Abstract

Bit merah merupakan sumber potensial dari pigmen yang larut air yaitu betanin dalam bentuk betanidin 5-O-beta-glukosa yang berpotensi sebagai antioksidan. Di dalam bit merah terdapat pigmen betalain yang memberikan warna merah keunguan sehingga dapat dibuat pewarna alami untuk pengolahan pangan. Serbuk bit merah memiliki stabilitas yang sempurna dan karakteristik kelarutan yang baik, kadar airnya rendah sehingga umur simpannya lebih lama. Salah satu metode pengeringan dalam pembuatan serbuk bit adalah dengan oven drying. Tujuan penelitian ini adalah untuk mengetahui karakteristik serbuk bit merah yang diperoleh melalui perbedaan suhu pengering oven dan konsentrasi maltodekstrin. Dalam penelitian ini dilakukan perlakuan pendahuluan perendaman asam sitrat 0,5% dan dalam maltodekstrin yang berperan sebagai drying agent dengan konsentrasi 0%, 20%, 40%, dan 60%. Pengeringan bit merah dilakukan di dalam oven dengan suhu 60oC, 70oC, 80oC hingga mencapai kadar air bit merah <10%. Analisa fisikokimia yang dilakukan adalah pengukuran bulk density, intensitas warna, kemampuan pembasahan, kadar air dan aktivitas antioksidan (% inhibition). Serbuk bit merah yang memiliki kualitas terbaik dilihat dari aktivitas antioksidan tertinggi (84,82%) dan warna dengan nilai a* tertinggi (18,29) didapatkan pada perlakuan perendaman asam sitrat tanpa maltodekstrin dengan suhu pengeringan 80oC. Abstract

Gaplek flour is processed from cassava (Manihot utilissima), which is dried and milled. Its application as wheat flour substitute in sweet bread brings some minor qualities in final bread volume. In this case, addition of leavening agent such as baking soda and acidulant is crucial. Rosella (Hisbiscus sabdariffa) flower infusion is known with its acidic taste, however, its application as natural acidulant has never been explored before. The purpose of this research is to explore the effect of rosella flower infusion as natural acidulant towards physicochemical characteristic of gaplek flour-based sweet bread. In this research, wheat flour was substituted by gaplek flour in amount of 10%, 20% and 30%.Rosella flower infusion was added as 25%, 50% and 75%of water portion added. Physicochemical assays of the resulting sweet bread were done, including the assay of bread volume, average of pore’s diameter, hardness, and water content. The result shows that sweet bread with higher concentration of gaplek flour substitution exhibit lower volume with higher hardness. Addition of rosella flower infusion results in improvement of bread volume and hardness. In sweet bread with 30% gaplek flour substitution, addition of 75% acidulant increase the volume up to 45% higher and decrease the hardness up to 18% lower than the sample without acidulant. The volume of 30% gaplek, 75% acidulant sample is even higher compared to flour control sample without acidulant. It is concluded that addition of acidulant based on rosella flower infusion improves characteristics of gaplek flour-based sweet bread.

Abstract

Turmeric (Curcuma domestica Val.) has many health benefits and can be used in herbal medicine as well as traditional herbal drink. Turmeric can also be used as a natural dye in food. Turmeric is very perishables in a fresh state, thus drying process is needed to extend its shelf life. An environmentally friendly drying using Solar Tunnel Dryer (STD) is one of the techniques that is interestingly developed. The purpose of this study was to determine the effect of steam blanching at different times (3, 5, and 10 minutes) and soaking using a 0.05% citric acid for 5 minutes on the physicochemical and microbiological qualities of turmeric dried by STD. Measurements were conducted to analyze water content, water activity, curcumin content, antioxidant activity, pH, water activity, color intensity, and total fungi. The results showed that steam blanching and immersion using a 0.05% citric acid for 5 minutes could reduce the drying time when compared to that of control. While 5 minutes of steam blanching with immersion in the 0.05% citric acid for 5 minutes could produce a high antioxidant activity which was 80.30 ± 0.89 (% inhibition) and it had the lowest total fungi which were 3.33 ± 5.00%

Abstract

Curcuma aeruginosa is one of the herbs with health benefits and has been used in traditional medicine, has the characteristic bitter taste, so that limited use was. The formation of walls in the active component coating process can minimize direct contact of bitter receptor cells in the oral peripherals so the perception of bitterness can be reduced. This study used a variation of the WPI concentration as the coating wall materials 10%, 15% and 20%. Formation of coating walls was analyzed using SEM later in the sensory test for effectiveness decreased level of bitterness. The addition of 10% WPI results in the best wall formation was in Curcuma aeruginosa, which could decrease perception of significant bitterness. In contrast to the addition of WPI 15% and 20% were found in an oval shape, craters and ruptures form on coating wall, reducing the protection of the core component and contact with bitter receptor cells in the oral peripheral resulting in bitters taste perception increasing.

