutrients such as energy sufficiency is 68,7% deficient category, protein sufficiency is 47,8% good category, and to the adequacy of micro nutrients such as calcium sufficiency is 80,6%, phosphorus is 53,7%, zinc is 98,5% and vitamin C is 80,6% medium category, while magnesium is 62,7% and vitamin A is 50,7% sufficient category. By the type of food consumed an average of 3 types per day and most of the child stunting consume rice as staple food, fish and eggs as a side dish, spinach, kale and mustard greens as a vegetable. From the results of the study suggested the school in cooperate with the primary health care that gives nutritional education school children and to cafeteria that provide healthy snacks and to students stunting to consume vegetables and fruits every day to be able to catch up growth. Abstract

Stunting is a public health problem because associated with an increased risk of morbidity,mortality, and impaired motoric and mental development. Stunting is a condition of the body isshort and very short (-2 SD below the median length or height of body). Purpose of this study is toknow the factors releated with stunting among under five children at Tanjung Tiram in 2013.This study is survey with cross-sectional design in 3 selected villages in the district TanjungTiram. The determination of sample is done in allocation proportion and selected by systematicrandom sampling with 93 under five children samples. Variabel of house hold members, educationof parent, birth weight, economic status, breast feeding practice and employment of parent weremeasured using questionaires and height of body were measured by microtoise, then dataanalyzed using by Chi- Square test at =0,05.The result of the research showed that based on index TB/U stunting among under fivechildren 59,14%. The result of Chi-Square test showed significant relationship between stuntingwith education of parent, economic status, and employment of parent. Meanwhile number ofhousehold and birth weight did not show significant relationship of stunting in under five children.It is recommended to local government in order to improve education of parents with KejarPacket C and revitalize the fishing’s coperation to enhance the economic status.Key word : Stunting, Economic Status, Under Five Children.

Abstract

ABSTRACT Nutritional needs of primary school children was obtained from the main meal and snack food. Good food intake will affect the nutritional status of children, related to the immune system, the level of attendance, concentration and the ability to follow the lessons in the school so that the impact on learning achievement. This study aims to determine the pattern of snack consumption, nutritional status and student achievement in SDN 064 027 District of Medan Polonia. This study used a cross sectional design. The population is all fifth grade students aged 10-12 years SDN 064 027 District of Medan Polonia. Samples were taken as many as 103 students of class V aged 10-12 years with a total sampling technique. Primary data was collected by interviews using questionnaires, 24-hour food recall forms, food frequency form, measurement of weight and height. Secondary data were collected from the description of the school, attendance, report grades students. The results showed that the types of snacks consumed in a week with a daily frequency is soft drinks/bottled, frequency is often soft drinks/bottled and fried, frequency is a rare savory rice and fried rice, frequency is never guava. Energy consumption in the snack food category is not enough as big as 59.2%, protein snack food consumption in enough categories at 63.1%. Snack food in male respondents accounted for 19.0% energy and 13.5% protein from total consumption a day, the female respondents accounted for 17.9% of energy and 14.1% protein from the total consumption a day. Nutritional status by indicator IMT/U and TB/U is in normal category respectively 75.5% and 71.8%. Learning achievement in enough categories was 42.7%. It is recommended to the school in order to convey to the parents to pay attention to major food consumption in terms of quantity and diversity as well as choosing calorie-dense snack foods. The school is also expected to pay attention and control the types of snacks sold in the school in order to ensure safety, cleanliness, diversity.