Abstract

AbstrakPenelitian ini bertujuan mengetahui pengaruh deep-fat frying terhadap kandungan asam glutamat bumbu penyedap granul Spirulina sp. yang telah diaplikasikan ke dalam adonan tepung terigu. Penelitian pendahuluan dilakukan untuk menghasilkan tiga formulasi bumbu penyedap granul Spirulina sp berdasarkan kadar gula dan kadar garam bumbu 3 produk komersial. Tiga formulasi penyedap granul Spirulina sp diaplikasikan ke dalam tepung terigu yang kemudian digoreng dengan metode deep-fat frying pada suhu 140, 160, dan 180oC hingga matang. Adonan sebelum dan sesudah penggorengan dianalisis warnanya menggunakan chromameter. Kandungan asam glutamat adonan setelah penggorengan kemudian dianalisis menggunakan L-glutamate assay kit dan diuji spektrofotometer pada panjang gelombang 492 nm. Hasil penelitian menunjukkan bahwa proses penggorengan menyebabkan perubahan warna pada adonan. Peningkatan suhu penggorengan dari 140 ke 180oC menyebabkan penurunan nilai L* dari ±47 ke ±39, penurunan nilai b* dari ±26 ke ±19, serta peningkatan nilai a* dari ±8 ke ±10. Hasil penelitian juga menunjukkan peningkatan suhu penggorengan 140 ke 180oC yang menyebabkan penurunan kandungan asam glutamat adonan bumbu penyedap granul Spirulina sp. dari ±8 menjadi ±3 mg/100g. Kesimpulannya, peningkatan suhu penggorengan menyebabkan perubahan warna dan penurunan kandungan asam glutamat pada semua formulasi bumbu penyedap yang diimplentasikan pada adonan tepung terigu.Effect of Deep-Fat Frying to The Glutamic Acid Content in Spirulina sp. Granule Flavor EnhancerAbstractThis research aims to determine the effect of deep-fat frying on the content of glutamic acid in Spirulina sp. granule flavor enhancer that has been applied to the flour dough. Preliminary research was produced three formulas of Spirulina sp. granule flavor enhancer, that were formulated based on sugar and salt content on three commercial seasoning brands. Thus, three formulas were applied to wheat flour then fried with deep-fat frying method at 140, 160, and 180oC until cooked well. The color of doughs before and after frying were analyzed using chromameter. The glutamic acid content were analyzed using L-glutamate assay kit and tested by spectrophotometer at 492 nm. As results, frying process changed the color of the dough. The increase in the frying temperature from 140 to 180oC caused a decrease in value of L from ± 47 to ±39, value of b* from ± 26 to ±19, and increase the value of a* from ±8 to ±10. The increase in the temperature of frying from 140 to 180oC caused a decrease in glutamic acid content of Spirulina sp. from ±8 to ±3 mg/100 g. As conclusion, increase in the frying temperature might cause a change in color and decreased content of glutamic acid in the doughs.

Abstract

Penggunaan pewarna alami di bidang pangan terus meningkat karena sifatnya yang memiliki efek yang baik bagi kesehatan. Bahan alami yang mempunyai potensi untuk dikembangkan sebagai pewarna alami antara lain kubis merah (Brassica oleraceavar. capitate f. rubra) dan bunga telang (Clitoria ternatea). Kedua bahan tersebut memiliki kandungan pigmen antosianin yang tinggi, namun pigmen ini mudah terdegradasi oleh panas dan pH. Proses enkapsulasi menggunakan bahan maltodekstrin dan isolate protein kedelai diharapkan dapat menjaga kestabilan antosianin serbuk kubis merah dan bunga telang. Penelitian ini bertujuan untuk mengetahui pengaruh penambahan bahan enkapsulan(maltodekstrin dan isolate protein kedelai) pada berbagai konsentrasi (5%, 10% dan 15%)terhadap karakteristik fisik dan kimia serbuk pewarna ekstrak kubis merah dan bunga telang. Analisa fisiokimia yang dilakukan meliputi pengukuran kadar air, analisa total antosianin, analisa aktivitas antioksidan, daya larut, dan stabilitas warna pada suhu 30oC, 60oC dan 100oC. Hasil penelitian menunjukkan bahwa penggunaan enkapsulan maltodekstrin mempunyai kecenderungan menghasilkan serbuk dengan warna ungu dan isolat protein kedelai akan menghasilkan warna biru. Peningkatan konsentrasi maltodekstrin akan menyebabkan penurunan total antosianin dan aktivitas antioksidan, namun menyebabkan peningkatan rendemen, kecerahan warna (L*), intensitas warna (a* dan b*), serta kelarutan. Selain itu, untuk serbuk pewarna dengan enkapsulan berupa isolat protein kedelai, peningkatan konsentrasi isolat protein kedelai menyebabkan peningkatan rendemen, serta intensitas warna (b*), namun menyebabkan penurunan total antosianin, aktivitas antioksidan, kecerahan warna, intensitas warna (a*), serta kelarutan. Serbuk pewarna dengan maltodekstrin 5% mampu melindungi antosianin dalam ekstrak secara optimum.
